From the publication Inspired by Compliments brand. The editor asked Chef Ryan, who spent a year in Rotterdam, The Netherlands to submit some of his favourite soup van de dag or soup of the day that he created for the Dutch hotel he worked for. This is one of them. i don't know how authentic this is as a Dutch recipe, but I presume all the ingredients used in this one was not difficult to find.

3 tablespoons canola oil
4 lbs sweet onions, thinly sliced
3 garlic cloves, minced
1/2 cup 100% pure maple syrup
900 ml nonfat beef broth
1 tablespoon fresh thyme leave, chopped
salt and pepper
6 slices baguette, toasted
2 cups aged cheddar cheese, shredded

Steps:

  • Heat oil in a Dutch oven set over medium heat. Add onion and cook, stirring frequently for 30 minutes, or until caramelized. Add garlic and cook for 30 seconds. Stir in maple syrup.
  • Add the broth and half the thyme and bring to a boil. Reduce heat and simmer for 20 minutes. Season with salt and pepper for taste.
  • Preheat broiler. Divide soup between 6 ovenproof bowls. Top with sliced toasted baguettes and equal amounts of cheese. Broil for 2-3 minutes or until cheese melts and is lightly browned. Garnish with remaining thyme and serve.

The secret ingredient in this recipe is the 1 envelope of dried onion soup mix (from a 2.0oz box). My mom gave me this recipe with molasses in it, but I omitted that and added maple syrup. This is a tried and true recipe that has been enjoyed for decades.

2 cups dried navy beans
0.5 (2 ounce) Lipton Recipe Secrets onion soup mix (1 envelope)
1/2 cup maple syrup
1 tablespoon mustard
1 tablespoon brown sugar
1/4 lb salt pork (optional)

Steps:

  • Wash beans, cover and soak overnight. Drain and combine with 6 cups water.
  • Bring to a boil, reduce heat and simmer 40 minutes until tender.
  • Pre-heat oven to 300 degrees.
  • Drain beans, reserving 1 1/2 cups liquid.
  • Place beans in bean pot, mix in onion soup mix, maple syrup, mustard, brown sugar and bean liquid.
  • Place cut up salt pork in center of beans if desired. (Omit for vegetarian beans).
  • Bake covered for 5 hours. Stir every hour and add more water if necessary.
