Quick and Easy Chunky Microwave Maple Cinnamon Apple/Pear Sauce image

Maple syrup adds a nice flavor to the apples and pears. I have actually used a variety of different apples, depending on what I had on hand, with the same great results. The apple/pear sauce can be refrigerated for up to 2 weeks or frozen for up to 6 months.

4 Cortland apples - peeled, cored, and chopped
2 Golden Delicious apples - peeled, cored, and chopped
2 Bartlett pears - peeled, cored, and chopped
¼ cup water
½ teaspoon ground cinnamon
1 pinch ground nutmeg
2 tablespoons maple syrup

Steps:

  • Combine Cortland apples, Golden Delicious apples, and Bartlett pears together in a large, microwave-safe bowl. Add water, cinnamon, and nutmeg to the apple-pear mixture and toss to coat.
  • Cover bowl tightly with plastic wrap and cut a 1-inch slot in the center of the plastic wrap to allow steam to escape.
  • Cook apple mixture in the microwave on high for 10 minutes. Carefully remove and discard plastic wrap. Stir apple mixture. Cook in the microwave on high until fruit is hot and tender, another 6 minutes.
  • Stir maple syrup into fruit mixture. Cool completely before refrigerating.

3 McIntosh apples, peeled, cored and chopped into 1/2-inch pieces
3 ripe Bartlett pears, peeled, cored and chopped into 1/2-inch pieces
1 tablespoon fresh lemon juice
6 cinnamon sticks
1/4 teaspoon ground nutmeg
1 to 2 tablespoons sugar

Steps:

  • Combine the apples, pears, lemon juice, cinnamon sticks, nutmeg, 1 tablespoon sugar and 1/4 cup water in a medium saucepan. Bring to a boil over medium-high heat. Cover, reduce the heat to medium-low and cook until the apples and pears are very soft but still a bit chunky, 15 to 20 minutes. Taste the mixture and add the remaining tablespoon of sugar if desired.
  • Remove the sauce from the heat and stir a few times until the sauce is well combined with small chunks. Cool to room temperature. Remove the cinnamon sticks and serve. (For a smoother sauce, remove from heat, remove the cinnamon sticks and then whisk the mixture until smooth before cooling.)

In the fall you might try swapping in 1 1/2 pounds of pears for half of the apples and a bit of caramel in place of the maple. (Omit the maple syrup if serving with savory foods.) 5 pounds mix of firm, tart apples, such as Honeycrisp or Crispin, and sweet apples, such as Golden Delicious or Cortland (about 10 to 12 large apples), peeled, cored and chopped
2 1/2 pounds juicy Bartlett pears (about 5 large pears), peeled, cored and chopped
2 to 3 tablespoons pure maple syrup
2 to 3 teaspoons ground cinnamon
2 tablespoons fresh lemon juice

Steps:

  • Toss together the apples, pears, 1/4 cup water, maple syrup and 2 teaspoons cinnamon in a large pot with a heavy bottom (a Dutch oven works great for this). Cover and cook, stirring occasionally, over low heat, until the fruit are very tender, about 45 minutes or up to 1 hour. Stir in the lemon juice and use a potato masher to smash to your desired consistency. If you like a completely smooth, pureed sauce, use an immersion blender to blend until smooth. Taste and add additional cinnamon to your liking.
  • Serve warm, or cool completely and store in sterile jars with tight-fitting lids up to 1 week in the refrigerator.

When I make a cake I try (where possible) to substitute the fat (butter, margarine or oil) with equal amounts of apple sauce. Since I found this recipe I use the apple-pear sauce too in the substitution of fat.

1/2 lemon, juice of
2 tablespoons water
3/4 cup sugar
