This recipe rekindles memories of my grandfather and his love for making maple syrup. When I was in college, my mother would send me a package of her pralines during sugaring season. They were so popular with my friends, I barely managed to tuck away a few for myself.

1 cup sugar
2/3 cup heavy whipping cream
1/2 cup maple syrup
2 tablespoons butter
3/4 cup coarsely chopped pecans, toasted

Steps:

  • In a heavy 1-qt. saucepan, combine sugar, cream and syrup. Cook and stir over medium heat until mixture boils. Reduce heat to medium-low. Cook, uncovered, until a candy thermometer reads 234° (soft-ball stage), stirring occasionally., Remove from the heat. Add butter; do not stir. Cool, without stirring, to 160°. Stir in pecans. Beat vigorously with a wooden spoon until mixture just begins to thicken but is still glossy. Quickly drop by spoonfuls onto waxed paper. Cool. Store in an airtight container.

1/2 cup grade B maple syrup
1/4 cup firmly packed dark-brown sugar
Pinch of salt
1/2 cup heavy cream
1 teaspoon pure vanilla extract
1 tablespoon unsalted butter
1/2 cup pecans, toasted and coarsely chopped

Steps:

  • In a large skillet, combine maple syrup, sugar, salt, and cream. Cook over medium heat, stirring, until sugar is dissolved.
  • Raise heat to medium-high, and let cook until thick enough to coat the back of a wooden spoon.
  • Remove from heat, and stir in the vanilla, butter, and pecans.
  • Let cool to room temperature before serving. Sauce keeps, covered, in the refrigerator for up to 1 week.

1/4 cup firmly packed light brown sugar
1/8 teaspoon salt
1/2 cup heavy cream
1 tablespoon unsalted butter
1/2 cup pecans, chopped coarse and toasted lightly
Accompaniment: vanilla ice cream

Steps:

  • In a 2-quart heavy saucepan combine maple syrup, sugar, salt, and cream and cook mixture over moderately low heat, stirring and washing down any sugar crystals clinging to side with a brush dipped in cold water, until sugar is dissolved. Boil mixture over moderate heat, undisturbed, until thickened and a candy thermometer registers 220°F. Stir in butter and pecans, stirring until butter is melted, and cool sauce until warm. Sauce keeps, covered and chilled, 1 week. Serve sauce warm over ice cream.

Maple Pecan Baked Brie image

This savory-sweet appetizer is a decadent way to start your feast, but I promise there won't be a bite left over. A creamy Brie is baked to perfection and then smothered with a spicy pecan praline sauce. Be generous with the coarsely ground black pepper, as it really sends the dish over the edge!

1 (16-ounce) wheel of Brie
1/2 cup (1 stick) unsalted butter
2 tablespoons packed brown sugar
1/3 cup pure maple syrup
1 cup toasted and chopped pecans
1 teaspoon coarsely ground black pepper
Crackers, to serve

Steps:

  • Preheat oven to 350 degrees.
  • Shave off the top rind of the Brie (it is easiest to do this after it has been in the freezer for about 20 minutes). If the Brie came in a wooden box, return it to the original container. If not, create a makeshift "box" out of a few layers of aluminum foil, leaving the top of the Brie exposed.
  • Place the cheese on a rimmed baking sheet. Bake until warm and gooey, 15 to 20 minutes. Remove from the oven and allow to cool for 20 minutes before serving. Carefully transfer to a serving platter; you do not want the rind to puncture, if possible.
  • While the Brie is cooling, make the praline sauce. Melt the butter in a saucepan over medium heat. Add the brown sugar, maple syrup, and pecans. Cook, stirring constantly, until all of the ingredients are well combined, 3 to 5 minutes. Stir in coarsely ground black pepper and remove from heat. Allow the mixture to cool for 5 to 10 minutes, until it has thickened up just a bit. Dollop the warm sauce over the baked cheese. (There may be extra praline sauce.) Serve with assorted crackers.

2 cups sugar
1 cup walnuts, toasted, chopped
Bread pudding
8 large eggs
1 quart whipping cream
1 cup sugar
1 cup maple syrup, plus more for drizzling

1 1-pound loaf brioche or egg bread, torn into bite-size pieces
Vanilla ice cream

Steps:

  • For praline:
  • Spray rimmed baking sheet with nonstick spray. Stir sugar and 1/4 cup water in heavy small saucepan over medium heat until sugar dissolves. Increase heat to high and boil without stirring until mixture turns deep amber color, occasionally swirling pan and brushing down sides with wet pastry brush, about 7 minutes. Stir in nuts. Quickly spread nuts on prepared sheet. Cool. Chop praline into small pieces. (Can be made 1 day ahead. Store in airtight container at room temperature.)
  • For bread pudding:
  • Whisk eggs, cream, sugar, 1 cup maple syrup, and vanilla in large bowl to blend. Add brioche; stir to coat. Let stand at room temperature 1 hour, stirring occasionally.
  • Preheat oven to 375°F. Butter 13x9x2-inch baking dish. Transfer bread mixture to prepared dish. Bake until puffed and golden and toothpick inserted into center comes out clean, about 40 minutes. Cool slightly. Cut into 6 to 8 pieces. Place 1 piece pudding on each plate. Place scoop of ice cream atop pudding, drizzle with maple syrup, sprinkle with praline, and serve.

  • Spread a sheet of waxed paper onto a flat working surface.

1/2 cup packed brown sugar
3 tablespoons butter, melted
1 jar (7 ounces) marshmallow creme
1/2 cup maple syrup
2 cups heavy whipping cream, whipped

Steps:

  • In a bowl, combine the nuts, brown sugar and butter. Spread onto a greased baking sheet. Bake at 350° for 12 minutes or until browned. Cool; crumble and set aside. , In a bowl, combine marshmallow creme and syrup until smooth; fold in whipped cream. Place half of the nut mixture in a greased 9x5-in. loaf pan. I recently took a weekend trip, and I experienced one of the best meals of my life at a fine little establishment that specializes in Southern cuisine. One of the things that made this meal so memorable was the praline bacon that I had, so I took it upon myself to recreate it. The only difference is that I like mine better.

1 pound bacon
½ cup chopped pecans
3 tablespoons maple syrup
3 tablespoons butter
½ cup packed brown sugar
2 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (135 degrees C). Line a baking sheet with parchment paper.
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
  • Spread the pecans onto an unlined baking sheet, and toast 7 to 10 minutes in the preheated oven, until golden brown and aromatic. Watch the nuts carefully as they bake, because they burn quickly. Set aside to cool.
  • Stir the maple syrup, butter, brown sugar, and white sugar together in a large skillet over medium-high heat and cook, stirring constantly, until the hot candy resembles foamy caramel and a candy thermometer reads 270 degrees F (130 degrees C) (soft crack stage). Quickly stir in the pecans.
  • Toss the bacon in the candy mixture to coat each strip, and remove with tongs to cool and harden on the prepared baking sheet. Last but not least... eat up!

1 cup flour
1/4 cup brown sugar
1/4 cup unsalted butter, at room temp
1/4 cup chopped pecans
3 (8 ounce) packages cream cheese, at room temp
3/4 cup sugar
2 tablespoons flour
3 eggs
1 cup sour cream
1/3 cup pure maple syrup
1/3 cup chopped pecans
3/4 cup corn syrup
1 1/2 cups brown sugar
1 1/2 cups pecan halves
1/4 cup butter

Steps:

  • Base: Preheat oven to 350 degrees.
  • Grease a 9 inch springform pan.
  • In a food processor whirl flour, brown sugar and butter.
  • Add pecans and pulse just until blended.
  • Press into the bottom of the pan and bake for 10 minutes.
  • Cool on a rack.
  • Cake: Beat cream cheese with the sugar and flour until smooth.
  • Beat in the eggs, one at a time along with the sour cream.
  • Mix in the maple syrup.
  • Stir in the pecans until evenly mixed.
  • Pour over the base and with the back of a spoon smooth out the top.
  • Bake on the center rack until center is almost set and the cake on the outside is firm, about 50 minutes.
  • Turn off the oven and let the cake stand for 2 hours-in the oven please.
  • In a medium saucepan over medium heat combine the corn syrup, brown sugar, pecan halves and butter.
  • Bring to a boil, uncovered, and boil vigorously until a soft ball will form in cold water, around 4 minutes.
  • Let cool until just warm and should be very thick but still pourable.
  • If not add 1 T.
  • of water and whisk in.
  • Pour over the top of cheesecake and place in the refrigerator for 4 hours to overnight.
  • Before serving loosen the sides of the pan and remove the ring.
