MAPLE WALNUT WAFFLES
These light, delicious waffles are from the Canadian Living website. Serve topped with whipped cream, maple syrup and a sprinkle of toasted walnuts. Yummy!

Steps:
- In a bowl, whisk together the two flours, walnuts, baking powder, baking soda and salt.
- In a smaller bowl, whisk together the eggs, buttermilk, butter and maple syrup.
- Pour the liquid mixture over the flour mixture and stir just until combined.
- Heat the waffle iron.
- For each waffle, brush lightly with vegetable oil.
- Pour in sufficient batter to spread to the edges (I have a Belgian waffle iron so for this type you would need approximately 1-1/2 cups of batter.).
- Close the lid and cook until crisp, golden and the steam stops, about 4 to 5 minutes.

PUMPKIN WAFFLES WITH MAPLE WALNUT APPLES

- For the waffles: Preheat a waffle iron to medium heat.
- Whisk the flour, wheat germ, sugar, baking powder, spice, nutmeg and salt together in a large bowl.
- Beat together the milk, pumpkin, melted butter, and melted shortening, egg and egg white, in a large measuring cup. Make a well in the center of the dry ingredients and pour in the wet ingredients. Whisk together to make a slightly lumpy batter.
- For the topping: Melt the butter in a skillet over medium heat. Add the apples and let cook until slightly browned, but still crisp, about 4 minutes. Add the maple syrup and walnuts and toss to coat.
- Pour and spread about 1 cup batter into the waffle iron. Cover and cook until crisp and a rich golden brown, about 7 minutes. (Try to resist the temptation to open the waffle iron too soon. Steam will puff out of the iron while the waffles cook, when this stops the waffle is cooked.) Repeat with the remaining batter. Serve hot with the apples.
LEMON AND WALNUT WAFFLES

- Preheat the oven to 225 degrees F.
- In a large bowl sift to combine the flour, baking powder, 2 tablespoons of the sugar and salt. In small bowl whisk the egg yolks until smooth, then add the milk, vegetable oil, lemon extract, and lemon zest. Make a well in the center of the dry ingredients. Pour in the liquid ingredients and gently stir the batter, with a wooden spoon, until just combined. Be careful not to overmix. You can use a hand beater or a stand mixer on low speed, if desired.
- In a very clean bowl, whisk the egg whites until foamy. Add the remaining sugar and beat until soft peaks form. Gently fold the whites into the batter. Pour about 1/4 cup to 1/2 cup batter into an oiled waffle iron, sprinkle with walnuts, then close the iron. Cook until golden brown, about 5 minutes, depending on waffle iron settings. Transfer to a serving platter and keep warm in a low oven. Repeat with remaining batter. Serve warm with maple syrup.

I created this recipe when trying to get my husband to stop eating fast food for breakfast. Crispy on the outside and full of maple walnut flavor on the inside. I make 6 at a time and freeze them -- just pop in the toaster or microwave to reheat. Serve with maple syrup and a sprinkling of walnuts.

- Preheat oven to 250 degrees F (120 degrees C). Preheat waffle iron.
- In a bowl, mix the pancake mix and whole wheat flour. Form a well in the center, and pour in water, oil, and syrup. Stir until evenly moist. Stir in the milk, vanilla, and cinnamon. Fold in walnuts.
- Pour about 1/3 cup batter per waffle into the waffle iron, and cook 5 minutes, until done. Transfer waffles to a baking dish, and place in the preheated oven. Cook 5 minutes, or until crisp.

MAPLE PECAN WAFFLES
This is a nice light and fluffy waffle--great for overnight guests. Or, make it for dessert and top it with fresh fruit and whipped cream. I found this in My Great Recipes. I didn't have any pecans so I substituted walnuts. For the maple flavoring I threw in a few squirts of maple syrup. If you have any left (might want to double the recipe), wrap in plastic and freeze. To reheat, just put the frozen waffle in the toaster (move over L'eggo My Ego).

- Sift flour with baking powder and salt.
- In mixing bowl, beat egg yolks, milk, and oil until combined.
- Gradually add flour mixture, beating after each addition and beat only until smooth.
- Beat egg whites until stiff peaks form.
