2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 stick unsalted butter, at room temperature
2/3 cup packed dark brown sugar
1/2 cup pure maple syrup
1 large egg
1/2 teaspoon pure vanilla extract
1/4 teaspoon maple extract
Cooking spray
1/2 cup turbinado sugar
1/2 cup walnut halves

Steps:

  • Whisk the flour, baking soda and salt in a medium bowl. Beat the butter and brown sugar in a large bowl with a mixer on medium-high speed until fluffy, about 3 minutes. Beat in the maple syrup, egg, vanilla and maple extract. (The mixture may look curdled.) Reduce the mixer speed to medium low; add the flour mixture and beat until combined. Cover and refrigerate until the dough is no longer sticky, about 30 minutes (it will still be soft).
  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Coat 2 baking sheets with cooking spray. Put the turbinado sugar in a shallow dish. Roll tablespoonfuls of the dough into 1-inch balls, then roll in the turbinado sugar. Press a walnut half into the center of each cookie and arrange 2 inches apart on the prepared baking sheets.
  • Bake, switching the pans halfway through, until the edges of the cookies are set but the centers are still soft, 12 to 14 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.

½ cup real maple syrup
½ teaspoon vanilla extract
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup flaked coconut

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a mixing bowl, cream shortening and brown sugar until fluffy. Beat in the egg, syrup, and vanilla until well mixed.
  • Combine flour, baking powder and salt. Add flour mixture to the creamed mixture. Stir in coconut. Drop by tablespoonfuls 2-inches apart onto greased baking sheets.
  • Bake at 375 degrees F (190 degrees C) for 10-12 minutes.

1 cup sugar
2 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
Dash salt
FROSTING:
4 cups confectioners' sugar
2 tablespoons butter, softened
1 teaspoon vanilla extract
1/2 teaspoon salt
3/4 cup maple syrup
Maple leaf cookie cutter (2-3/4 inches)
Red paste or liquid food coloring
Pastry or heavy-duty resealable plastic bag
#3 round pastry tip, optional

Steps:

  • In a bowl, cream butter and sugar until light and fluffy. Add eggs and vanilla; mix well. Combine flour, cream of tartar, baking soda and salt; add to creamed mixture and mix well. Roll out on a floured surface to 1/8-in. thickness; cut with a cookie cutter dipped in flour. Place 1 in. apart on ungreased baking sheets. Bake at 350° for 8-10 minutes or until edges are lightly browned (do not overbake). Remove to wire racks to cool. For frosting, beat confectioners' sugar, butter, vanilla and salt. Add syrup; beat until smooth. If leaf veins are desired, set aside 1/2 cup; add food coloring to remaining frosting. Spread red frosting on cookies. Cut a small hole in the corner of a pastry or plastic bag; insert round tip into bag. Fill bag with reserved frosting; pipe veins on leaves.

1 egg

Steps:

  • Heat oven to 350°F. In 8-inch square pan, bake pecans 6 to 8 minutes, stirring occasionally, until light brown. Spread nuts on cutting board; cool 5 minutes. Finely chop.
  • In large bowl, beat butter and brown sugar with electric mixer on medium speed, scraping bowl occasionally, until fluffy. Beat in 1/2 teaspoon maple flavor and the egg until well blended. Stir in flour and chopped toasted pecans.
  • Shape dough into 1-inch balls. On ungreased cookie sheets, place balls 2 inches apart. Flatten in crisscross pattern with fork dipped in granulated sugar.
  • Bake 11 to 14 minutes or until edges just begin to brown. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, about 10 minutes.
  • In small bowl, mix icing ingredients until smooth; drizzle over cookies.

1 cup plus 2 tablespoons unsalted butter, softened
1/2 cup plus 1 tablespoon light brown sugar
1 teaspoon maple extract
2 1/4 cups self-rising cake flour
35 (approximately 1/2 cup) pecan halves
2 baking sheets, lined with parchment or wax paper or greased

Steps:

  • Preheat the oven to 325 F.
  • Cream the butter and sugar. When you've got a soft, supple mass, add the maple extract and work in the sifted flour. Roll into walnut-sized balls, and press with the base of a glass that you've lightly oiled (and if you've got some in the house, you could use walnut oil) or brushed with melted butter. Press gently onto the lined baking sheets--leaving a 2-inch space round each as they'll spread--and stud each with a pecan half.
  • Cook for 15 minutes. They start off golden so it's hard to tell if they're cooked just by sight, but lift one up to check it's no longer doughy on the bottom. Remove from the oven, leave for a minute or two on the trays, and then transfer to a wire rack to cool.
  • Variation: You can always substitute walnut halves for the pecans, but if you leave them completely nut-free, these are wonderful as cheese biscuits. Yes, they're sweet, but in the same way as digestive biscuits are strangely good with both creamy and hard cheese, so these can pair with a pungent blue quite wonderfully.

2 cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
1 ½ teaspoons ground cinnamon
½ cup margarine, softened
1 cup white sugar
3 tablespoons real maple syrup
1 egg
½ cup white sugar
¼ cup maple sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Stir together the flour, baking powder, baking soda, and cinnamon. Set aside.
  • In a large bowl, cream together the margarine and 1 cup of white sugar until light and fluffy. Beat in the egg and maple syrup. Gradually blend in the dry ingredients until just mixed. In a small dish, mix together the remaining 1/2 cup white sugar and the maple sugar. Roll dough into 1 inch balls, and roll the balls in the sugar mixture. Place cookies 2 inches apart on ungreased cookie sheets.
  • Bake 8 to 10 minutes in the preheated oven. Cookies will be crackly on top and look wet in the middle. Remove from cookie sheets to cool on wire racks.

There's no dairy, no sugar, no grains (quinoa is a seed) and no animal products in these delicious vegan cookies. But before you start accusing me of sucking the joy right out of cookies (mmmm....cookie joy), just give 'em a try. They are moist, soft and nutty - in other words similar to your standard carnivorous cookies. One word of warning though, these aren't a chewy cookie. They are crumbly so make sure you eat them over a plate.

4 tablespoons maple syrup
1 cup quinoa flour
1/2 cup coconut flour
1/2 cup coconut oil
2 teaspoons vanilla extract
1/2 cup sliced almonds
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup coconut milk (or almond)

Steps:

  • Sieve the coconut flour, quinoa flour, baking powder and baking soda into a large mixing bowl.
  • In a separate bowl whisk together the coconut oil, vanilla extract, maple syrup and milk.
  • Gradually add the wet ingredients to the dry, stirring until it clumps to form a moist batter.
  • Fold in the almonds.
  • Place large tbsps of the mixture onto a baking tray lined with greaseproof paper. It should make around 16. Bake at 350 for 10-12 minutes.

In another bowl, whisk flour, ground walnuts, baking powder and salt; gradually beat into creamed mixture (dough will be soft)., Using a cookie press fitted with a flower or star disk, press dough 1 in. apart onto ungreased baking sheets. Sprinkle with coarse sugar. Top with walnuts., Bake 10-12 minutes or until bottoms are light brown. Cool on pans 2 minutes. Remove to wire racks to cool.
