1 pound shrimp, peeled and deveined
3 tablespoons olive oil
3 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
2 cloves garlic, minced
2 teaspoons tequila
¼ teaspoon cayenne pepper
¼ teaspoon salt
4 bamboo skewers, soaked in water for 20 minutes

Steps:

  • Stir shrimp, olive oil, cilantro, lime juice, garlic, tequila, cayenne pepper, and salt together in a bowl. Cover the bowl with plastic wrap and refrigerate shrimp in marinade for 30 minutes.
  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Remove shrimp from bowl and thread onto skewers; discard marinade.
  • Cook on the preheated grill until shrimp turn pink, 2 to 3 minutes per side.

These grilled shrimp skewers pack all the flavors of a refreshing margarita into a quick and easy summer weeknight dinner.

2 tablespoons fresh lime juice (about 1 lime)
4 tablespoons fresh orange juice
1 teaspoon lime zest
3 tablespoons tequila
1 tablespoon olive oil
1/4 teaspoon ground pepper
1/8 teaspoon sea salt
12 ounces large peeled and deveined shrimp (I usually leave the tails on them for grilling)

Steps:

  • Mix the lime and orange juices, zest, tequila, olive oil pepper and salt in a small bowl or jar.
  • Add the shrimp and marinade to a large zip-top bag and let the shrimp marinate in the refrigerator for at least 30 minutes or up to 90 minutes.
  • Preheat a gas grill to medium-high heat, about 400°F.
  • While the grill is preheating, thread the shrimp onto skewers, leaving some space in between each shrimp. Depending on the type of skewer you are using you should be able to get 4-6 shrimp per skewer.
  • Place the skewers on the hot grill and grill for 2-3 minutes. Flip the shrimp once the first side is pink and the edges on the side facing up are just starting to turn slightly pink. Grill for another 2-3 minutes until shrimp are completely pink and cooked through.
  • Carefully remove the shrimp from the grill. You can serve the shrimp on the skewers or remove them and either serve immediately or chill and save them for another time.

Jumbo shrimp are marinated in the flavors found in many Mexican dishes. A splash of tequila is included for the margarita effect, but you can certainly leave it out if you prefer - this dish is awesome either way!

1 lb. raw extra jumbo shrimp (16-20 per pound), peeled and deveined
1/3 c. olive oil
2 large garlic cloves, roughly chopped
1 tsp. minced jalapeno
1 T. brown sugar
1 tsp. smoked paprika
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. cumin
1 tsp. kosher salt
1/2 tsp. black pepper
2 tsp. tequila, optional
thin slices of fresh lime, if placing shrimp on skewers
chopped cilantro
wedges of fresh lime, for squeezing over top of grilled shrimp

Steps:

  • Shrimp can be grilled with or without skewers. If using wood skewers, start soaking them in water.
  • Place shrimp in a wide shallow bowl and set aside.
  • In a small bowl with high sides, combine all ingredients from olive oil through black pepper. Use an immersion blender to completely process until there are no sizable pieces. Or use a food processor or blender. Pour marinade over shrimp and gently stir to coat evenly. Cover and refrigerate for 2 to 3 hours, folding gently about halfway through.
  • Drizzle tequila over the shrimp, if desired, and gently fold to combine. If using skewers, thread shrimp onto skewers, with a folded slice of lime in between shrimp (see skewer photos in post).
  • Heat grill to medium-high. Make sure grates are clean, and then oil them well. Set shrimp on grates and grill for 3 to 4 minutes per side, or just until shrimp are no longer opaque and have some nice char. Smaller shrimp will take less time. Place shrimp on a platter and sprinkle with cilantro. Serve with fresh lime wedges to squeeze over the top.

1 10-ounce can frozen margarita mix, thawed
2/3 cup tequila
1/2 cup chopped fresh cilantro
2 tablespoons chicken seasoning
Vegetable oil, for the grill
Baby arugula and lime halves, for serving

Steps:

  • Place the chicken, margarita mix, tequila, cilantro and chicken seasoning in a large resealable plastic bag; squeeze out the air and seal. Massage the bag to combine the ingredients. Refrigerate for 30 minutes to 1 hour. Meanwhile, soak 12 wooden skewers in water.
  • Preheat a grill to medium. Remove the chicken from the marinade; thread each piece onto a skewer. Oil the grill grate; grill the chicken skewers for 1 to 2 minutes per side, or until the meat is cooked through. Serve on a platter with arugula and lime.

1 pound large shrimp, peeled, de-veined and tails removed (about 40 shrimp)
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1 cup roasted garlic salad dressing
2 teaspoons lemon juice
1 teaspoon Italian seasoning
Canola oil, for grilling
One 5-ounce package baby arugula
2 plum tomatoes, diced
1 lemon, cut into wedges

Steps:

  • Thread the shrimp through the skewers at two points, through the neck and tail portion. If you compare the shape of the shrimp to the letter "C" the skewer should go through both the top and bottom section of the "C". You should have 5 shrimp per skewer. Place into a 9 by 13-inch baking dish and sprinkle with a bit of salt and pepper.
  • In a medium bowl, combine the roasted garlic salad dressing, lemon juice and Italian seasoning. Reserve about 3 tablespoons of the salad dressing mixture. Pour the remaining dressing over the shrimp and, using a brush, make sure all the shrimp are completely coated with the dressing. Let sit in the refrigerator for 5 minutes or up to 30 minutes.
  • Preheat a grill or grill pan over medium-high heat.
  • Brush the grill grates with a paper towel that has been soaked in canola oil. Place the shrimp skewers on the grill and cover. Cook until opaque and cooked through, about 3 minutes per side.
  • While the shrimp are grilling, combine the arugula and tomatoes in a large bowl. Pour the reserved dressing over the arugula, season with salt and pepper and toss to coat. Divide among 4 plates. Place 2 of the shrimp skewers on each plate. Serve with a lemon wedge on the side.

1 cup olive oil

1 -2 tablespoon fresh minced garlic (or to taste)

  • In a bowl whisk together all marinade ingredients until well blended (remove 3-4 tablespoons to brush on the shrimp while cooking).

  • Refrigerate for 2 hours.
  • Soak the wooden skewers in cold water 30 minutes before threading.
  • Set grill heat to medium-low.
  • Thread the shrimp onto the skewers piercing once near the tail and once near the head; discard the marinade.
  • Grease the grill grate.
  • Cook shrimp for about 5 minutes per side or until opaque, brushing frequently with the reserved marinade.

3 tablespoons fresh lime juice (from 3 limes), plus wedges for serving
