MY MAMA'S MARVELOUS MULLED WINE



My Mama's Marvelous Mulled Wine image

Number Of Ingredients 6

2 bottles of Cabernet Sauvignon
1/2 cup brown sugar
12 whole cloves
4 cinnamon sticks
2 cups port (a sweet Portuguese wine)
2 cups brandy

Steps:

  • Combine all the ingredients, except the port and brandy, into a large copper or cast-iron pot (not aluminum). Simmer while stirring occasionally. Reduce heat to low and simmer for 10 minutes. Add port and brandy. Heat for 30 seconds. Pour all into a large heat-resistant bowl or leave it in the pot.

1 1/2 cups margarine, at room temperature (3 sticks)
2 cups brown sugar
2 cups white sugar
4 eggs
2 teaspoons pure vanilla extract
1 teaspoon salt
2 teaspoons baking soda
1 teaspoon baking powder
4 cups unbleached white flour
4 cups old fashioned oats
2 cups hershey's chocolate chips
1 cup coconut
1 cup chopped nuts

Steps:

  • With an electric mixer, whip up the margarine and sugar in a large mixing bowl until fluffy. Add the eggs, vanilla and salt and beat well.
  • Blend the baking soda and baking powder into the flour, either directly in the measuring cup or in a large bowl, and then tap this mixture into the creamed ingredients, mixing slowly. Using a sturdy spoon, mix the rest by hand.
  • Add oats and stir until the dough comes together. Stir in chocolate chips, coconut and nuts.
  • Line a cookie sheet with baking parchment and scoop the dough with a 2-ounce ice cream scoop. Press the top of the cookie dough mound down slightly.
  • Bake in a preheated 350°F oven for 7-12 minutes, until lightly golden in color with tiny cracks on top of the cookies.

1 (16 ounce) package baby portobello mushrooms
½ cup grated Parmesan cheese
¼ cup shredded mozzarella cheese
3 green onions, finely chopped
1 tablespoon olive oil
1 clove garlic, finely chopped
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a shallow 2-quart baking dish.
  • Remove stems from mushrooms and finely chop stems. Combine chopped stems, Parmesan cheese, mozzarella cheese, green onions, olive oil, garlic, salt, and black pepper in a bowl. Spoon filling into mushroom caps; arrange caps in the prepared baking dish.
  • Bake in the preheated oven until the mushrooms are tender, 10 to 15 minutes.

This recipe was made by my mother only around Christmas time. Now, I carry on the tradition of this sweet confection.

1 cup margarine, softened
2 pounds confectioners' sugar, sifted
1 (14 ounce) can sweetened condensed milk
3 cups coconut
1 cup finely chopped walnuts
1 teaspoon vanilla extract
1 (12 ounce) package semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In large bowl, combine margarine, confectioners' sugar, condensed milk, coconut, chopped walnuts and vanilla. Stir well. Cover and chill in the refrigerator for 2 hours, or until mixture has thickened enough to roll into balls. Roll the mixture into 1-inch balls and place close together, but not touching, on cookie sheets. Freeze until hard.
  • While bonbons are freezing, line a cookie sheet or flat surface with waxed paper. Combine chocolate chips and shortening in the top of a double boiler, over, not in, simmering water. Stir until melted. Using a toothpick or a fork, dip each bonbon in the melted chocolate. Place on waxed paper to dry. When chocolate has hardened, store bonbons in plastic bag in the freezer.

Don't remember where I got this recipe. I haven't timed how long it takes to prepare this so time is a guess. The recipes says it makes 150 bon-bons but the yield depends on the size you make them.

1 (14 ounce) can sweetened condensed milk
2 lbs powdered sugar, unsifted
1 cup butter, softened
2 cups flaked coconut
2 cups walnuts, finely chopped
2 (16 ounce) packages semi-sweet chocolate chips

Steps:

  • Combine sweetened condensed milk, sugar and butter.
  • Mix until smooth and creamy.
  • Add coconut and walnuts.
  • Mix thoroughly.
  • Chill 1 hour.
  • Form into balls.
  • Chill 2 hours.
  • Melt chocolate in a double boiler over hot water.
  • Dip bon-bons into melted chocolate.
  • Cool until chocolate is set.
  • Store in fridge.
