ITALIAN ZUCCHINI AND ARTICHOKE CASSEROLE (RAPID FAT LOSS)



Italian Zucchini and Artichoke Casserole (Rapid Fat Loss) image

This is one of the recipes I've developed to eat while on Lyle McDonald's "Rapid Fat Loss" program. It's a little carb-heavy, but if the rest of your day has been on track there's no harm in eating 1/4 of this. :) Just count the protein from the cheese - the Kraft brand has 8g per serving.

8 ounces tomato sauce
2 large zucchini, sliced
1/2 cup onion, sliced
14 ounces artichoke hearts, in brine
1 cup fat free mozzarella cheese, shredded
italian seasoning
salt
pepper
garlic powder

Steps:

  • Preheat oven to 350°F.
  • Spread a thin layer of tomato sauce on the bottom of a large baking dish.
  • Layer the ingredients in the baking dish, ending with a layer of zucchini topped by a layer of cheese.
  • Here are the exact layers I used, bottom to top: 1/3 of the zucchini, 1/2 of the onion, 1/2 artichoke hearts, 1/3 cheese, 1/2 tomato sauce, seasonings, 1/3 zucchini, 1/2 onion, 1/2 artichoke hearts, 1/3 cheese, 1/2 tomato sauce, seasonings, 1/3 zucchini, 1/3 cheese.
  • Cover and bake for 45 minutes to 1 hour, until zucchini is cooked through.
  • If necessary, remove lid and cook a few more minutes to brown cheese.

Easy Marinated Artichokes image

Store-bought marinated artichokes are too expensive and are consumed faster than the time it takes to open the jar. I created this recipe with simple ingredients that are already found in the kitchen. It's delicious by itself, but feel free to experiment and even make your own artichoke salad. It's not like the real deal...it's better! Enjoy immediately or chill the marinated artichokes for at least an hour before serving.

1 lemon, juiced
2 tablespoons extra-virgin olive oil
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
1 teaspoon Italian seasoning
2 cloves garlic, chopped
1 (14 ounce) can quartered artichoke hearts, drained

Steps:

  • Combine lemon juice, extra-virgin olive oil, salt, black pepper, Italian seasoning, and garlic in a sealable plastic container.
  • Seal the container and shake to emulsify the mixture.
  • Remove the lid and add artichoke hearts. Reseal the lid and continue shaking the container until the artichoke hearts are completely coated.

1 cup white wine vinegar
2 cups water
1 bay leaf
1 clove whole garlic
8 to 12 baby fresh artichokes, trimmed and quartered
To prepare whole artichokes, see INFORMATION AND SPECIAL TECHNIQUES:

Steps:

  • 1 In a large saucepan, combine the vinegar, water, bay leaf, and garlic. Bring the liquid to a simmer. 2 Add the artichokes, crushed red pepper, and salt to taste. Cook until tender when pierced with a knife, 7 to 10 minutes. Remove from the heat. Pour the contents of the pan through a fine-mesh strainer into a bowl. Reserve the liquid. 3 Pack the artichokes into sterilized glass jars. Pour in the cooking liquid to cover. Let cool completely. I used to work in a fabulous Italian restaurant, and the cooks taught me how to make this dish. I have modified it a bit, but it's very similar, and incredibly delicious.

4 ounces small uncooked seashell pasta
2 ½ tablespoons extra virgin olive oil
3 tablespoons butter
2 cloves garlic
1 sprig fresh basil, chopped
1 (8 ounce) can artichoke hearts, drained and quartered

Steps:

  • Bring a pot of lightly salted water to a boil. Add seashell pasta, cook for 8 to 10 minutes, until al dente, and drain.
  • Heat the olive oil and melt the butter in a skillet over medium heat. Mix in the garlic, basil, and artichoke hearts, and cook 5 minutes, until heated through. Toss with the cooked pasta to serve.
