1/3 cup freshly squeezed lemon juice
1 tablespoon minced garlic (3 cloves)

  • Cook for 12 minutes, until the underside is golden brown. Turn the hens skin-side down, weigh them down again, and cook for another 12 minutes until the skin is golden brown and the hens are cooked through.
  • Place the lemon halves on the cool side of the grill, cut-side down, for the last 10 minutes of cooking. Remove the Cornish hens and lemons to a plate or cutting board, cover with aluminum foil, and allow to rest for 5 minutes. Cut the hens in half, sprinkle with fleur de sel, and serve with the grilled lemon halves.

Number Of Ingredients 15

6 Cornish game hens (1 1/2 pounds each), rinsed, patted dry, necks reserved, giblets discarded
1 cup Pomengranate Marinade
1 cup Pomengranate Marinade %%component_recipe_title%%
2 onions, chopped
2 carrots, chopped

%%component_recipe_title%%
%%component_recipe_title%%
Pomegranate seeds, for garnish
1 head treviso, halved, for garnish

Steps:

  • Trim excess fat in and around cavity of each hen; remove wing tips and reserve. Generously season cavity and exterior of each hen with salt and pepper. Reserving 2 tablespoons, rub hens with marinade and refrigerate, covered, for 6 hours.
  • Preheat oven to 450 degrees with rack in upper 1/3 of oven. Place onions, carrots, celery, garlic, reserved wing tips and necks, thyme, and bay leaves in a large roasting pan. Position hens on top of vegetables so they are not crowded and tail ends meet in center of pan. Roast until the juices run clear in the legs when pricked with a fork, 45 to 60 minutes. During the last 10 minutes of roasting, baste hens with reserved marinade mixture.
  • Remove hens from oven; let rest 15 minutes. Meanwhile, heat a grill pan over high heat. Using a pastry brush, brush cut-sides of pomegranate and treviso with olive oil; season with salt and pepper. Place cut-side down on grill pan, and cook until grill marks appear.
  • Transfer some of the onions and treviso to a large serving platter. Top with hens and remaining vegetables. Drizzle with about 2 tablespoons gastrique. Garnish with grilled pomegranate and treviso. Sprinkle with pomegranate seeds, if desired.

  • Cornish Hens ... Now, if you aren't familiar with this technique, your butcher will be happy to do this. Even those at your local grocery store - you just have to ask. To spatchcock a hen: turn it breast side down on a cutting board. Using heavy duty kitchen shears, cut along each side of the back bone; this runs right down the center from one end to the other. Then using the palm of your hand, flatten if out pushing down. There is a small breast bone or plate right in the center, which is easy to pull out. Then, flip it over (breast side up). At the end by the drumsticks, there is a flap of skin; you need to poke 2 small holes using a knife; and stick the ends of the drumsticks in them. This keeps them in place during cooking.
  • Again, if you uncomfortable doing this, have your butcher, or the guy behind the meat market do this; yes, they are willing and more than happy to help. Also, there are wonderful videos online too.
  • Marinate ... Add your hens to a glass 13x9 pan, and pour the marinate over the chickens. Make sure to rub the marinate over both sides. Cover with plastic wrap, and refrigerate/marinate at least 1 hour, up to 8 hours.

  • In a medium mixing bowl combine water, orange juice, sugar, salt and spices. Whisk to combine thoroughly.
  • Rinse hens and trim off any excess fat or skin (do not remove all of the skin, only extra hanging pieces). Place them in gallon sized resealable storage bags (2 to a bag) and divide the brine evenly between the two. The spices may settle in the liquid, so give it a swirl as you're pouring it in.
  • Squeeze all the air out of the bags and place in a baking dish to prevent any liquid from leaking. Marinate in the refrigerator overnight.
  • When you are ready to cook the hens, preheat your oven to 400 degrees F.Place the hens in a roasting pan and reserve the marinade. Tuck an orange quarter inside of each hen, then truss with twine (simply wrap the drumstick ends together and secure with twine).
