1 pc ginger
2 garlic cloves
1 red chili pepper
1 Tbsp Garam Masala
1 tsp ground cilantro
1 tsp Cumin
1 tsp Turmeric
11 ozs Yogurt (low-fat)
4 Tilapia (each about 6 oz.)
1 small Cucumber
1 small ripe Mango
2 scallions
8 ozs hearts of palm (drained, canned)
1 Lime
5 sprigs cilantro
salt
peppers
3 Tbsps Mango chutney
carbonated mineral water
1 Tbsp vegetable oil

Steps:

  • Peel and chop ginger and garlic coarsely. Halve chili pepper lengthwise, remove the seeds, rinse and chop.
  • Add ginger, garlic and chili pepper to a mortar. Crush with the garam masala, cumin seeds, coriander and turmeric to the consistency of a smooth paste.
  • Combine spice paste in a bowl with yogurt and up to 3 tablespoons of the chutney. Rinse fish fillets, pat dry, coat with yogurt mixture, cover with plastic wrap and allow to marinate in the refrigerator for a minimum of 3 hours.
  • Peel the cucumber, cut in half lengthwise and scoop out the seeds. Peel mango and cut into thin slices around the pit.
  • Rinse scallions. Cut hearts of palm, cucumber, mango and scallions into small cubes or slices.
  • Squeeze lime. Wash cilantro and pat dry, chop the leaves coarsely. Mix cilantro with the remaining salad ingredients and season with 2 tablespoons lime juice, salt and pepper to taste.
  • Blend mango chutney with yogurt and 3-4 tablespoons mineral water until smooth, set aside.
  • Remove fish fillets from marinade and scrape off excess sauce with a knife.
  • Brush a grill pan with oil and grill fish fillets for about 4 minutes on each side. Arrange hearts of palm salad and fish fillets drizzled with mango yogurt sauce on plates. Serve immediately.

3 tablespoons fresh lemon juice
1 tablespoon butter, melted
1 clove garlic, finely chopped
1 teaspoon dried parsley flakes
1 dash pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
  • Rinse tilapia fillets under cool water, and pat dry with paper towels.
  • Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.
  • Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.

3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 tablespoon minced garlic
2 (3 ounce) fillets tilapia
cooking spray
1 teaspoon freshly cracked black pepper

Steps:

  • Mix the honey, soy sauce, balsamic vinegar, and garlic together in a bowl. Place the tilapia fillets in the mixture; allow to marinate in refrigerator at least 30 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray.
  • Remove tilapia from marinade, and discard the marinade. Place fillets into the prepared baking sheet, and sprinkle the black pepper over the fish.
  • Bake in the preheated oven until the fish flakes easily with a fork, 15 to 20 minutes.

This is my favorite way to make tilapia, especially because Costco has such a great deal on their packaged tilapia, (at least here in Arizona.) So this recipe is not only very yummy, it is very inexpensive. In fact, you probably have all of the ingredients in your kitchen. Enjoy!

2 garlic cloves
1/2 cup fresh parsley
1/2 lemon
3/4 cup olive oil
1/4 cup red wine (I prefer balsamic) or 1/4 cup balsamic vinegar (I prefer balsamic)
1 tablespoon dried oregano
1/2 teaspoon black pepper
2 dashes Tabasco sauce

Steps:

  • Mince the garlic into fine pieces.
  • Chop up the parsley into small pieces.
  • Place the parsley and garlic into a jar with a tight fitting lid.
  • Squeeze the juice into the jar.
  • Add the olive oil, balsamic, oregano, pepper and Tabasco to the jar.
  • Put the lid on the jar and shake well.
  • Marinade your tilapia fillets for 20-30 minutes.
  • I grill my tilapia for about 5 minutes, each side, but you could bake it for 30 minutes, or cook it in a frying pan, sprayed with Pam, for about 15 minutes on your stove top.

Steps:

  • Mix olive oil, soy sauce, vinegar, honey, and garlic together in a small bowl. Place each tilapia fillet in a separate resealable zip-top bag.
  • Pour 1/2 of the marinade into each bag. Seal bags and place in the refrigerator for 1 hour.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Remove fillets from the marinade, shake off excess, and place on a broiling pan with a drip pan or baking sheet underneath. Discard the remaining marinade.

2/3 cup orange juice
1/3 cup soy sauce
1 tablespoon honey
four 6 ounce tilapia fillet
1 tablespoon vegetable oil

Steps:

  • Add orange juice, soy sauce, and honey to a resealable plastic bag. stir to dissolve the honey and add in the fish fillets. Seal the bag and press out any excess air. Turn over a few times to coat the fish. Marinate at room temperature for 15 to 20 minutes, turning the bag halfway through. Do not marinate any longer or the acid in the orange juice will cause the fish to become mushy. Remove the fish from the bag, reserve the marinade, and pat the fillets dry.
  • In a large nonstick skillet, heat the oil over medium-high heat until it shimmers. Add the fillets in batches and cook until golden brown, about 3 minutes per side.
  • Transfer the fillets to plates, add about half of the reserved marinade to the pan, and boil until it coats the back of a spoon. Check for seasoning and serve over the fish.

1 teaspoon oregano
salt and pepper, to taste
1 teaspoon parsley, finely choopped
2 garlic cloves, minced
3 teaspoons extra virgin olive oil
1 lemon, cut into 6 wedges

Steps:

  • Line the broiler pan with aluminium foil.
  • Pat the fish dry then place it on the pan. Season both sides of the fish with the salt, pepper, oregano and parsley.
  • Drizzle the fish with the olive oil then top with the garlic.

For this fish recipe you need Tilapia Fillet of Sushi quality. The fish must be extremely fresh, because it will not be cooked, just marinated with lemon and then in a lukewarm vinaigrette type sauce. BUT if you can get Tilapia of sushi quality this dish is a fantastic appetizer or a very light summerly fish dish. Serve it it with a green salad or cherry tomatoes and with a fruity white wine like Pinot Grigio. Something different. I love it.

1 tilapia fillet
1/2 lemon, juice of
3 tablespoons olive oil
1 teaspoon aceto balsamico (white, see note)
3 slices fresh ginger
1 garlic clove, sliced
1 sprig fresh rosemary (about 2 inch long)
1/4 vanilla bean
salt and pepper
parmesan cheese, freshly grated
French bread, toasted

Steps:

  • Pat dry the tilapia fillet and wrap it in cling film. Place it for about 30 minutes in the freezer.
  • Take it out of the freezer and cut it into very thin slices. The slices should be as thin as possible. Freezing will help here, because the fillet is firm after freezing. It is important, that the slices are very thin.
  • Place the tilapia slices on a plate in a single layer and drizzle the lemon juice over the fish. Set aside.
  • Heat olive oil over medium heat (don't let it get too hot). Cook ginger, garlic, vanilla bean and rosemary sprig for about 5 minutes. Garlic, ginger should not turn brown.
  • Remove from heat and let cool slightly.
  • Add aceto balsamico, salt and pepper to taste to make a lukewarm vinaigrette.
  • Arrange the tilapia fillets on a serving platter and drizzle with the vinaigrette.
  • Top it with Parmesan and serve with some roasted bread.

2 tablespoons coriander, washed, chopped
4 green onions, green and white chopped
5 tablespoons parsley, washed and chopped
2 garlic cloves

2 eggs

1 cup whole wheat flour
2 teaspoons sea salt

8 lemon wedges, well washed before cutting

Steps:

  • Place Tilapia fillets on a plate lined with paper towels to dry off any excess moisture.
  • Combine chopped coriander leaves, green onions, parsley, garlic cloves, lemon juice, egg and black pepper in a blender. Puree the herbs until smaooth.
  • Pour herb paste into a dish. Add Tilapia and turn fillets coating them completely.
  • Transfer marinated fish into a bag and refrigerate for 20 minutes.
  • Using a large plate, mix whole wheat flour, salt and pepper.
  • Preheat an electric skillet to 450°F Add half the required grape seed oil.
  • Working with one fillet at a time, and keeping as much of the herb paste on the fish as possible, dredge both sides of the fillet in flour.
  • Gently shake off excess flour and pace into the hot skillet.
  • Repeat with remaining fillets, placing 4 pieces at a time.
  • Cook Tilapia 2-3 minutes on each side, or until just lightly browned.
  • Turn the fillets over very gently.
  • Remove and keep warm while repeating the process with the remaining fillets.
  • Serve Tilapia garnished with lemon wedges.
