AWARD WINNING ALMOND DESSERT BARS
These unbelievably delicious almond dessert bars are so good, they won a 1st place at a local baking contest. The baker of these bars was kind enough to share the recipe with us.

Steps:
- Preheat oven to 350F with rack on lower middle position. Grease a 9x13 pan and set aside.
- Make the Crust: In a large bowl, combine the butter and powdered sugar; using electric (or stand) mixer fitted with paddle attachment, mix together on medium high speed until light and fluffy, 3-4min. Gently add flour and mix on low speed just until combined. Mixture will be crumbly, so use hands to form a dough ball. Press evenly into prepared glass pan to form bottom crust (I use bottom of a flat glass cup to press down evenly.) Bake 18 minutes or until lightly browned and set. Remove from oven, but leave oven on.
- While the crust is baking, make Filling: In a large bowl, combine eggs, very-soft cream cheese, and sugar. Whisk together until creamy and no lumps remain (it really helps if your cream cheese is quite soft to start with.) Add almond extract and mix to combine. Evenly pour the filling over crust, using rubber spatula to scrape all filling. Bake 15-20 min or until set. Let dessert cool completely on wire rack.
- Frost the Bars: In a bowl, combine all frosting ingredients. Whisk until smooth and no more lumps. Evenly frost over cooled dessert bars (be sure bars have cooled completely before frosting.) Cover, chill, and serve with almond slices on top.
ALMOND BARS
Almond Bars are tender, lightly sweetened shortbread-like bars that are so good, you'll find yourself doubling the recipe every single time you make them.

- Preheat the oven to 325 degrees. Sift together the flour, baking powder and salt and set aside. Cream together the butter and the sugar. Add the egg and the almond extract and then mix until light and fluffy. Slowly add the flour mixture to the butter mixture. Mix until combined.
- Press the dough into the bottom of a well-greased 9x13 pan. Press with your fingers or a pastry roller to smooth the top of the dough. Using a pastry brush, brush a tiny bit of milk across the top of the dough. Sprinkle with sliced almonds and very lightly press them into the top of the dough.
- Bake for 18-20 min, or until just barely beginning to brown around the edges. Do not let the bars brown at all. Let cool in the pan for 5 minutes and then cut into bars. If they are too soft to cut, let them cool for a few more minutes. Carefully transfer the bars to a wire rack to cool completely before icing.
- To make the icing: Add just a tiny bit of milk at a time to the powdered sugar. If the consistency is too thick, it won't drizzle nicely over the bars. If it is too thin, the icing will just melt into the bars. If you are unsure, test a bit of it on the edge of one bar before drizzling the icing over the entire batch.

MARS ALMOND BAR
Steps:
- In a large saucepan over medium heat, combine the sugar, corn syrup, 1/2 cup of the water, and the salt. Heat to boiling, then cook using a candy thermometer to monitor the temperature. Beat the egg whites until they are stiff and form peaks. Dont use a plastice bowl for this. When the sugar mixture reaches 270~F, or th esoft crack stage. Remove from the heat and pour the mixture in thin streams into the egg whites, blending completely with an electric mixer set on low. Continue to mix about 20 minutes or until the nougat begins to harden and thickens to the consistency of dough. Mix in the almonds. Press the nougat into a greased 9 x 9 inch pan and chill until firm about 30 minutes. Melt the caramels with the remaining 2 tb. water in a small saucepan over medium heat. Pour the caramel over the nougat and return the pan to the refrigerator. When the caramel and nougat are firm (about 30 min), slice down the middle of the pan with a sharp knife adn then slice across into 7 segments to make a total of 14 bars. Melt the milk chocolate chips in a microwave for 2 minutes on half power, stirring halfway through the cooking time. Melt completely, but be careful not to overheat. Resting the bar on a fork (and use fingers if needed) dip each bar into the chocolate to coat completely and tap the fork against the side of the bowl to knock off the excess chocolate. Place on waxed paper and let cool at room temperature until the chocolate is firm 1-2 hours. ALMOND BARS
This Almond Bars recipe is a sweet treat that has a shortbread-like texture and a delicious almond glaze on top! You'll want to make extra and freeze them for later!

Steps:
- Preheat oven to 325 degrees F. Generously butter (or use baking spray) on a half sheet pan (approximatedly 18"x13"). Set aside.
- In a medium bowl, combine flour, baking powder, and salt. Set aside.
- In a mixing bowl, beat butter and sugar until light and fluffy, about 3-4 minutes. Add in eggs and almond extract. Beat until combined. Slowly add in flour mixture. Mixing until well blended.
- Press this dough into the bottom of your prepared baking dish. Use your fingers or a pastry roller to smooth the top of the dough.
- Using a pastry brush, brush the milk to the top of the dough (you may not need to use all of it). Sprinkle with sliced almonds, pressing them lightly into the dough.
- Bake for 20-22 minutes until done. You don't want to brown these bars.
- Cool for about 5 minutes, then cut them with a knife into bars. If they are too soft to cut, allow to cool a little bit more. Carefully remove them to a wire rack to continue cooling.
- Once cooled, you can make your glaze by whisking the sugar with the almond extract and milk. Drizzle over the bars and allow to set.

- In a large bowl, beat the eggs and sugar until lemon-colored. Beat in butter and extract; gradually stir in the four and mix well. ALMOND BARS RECIPE

- First Layer: 1. Preheat oven to 350*F 2. Line a 9x13 casserole dish with parchment paper or non-stick foil. 3. Mix butter, flour and powdered sugar together with a hand mixer. 4, Gently press mixture into the prepared pan and bake for 15 minutes. Second Layer: 1. Once the hot crust comes out of the oven, sprinkle sliced almonds over the top. Set aside. 2. Wipe off beaters and bowl with a paper towel and reuse. 3. In the same bowl add cream cheese and eggs. Mix well. 4. Add sugar and almond extract. Mix well. 5. Pour cream cheese mixture over the crust and almonds and gently spread out. 6. Bake for an additional 15 minutes. Third Layer (Frosting): 1. Once the crust comes out of the oven, turn the oven off and let the crust cool completely. 2. Once completely cool, make the third layer. 3. Clean out the bowl and use again for frosting. 4. Blend butter and powdered sugar ½ cup at a time, until completely blended. 5. Add milk and extract and mix again. 6. Spread almond frosting over the cooled bars. 7, Top lightly with more slivered almonds if desired. 8, Cut into 1 ½ inch bars to serve.
