THE ORIGINAL EGGNOG

When she published this recipe in her first book, Entertaining, Martha wrote that this eggnog was "so rich it needs no accompaniment." This original recipe is made with plenty of bourbon, cognac, dark rum, heavy cream, and a dozen eggs-good thing it serves a crowd.

12 large eggs, separated
1 1/2 cups superfine sugar
1 1/2 quarts heavy cream
1 quart whole milk
3 cups bourbon, such as Maker's Mark
1/2 cup dark rum, such as Mount Gay
2 cups cognac, such as Rémy Martin Grand Cru
Freshly grated nutmeg, for serving

Steps:

  • In a very large bowl, beat egg yolks until thick and pale yellow. Gradually add sugar to yolks. With a wire whisk, beat in milk and 1 quart cream. Add bourbon, rum, and cognac, stirring constantly.
  • Just before serving, beat egg whites until stiff. Fold into mixture. Whip remaining heavy cream until stiff and fold in. Sprinkle with nutmeg.

This eggnog's rich, cloud like texture is produced by separating the eggs and beating the whites before adding them to the milk mixture. The eggnog base can be made one day in advance; just beat in the stiff egg whites and whipped cream just before serving.

Steps:

  • Just before serving, beat egg whites until stiff. Fold into mixture. Whip remaining 1/2 quart heavy cream until stiff, and fold into mixture, Sprinkle with nutmeg.
  • Note: Raw eggs should not be used in food prepared for pregnant women, babies, young children, the elderly, or anyone whose health is compromised.

4 cups milk
1 cup sugar
12 large egg yolks
1/2 cup bourbon, (optional)
1 cup chilled heavy cream
Grated nutmeg, (optional)

Steps:

  • In medium saucepan, whisk milk and sugar over medium heat until sugar is dissolved, 1 to 2 minutes. In a large bowl, whisk egg yolks. Whisking constantly, pour hot mixture into yolks in a slow and steady stream.
  • Return mixture to pan; cook over medium-low heat, stirring often, until thick enough to coat back of spoon, 20 to 25 minutes; do not let simmer. Quickly strain into a bowl. Stir in bourbon, if desired, and cream. Cool completely; cover with plastic wrap; refrigerate until chilled. Garnish with nutmeg, if desired.

A rich and creamy drink, this classic eggnog gets a boozy kick from bourbon and rum.

2 quarts whole milk
2 2/3 cups sugar
1 vanilla bean, split, seeds scraped
16 large egg yolks
2 cups cold heavy cream
1/2 cup bourbon
1/2 cup dark rum
Freshly grated nutmeg, for sprinkling

Steps:

  • Heat milk, sugar, and vanilla bean and seeds in a medium saucepan over medium-high heat, whisking until sugar has dissolved. Whisk yolks in a large bowl. Pour hot milk mixture into yolks in a slow, steady stream, whisking.
  • Return milk-yolk mixture to pan, and cook over medium-low heat, whisking often, until thick enough to coat the back of a spoon, about 20 minutes (do not let simmer). Pour through a fine sieve into a bowl; discard bean. Whisk in cream, bourbon, and rum. Let cool completely. Cover with plastic wrap, and refrigerate until cold, about 1 hour (up to 1 day). Serve sprinkled with nutmeg.

1 cup soft butter or 1 cup soft margarine
2 cups sugar
1 cup store bought eggnog
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
5 1/2 cups flour, sifted
1 egg white, lightly beaten
colored sprinkles

Steps:

  • In a large mixing bowl, cream butter and sugar.
  • Beat in Eggnog, baking soda and nutmeg.
  • Gradually add flour and mix well.
  • Cover and chill at least 1 hour.
  • On a lightly floured surface roll out half of the dough to 1/8 thickness.
  • Cut into desired shapes, place on an ungreased cookie sheet.
  • Brush cookies with beaten egg white and sprinkle on colored sugar.
  • Bake at 350 for 6-8 minutes.
  • Remove to cool on a wire rack.
  • This should make about 16 dozen cookies.

I was watching the Martha Stewart Show the other day and they asked her what her favorite holiday drink was and she said, "Eggnog". So, I wanted to include her decadent recipe for those who may want to indulge in an over the top Eggnog. This is a strong but full flavored Eggnog and one that you most certainly can celebrate the Christmas season with. Dec. 14th, 2014 --- We made this for our cookie exchange and they loved it! Recipe is from Martha Stewart.

6 large eggs, separated
3/4 cup(s) superfine sugar
2 cup(s) whole milk
3 cup(s) heavy cream, plus more for garnish
1/2 cup(s) bourbon, preferably maker's mark
1/4 cup(s) dark rum, preferably mount gay
1/4 cup(s) cognac, preferably remi martin grand cru
- freshly grated nutmeg, for sprinkling

Steps:

  • Beat yolks in a very large bowl until thick and pale. Slowly beat in sugar. --- I did not have a superfine sugar so we put it in the Vita-mix and it worked out great. Whisk in milk and cream.
  • Mix in 3 choices of alcohol of bourbon, rum, and Cognac. (Cover, and refrigerate for up to 1 day.) --- If not refrigerating overnight, just put some ice in the nog for 10 minutes or so to get nice and cold and strain out the ice immediately.
  • Just before serving, beat egg whites until stiff peaks form. Fold whites into the eggnog mixture. Whisk remaining 1 cup cream until stiff peaks form, and fold into eggnog. (Alternatively, you can fold half the whipped cream into eggnog, and top with remaining half.) Sprinkle with nutmeg. --- We did this 1/2 and 1/2 along with topping of the fresh nutmeg.
  • Cook's Note The egg yolks and whites in this recipe are not cooked. This dish should not be prepared for pregnant women, the elderly, or anyone whose health is compromised.
