BERRY BERRY SMOOTHIE

B. and Dan love biking, and after a workout they love the refreshment of a chilled fruit smoothie. Use your blender or food processor, and add brewer's yeast or protein powder if you want. It's a healthy drink any time of day. Freezing the fruit first makes the shake thicker.

5 cups mixed berries
1 cup canned coconut milk
1/4 cup honey or sugar (or to taste)
Grated fresh ginger (optional)
Whole berries for garnish

Steps:

  • Place the berries, coconut milk and honey or sugar in a blender or food processor and puree until smooth. Chill and serve garnished with whole berries.;

1 quart plain yogurt or kefir (lowfat or nonfat)
4 cups frozen fruit -- choose any combination of the following: blueberries, strawberries, red raspberries, peaches, mango, pineapple
1/4 cup whole flax seeds
3 tablespoons wheat germ
1/4-1/2 cup turbinado sugar (or plain sugar, or 1/2 cup agave - I start with less sugar then add more if needed)
optional ingredients
juice of a lemon; 1/4 cup almond butter; handful of fresh fruit; 1/2 cup apple juice or other juice of your choice; can use milk in place of yogurt

Steps:

  • TO MAKE SMOOTHIE Place all ingredients in food processor.Blend for a few minutes. Scrape down sides. Blend for 2 more minutes. Taste for sweetness, adding sugar as needed. If too thick let it sit for a few minutes then stir. If too thin put in freezer for 30 min. to harden. Pour into individual glasses and top with whipped cream. Alternatively, makes a great granita: pour into a 9x13 casserole, freeze for an hour then stir every hour until frozen(once it starts to harden, use a fork and scrape along the top.)
