CHERRY COKE CAKE
Chocolate and cherries are a magical combination. Here, we amp up the cherry flavor by using cherry cola in the cake batter.

- For the cake: Preheat the oven to 350 degrees F. Coat two 8-inch round cake pans with cooking spray, then line with parchment and spray the parchment.
- Combine the cake mix and pudding mix in a stand mixer fitted with the paddle attachment and mix on low speed to blend. With the mixer still running, add the egg whites, cherry cola and vegetable oil and mix until combined. Raise the speed to medium and mix until increased in volume, lighter in color and smooth, about 5 minutes. Fold in the maraschino cherries. Divide the batter between the prepared baking pans; smooth into even layers using an offset spatula.
- Bake until a skewer inserted in the center comes out clean and the edges pull away from the sides of the pan, about 15 minutes. Transfer to a rack and let cool in the pans, about 10 minutes, then turn out onto racks and let cool completely, about 1 hour.??
- For the frosting: Mix the confectioners' sugar, butter and salt together in a stand mixer fitted with the whisk attachment. Mix on low speed until well blended, then increase the speed to high and whip until light and fluffy, 3 to 5 minutes. Add the maraschino cherry liquid and continue to whip until bright pink and spreadable. Add the chopped cherries and mix on low speed until evenly distributed.
- Using a serrated knife and sawing in long, even strokes, carefully halve the cake layers horizontally. Place 1 layer, cut-side up, on a platter or cake stand; spread 1 1/2 cups frosting on top. Stack another cake layer on top and spread another 1 1/2 cups frosting on top. Repeat with the remaining 2 cake layers, then cover the top and sides with a thin layer of frosting (this is the crumb coat) and use a bench scraper or large offset spatula to smooth out the sides and top (it's okay if some cake shows through). Refrigerate 15 minutes, then add another 1/2-inch layer of frosting to the top of the cake and smooth out to make a perfectly flat top. Refrigerate until ready to cover with ganache.
- For the ganache: Meanwhile, place the chocolate in a heatproof bowl and heat the cream in a small saucepan over medium-high heat until beginning to boil. Pour the cream over the chocolate and let sit, stirring occasionally, until the mixture is completely smooth and the chocolate is melted, about 5 minutes. Let cool 30 minutes, then pour over the chilled cake so that the top is completely coated and chocolate drips decoratively down the sides. Let set at room temperature 30 minutes, then top with the whole cherries in the center of the cake and serve.
COCA-COLA CAKE
Steps:
- For the cola cake: Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-inch pan.
- Sift flour and granulated sugar in a bowl. Heat butter, cocoa powder and cola to a boiling point in a small pan. Pour over flour/sugar mixture. Add buttermilk, baking soda, eggs, vanilla and marshmallows (the batter will be thin and the marshmallows will float to the top). Pour batter into prepared pan. Bake until cake is cooked, 30 to 35 minutes.
- For the chocolate cola icing: Combine butter, cocoa, cola, confectioners' sugar and vanilla in a pan and heat until it comes to a boil.
- Poke holes in the cake while it's still hot and pour the icing over the cake. Cut into squares and serve warm from the cake pan.
COCO-COLA CAKE II

- Combine flour and white sugar in mixing bowl. Heat 1 cup butter, 3 tablespoons cocoa, and 1 cup cola soft drink to boiling and pour over the flour and sugar. Mix thoroughly.
- Add buttermilk, eggs, baking soda, vanilla, and marshmallows and mix well.
- Bake in a prepared 9 by 13 inch pan for 40 minutes at 350 degrees F (175 degrees C).
- While still hot, frost with Coco Cola Frosting: Combine 1/2 cup butter or margarine, 2 tablespoons cocoa and 6 tablespoons cola soft drink and heat to boiling. Pour over 4 cups confectioners' sugar and mix well. Mix in chopped nuts and spread over hot cake.

MARY ELLEN'S EASY COLA CAKE
When I saw Tipical Mary Ellen make this on her HGTV program, I didn't believe it could really taste good. But always being ready to try something different, I gave it a shot and for crying out loud, it IS good! I suppose that any flavor would be good, but I stick to German chocolate cake mix with Pecan/Coconut frosting. It is sweet, but, hey! it's CAKE!! Hope you enjoy it as much as we do!!

- Preheat the oven to 450 degrees F.
- Butter and flour 4 (6-ounce) ramekins or baking dishes, tapping out the excess flour.
- Set on a baking sheet.
- In a double boiler, or a glass bowl set over a pan of boiling water, melt butter with the chocolate, cream, and powdered sugar, stirring until smooth.
- Remove from the heat.
- In a separate bowl, whisk together the eggs, egg yolks, sugar, vanilla, and salt until thick ribbons form, about 3 minutes.
- Sift flour into the egg mixture and fold together.
- Fold the chocolate into the egg mixture. Divide among the prepared dishes and bake until the sides of the cake are set and the tops are puffed but still soft, about 10-12 minutes.
- Remove from the oven and let cool in the ramekins for 2 minutes, then unmold onto dessert plates.
- Sprinkle cocoa over the cakes, and serve.
- Fresh berries, ice cream or whipped cream make a nice accompaniment.

- Preheat oven to 275 degrees F. Grease a Bundt or angel food cake pan and line with 2 layers of waxed paper. If gumdrops are large, cut into pieces. Dissolve the baking soda in the hot water.
- Cream butter and sugar. Add applesauce, then eggs and baking soda.
- Sift 2 cups of the flour with the seasonings. Add to creamed mixture and mix. Sift the other 2 cups of flour over the raisins, gumdrops and nuts. Mix ell so they do not stick together -- especially important if the gumdrops were cut up. Add to creamed mixture. Mix well.
- Pour batter into prepared Bundt or angel food cake pan. Set a cake pan of water on lowest rack of a preheated oven. Bake cake on middle rack for 2 hours or until it tests done, using a toothpick.
