Time 1h55m

Yield 16

Number Of Ingredients 11

1 pound pitted dates
⅔ cup light brown sugar
⅔ cup orange juice
1 orange, zested
2 teaspoons vanilla extract
1 ½ cups regular rolled oats
1 cup all-purpose flour
1 cup light brown sugar
¾ teaspoon baking soda
¼ teaspoon salt
¾ cup cold unsalted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat dates, 2/3 cup brown sugar, orange juice, and orange zest in a saucepan over low heat; cook, stirring occasionally, until dates have softened, absorbed the liquid, and mixture is like a paste, about 10 minutes. Remove from heat; stir in vanilla extract.
  • Stir oats, flour, 1 cup brown sugar, baking soda, and salt together in a bowl; cut in butter with a knife or pastry blender until mixture resembles coarse crumbs.
  • Lightly press 2/3 of the crumb mixture into the bottom of a 9x9-inch pan. Spread date mixture evenly over the crumb crust; sprinkle remaining crumbs evenly over the top of date mixture.
  • Bake in the preheated oven until top is golden, about 30 minutes; cool on a wire rack for at least 1 hour before slicing into bars.

MATRIMONIAL CAKE - GRANDMA DICKAU'S DATE SQUARES

Matrimonial Cake - Grandma Dickau's Date Squares image

Number Of Ingredients 9

1 cup Date Filling - chopped dates
1 tablespoon brown sugar
1/2 cup water
1 cup Crumb mixture - Flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup Margarine or Butter
1 cup brown sugar, lightly packed
2 cups rolled oats

Steps:

  • Date filling - Combine in a saucepan the chopped dates, 1 TBSP brown sugar, and 1/2 cup water.
  • Stir and bring to a boil and cook until dates are soft - about 5 minutes. The mixture should be like jam.
  • Set aside to cool.
  • Crumb mixture - combine the flour, the baking soda and the salt.
  • Cut in margarine or butter.
  • Then blend in the brown sugar and rolled oats.
  • Press half of the crumb mixture on the bottom of a greased 8x8 or 9x9 pan. (If doubling the recipe, use a 9x13 pan.)
  • Cover evenly with the cooled date filling.
  • Cover with remaining crumb mixture, and pat until smooth.
  • Bake at 325 degrees for 35 to 40 minutes or until golden brown. Don't let it get too dry!
  • Cool before cutting. Grandma says that it is best to bake the day before using, cool and cover so that it is easier to cut, doesn't crumble and doesn't dry out.
