Thank Oklahoma for this easy, bright and tangy salad. It's made with one of the state's staple crops, black-eyed peas -- or cowpeas as some in the "Sooner State" like to say. With bursts of corn, tomato and pepper, it's a salad that can be served cold or at room temperature, making it perfect for a picnic or tailgate party.

Number Of Ingredients 13

3 tablespoons cider vinegar
2 tablespoons finely chopped pickled jalapeno plus 1 tablespoon brine
1 teaspoon honey
Kosher salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
1 cup frozen corn, thawed
1/2 cup roughly chopped fresh cilantro
4 scallions, chopped
2 plum tomatoes, seeded and chopped
1 red bell pepper, stemmed, seeded and chopped
Tortilla chips, for serving

Steps:

  • Whisk together the vinegar, pickled jalapeno brine, honey, 1/2 teaspoon salt and several grinds of pepper in a large bowl. Whisk in the oil to make a smooth dressing.
  • Add the black-eyed peas, black beans, corn, cilantro, pickled jalapeno, scallions, tomatoes and bell pepper. Toss to coat in the dressing. Season to taste with additional salt and pepper. Cover and refrigerate at least 1 hour to blend the flavors before serving. Serve with tortilla chips for scooping.

Hamlin's, a Mexican restaurant in Muskogee, OK makes and serves this dip along side chips and salsa and sells it by the quart jars! 1 jar(s) real kraft mayo
1 Tbsp vinegar
1 small block of blue cheese or tub of blue cheese crumbles
1 large dill pickle
5 green olives
1/2 medium white onion
milk for thinning

Steps:

  • 1. In the blender, add pickle, olives, and onion. Blend to a dip consistancy. Add the blue cheese, vinegar and mayonnaise and blend.
  • 2. Add milk to thin. Keep refrigerated.
  • 3. I use about a 6oz block of cheese. This recipe is a little vague. Hamlin owners probably wanted to keep it that way! However, it is worth trying! Yum! Adjust the cheese as you like, but the blue cheese is strong after it sits overnight, so don't over do it! ha

1 lb. Jimmy Dean sausage (hot optional)
2 cans rotel tomatoes
2 lbs velveeta
1/2 cup onion, chopped

Steps:

  • Brown meat, sausage and onion. Drain. In large crock pot, combine cubed Velveeta, Rotel tomatoes and meat. 4Cook on high for 1-2 hours or until melted. Put on low to serve. Stir occasionally while melting and while serving. Serve with tortilla chips or Fritos

1 (14-ounce) can black-eyed pea
2 (15 1/2-ounce) cans garbanzo beans
2 medium tomatoes
4 green onions
2 cloves chopped garlic
2 jalapeño peppers (opt)
1/2 cup fresh parsley
1 (8-ounce) bottle fat free or lite Italian salad dressing
1 teaspoon oregano
1 large bag baked tortilla chip

Steps:

  • 1. 2 or more hours before serving: Drain and rinse both kinds of beans. Place in medium bowl. 2. Chop tomatoes, onions, garlic, peppers, and parsley and add to beans. 3. Add dressing and oregano to mixture and mix well. 4. Refrigerate for 2 hours or more before serving. This will keep for 5 days in your refrigerator. 5. Just before serving: Toss beans gently and serve with chips.

1 teaspoon sugar
2 garlic cloves (chopped)
1 tablespoon parsley flakes
1 (16 ounce) bottle Italian dressing

Steps:

  • Mix all ingredients thoroughly, stir in salad dressing.
  • Chill overnight (best)!
  • Drain if needed.
  • Serve with tortilla chips.
