FRIED RED FISH
Steps:
- In a medium Dutch oven add enough canola oil that fish is submerged by 1-inch of oil, and heat oil to 350 degrees F.
- Cut 3 slices into the flesh of the fish, approximately 2-inches apart, or equal spacing between head and tail.
- Hold fish by the tail and open cuts fully and season with the salt, pepper, paprika, and cumin. Repeat with the other side of the fish.
- Mix flours and cornstarch, liberally dredge fish, except tail. Using tongs, place fish, head first into oil, insuring that fish stays upright.
- Cook for 10 minutes or until fish is done.

Bring back the Friday night fish fry tradition with this updated recipe. Using Progresso panko crispy bread crumbs help the crust stay extra-crisp, while the fish remains moist.

- In shallow dish, mix flour and seasoned salt. In medium bowl, beat eggs and beer with whisk. Place bread crumbs in large resealable food-storage plastic bag.
- In electric skillet or deep fryer, heat about 2 inches oil to 350°F. Coat both sides of fish fillets with flour mixture, then dip in beer mixture, letting excess drip back into bowl. Place 1 or 2 pieces of fish at a time in plastic bag with bread crumbs; seal bag and shake to coat completely.
- Fry fish in batches in hot oil about 4 minutes, turning once, until golden brown. Drain on paper towels. Serve hot.

- Rinse fish and pat dry, cut into desired pieces. Mix egg, milk, 1/2 teaspoon of all-purpose Greek seasoning and hot sauce. Soak fish in milk mixture for 5-10 minutes. While fish is soaking mix remaining dry ingredients in bowl. Heat oil for frying or deep frying in large skillet. Drain fish and pat excess moisture from fish. Dip fish in dry mix and shake off excess. Place into hot skillet carefully and cook until brown on one side, flip and cook until brown. Drain fish on paper towels and place on warm plate in warm oven until all fish is done.
- Serve with pepper rings, onion slices, and slice dill pickles.

PEGGI'S FRIED FISH
Being from the south, we do a lot of fish fry's. Mine was well like by all.

- Make sure fish has been soaked in cold water & preferably frozen in water first. This takes the fishy taste out of it. *If doing catfish, soak a few hours in buttermilk first, just before frying.
- Mix milk & egg. Set aside. This mixture holds the batter on better & keeps the fish from overcooking & toughening up.
- Place cornmeal mix in Batter Pro if you have one. If you don't, just place in bowl. **I use cornmeal mix over just cornmeal because it is a finer grain & has flour mixed in, making a lighter breading & not so gritty.
- Put about 2" of canola oil in deep cast iron pot. Peanut oil is the best for frying, but is more expensive. Canola oil is healthier than others & tastes good too. Heat, so it's hot enough when you drop a FF in, it doesn't sink but starts frying.
- Dip fish in egg mixture & shake off excess. Now,dip in cornmeal mix to coat. Make sure you press on the meal to adhere to fish.
- Drop carefull into hot oil & fry, turning once until golden brown. Turn out onto paper towel to drain. Salt right away. Serve with lemon wedge or tartar sauce.
RITZ FITZ (OVEN-FRIED FISH FILLETS)
Steps:
- Preheat oven to 350 degrees F.
- Melt the butter in a 9 by 13-inch pan in the oven. While it melts, combine everything else except the fish in a pie pan. Dip the fish around in the melted butter, dip each piece in the crumb mixture, and return it to the baking pan. Bake the fillets for 20 to 25 minutes, or until the fish flakes with a fork. Serve with lemon wedges, and good luck to you.

- Heat the vegetable oil in a frying pan. (Or you could deep fry).
- In a bowl, combine the milk and eggs to create an egg wash.
- Season the fish with salt, pepper and Old Bay seasoning.
- Cut each fish diagonally into 3 or 4 pieces.
- Dredge the fish in the flour.
- Dredge the fish in the egg wash.
- Now cover the fish in panko breadcrumbs.
- Fry the breaded fish in the HOT vegetable oil until golden brown. (About 3 minutes on one side and 2 minutes on the other.).
- Cook a few pieces at a time.
- Once cooked, set on rack or paper towels to drain.
- Sprinkle fish with remaining salt, pepper, Old Bay seasoning.
- Note: The fish is very "meaty," and is also filling as a sandwich or by itself.
PEGGI'S SOUTHERN FRIED CABBAGE
Now I'm from the south. My hubby is a transplant from the north. When we met in Arkansas some 27 years ago, I was boilin' cabbage with bacon in it. This northern guy had to tell me how to fix it. Seems some other southerner had told him. I hope you enjoy it as much as we do.

- Place all ingredients in 10 3/4" cast iron skillet in the order given. Do not mix up at this time.
- Start out on high heat for a minute or two, until cabbage starts to "give it up",then reduce heat to low & cover skillet.
- Give it about 5 minutes before you start to stir it in skillet. Then, for the next 10 min, about, stir occasionally so it won't burn. Leave lid on to cook. Don't over stir it or it will just mush & not brown.
- Cook until it is starting to get translucent & tender-crisp & brown somewhat, as in picture above.
- Serve with anything. We had it with hamburger steaks & sauted onions today.
