Very easy and delicious, this is my take on the specialty pizza at round table. I make this as listed, but you can omit the olive oil and garlic base and use Marinara sauce, or the "signature" Polynesian sauce, recipe included.

1 Boboli pizza crust
1/2 cup mozzarella cheese, shredded
1/2 cup provolone cheese, shredded
2 -3 roma tomatoes, Sliced and peppered
1/4 cup red onion, chopped
2 green onions, chopped
3 pineapple rings, sliced
4 -5 slices Canadian bacon, cut into quarters
3 slices cooked bacon, crumbled
2 teaspoons olive oil, for light brushing
1 garlic clove, minced
1 tablespoon orange juice
1 small garlic clove, minced
1/2 teaspoon olive oil
1/8 teaspoon ground ginger
1 tablespoon brown sugar
2 tablespoons pineapple juice
1 tablespoon chili sauce, sweet
salt, dash

Steps:

Brush the Baboli crust with olive oil and minced garlic or the Polynesian sauce or Marinara sauce.
Add the toppings and cook at 450 for 10-15 minutes or until desired "doneness".

2 cups fresh orange juice
2 cups orange segments
2 tablespoons rice wine vinegar
2 teaspoons grated fresh ginger
2 tablespoons sugar, optional
2 tablespoons nam pla (Asian fish sauce)
2 tablespoons Dijon mustard
1 cup olive oil
12 (1/4-inch thick) Maui onion slices
1/2 cup olive oil
4 tablespoons chopped fresh thyme
4 teaspoons sambal (hot chili paste)
4 ounces goat cheese
4 whole fresh basil leaves
12 (1/4-inch thick) slices vine ripe tomatoes

Steps:

To prepare the sauce, use a blender and combine all of the ingredients except the olive oil and blend well. Slowly add the olive oil while the blender is running to incorporate the ingredients.
With each onion slice, rub 1 side with olive oil, thyme, and the Sambal. Grill the onion rings, bigger side down, turn and spread the goat cheese. Grill an additional 30 seconds longer. Continue to stack the onion and cheese, then basil, tomato, and basil again.
To serve, spread the sauce onto each plate or a large platter and place the onion napoleons on sauce.

Ingredients

1 prepared pizza crust (ready-to-bake pizza crust)
2 tablespoons olive oil
4 cups yellow onions, sliced (about 3 medium onions)
1 tablespoon garlic, minced
2 tablespoons balsamic vinegar
1/2 cup sweet bell pepper, grilled and chopped
4 ounces goat cheese, crumbles
2 ounces provolone cheese or 2 ounces mozzarella cheese, shredded
1/4 cup grilled chicken, grilled

Steps:

To caramelize the onions, heat the olive oil in a large skillet over medium heat.
Add the onions and garlic and cook over medium-low heat for about 20 minutes, stirring frequently, until the onions are very soft and lightly browned.
Add the balsamic vinegar and cook a few more minutes, then remove from heat.
Preheat the grill to low-medium heat (or preheat your oven to 400 degrees).
Spread the caramelized onions evenly over the pizza crust.
Top the onions with the chopped peppers, crumbled goat cheese, shredded provolone, and chicken.
Cook for 10-15 minutes, making sure the crust does not burn.
Remove from the grill or oven and let set 5 minutes before slicing.

½ cup chopped Maui or other sweet onion
1 clove garlic
¼ cup papaya seeds
⅔ cup white sugar
1 teaspoon dry mustard
¼ cup lemon juice
⅓ cup apple cider vinegar
1 tablespoon mayonnaise
1 cup vegetable oil

Steps:

Combine the onion, garlic and papaya seeds in the container of a blender or food processor. Blend until smooth. Add the sugar, mustard, lemon juice, vinegar and mayonnaise; puree until blended in. Set to low speed and pour in the vegetable oil in a thin stream. Chill and serve with fresh salad greens.
