½ cup ketchup
⅓ cup brown sugar
¼ cup lemon juice, divided
1 teaspoon mustard powder
2 pounds ground beef
3 slices bread, broken up into small pieces
¼ cup chopped onion
1 egg, beaten
1 teaspoon beef bouillon granules

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, combine the ketchup, brown sugar, 1 tablespoon lemon juice and mustard powder.
  • In a separate large bowl, combine the ground beef, bread, onion, egg, bouillon, remaining lemon juice and 1/3 of the ketchup mixture from the small bowl. Mix this well and place in a 5x9 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, drain any excess fat, coat with remaining ketchup mixture and bake for 10 more minutes.

1/2 cup bread crumbs/cracker crumbs
1 egg
1 tablespoons ketchup
1 teaspoon ground mustard
1 tablespoon Worcestershire Sauce
Salt and Pepper (to taste)
1/2 cup ketchup
2 teaspoons Worcestershire sauce
1 teaspoon brown sugar
1/2 teaspoon vinegar

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix together all of the ingredients for the barbecue glaze and set aside.
  • Mix the ingredients for the meatloaf together until well mixed.
  • Place the mixture into a small loaf pan (about a 7 by 4-inch pan) press the meat to form the loaf.
  • Remove the meatloaf from the loaf pan and set on a baking sheet that has been lined with foil.
  • Top the meatloaf with the barbecue glaze and place in the preheated oven.
  • Bake until the center of the meatloaf is no longer pink, about 1 hour and 10 minutes.
  • Slice and serve

500g (1.1 pounds) sausage mince - we squeezed the meat from sausages
1 cup dried bread crumbs
2 medium onions , finely chopped
2 teaspoons curry powder

1/2 teaspoon fine white pepper
1 tablespoon finely chopped parsley (optional)
1 large egg, lightly beaten
1/2 cup full cream milk
1/2 cup cold water

1/2 cup tomato sauce (ketchup)
1/4 cup worstershire sauce
30g (1 ounce) butter
1/4 cup soft brown sugar
1 teaspoon instant coffee powder or a shot of coffee
2 tablespoons fresh lemon juice

  • lightly butter a 21cm x 14cm x 7cm (8 1/2 inch x 5 1/2 inch x 2 1/2 inch) loaf pan
  • preheat oven to 180c (355f
  • combine all meatloaf ingredients in a bowl
  • wet your hands and thoroughly mix everything together
  • spoon and press meat into pan
  • bake on middle shelf for 30 minutes
  • meanwhile make the bbq glaze
  • remove pan from oven and drain fat and discard
  • pour bbq glaze over meatloaf and return to oven for 45 minutes
  • baste every 10 minutes
  • remove from oven
  • serve and enjoy!

  • bring to a boil and reduce to a simmer for 10 minutes

⅔ cup ketchup
⅓ cup dark brown sugar, packed
1½ tablespoons apple cider vinegar
½ teaspoon Dijon mustard
1 tablespoon olive oil
1 medium yellow onion, minced
3 cloves garlic, minced

¾ teaspoon freshly ground black pepper
2 teaspoons paprika
1 teaspoon dried thyme
1½ tablespoons Worcestershire sauce
1½ tablespoons Dijon mustard

2 pounds ground turkey (93/7)
¾ cup Italian seasoned breadcrumbs
A few springs chopped fresh parsley, for garnish (optional)

Steps:

  • Set oven rack to middle position and preheat oven to 350°F. Line rimmed baking sheet with heavy-duty aluminum foil; grease the foil with olive oil or non-stick cooking spray.
  • Make the BBQ glaze: In a medium bowl, whisk together the ketchup, brown sugar, cider vinegar, and Dijon mustard. Set aside.
  • Make the Meatloaf: Heat the olive oil in a small sauté pan over medium heat. Cook the onions, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook 1 to 2 minutes more. Do not brown. Set aside to cool.
  • In a large bowl, combine the salt, pepper, paprika, thyme, Worcestershire sauce, Dijon mustard, eggs, and ¼ cup of the BBQ glaze. Whisk until well combined. Stir in the onion mixture. Add the ground turkey and breadcrumbs and mix with your hands until evenly combined.
  • Transfer the meat mixture into two even piles onto the prepared baking sheet. Shape into two long loaves about 1½ in high x 6 in long x 4 in wide. Spread the remaining BBQ glaze over the loaves, letting it drip down the sides a bit. Bake for about 45 minutes, until the meatloaves are cooked through. Scrape any fat away from the sides of the loaves, then transfer the loaves to a platter. Slice and garnish with parsley if desired.
  • Freezer-Friendly Instructions: The cooked meatloaf can be frozen for up to 3 months. When ready to serve, defrost it in the refrigerator for 24 hours and then reheat it in a 300°F oven until hot in the middle.

3 garlic cloves (minced)
3 Tbsp ketchup
3 Tbsp fresh parsley (finely chopped)
3/4 cup Panko breadcrumbs
1/3 cup milk
1 ½ tsp salt (or to taste)
1 ½ tsp Italian seasoning
¼ tsp ground black pepper
½ tsp ground paprika
3/4 cup ketchup
1 ½ tsp white vinegar
2 ½ Tbsp brown sugar
1 tsp garlic powder
½ tsp onion powder
¼ tsp ground black pepper
¼ tsp salt

Steps:

  • Line a 9"x5" loaf pan with parchment paper and preheat oven to 375°F.
  • In a large bowl, add all of the ingredients for the meatloaf. Mix well to combine.
  • Add meat to the loaf pan, gently press meat down and shape evenly and bake meatloaf at 375˚F for 40 minutes.
  • In a small bowl, mix all of the ingredients together for the sauce. Spread the sauce over meatloaf then return to oven and bake additional 15-20 minutes or until the internal temperature is 160˚F. Rest meatloaf 10 minutes before slicing. Drizzle with baking juices from the pan.

1 pound lean ground beef
1 pound lean ground pork
3/4 cup fine soft bread crumbs
2/3 cup ketchup
2 tablespoons Creole mustard
1 tablespoon Worcestershire sauce
1 1/2 teaspoons grill seasoning (such as a smoky or burger seasoning blend )
1 small onion, finely chopped
For the Topping:
1/2 cup ketchup
1 teaspoon Worcestershire sauce
1 tablespoon Creole mustard

Steps:

  • Gather the ingredients. Lightly grease a 9 x 5 x 3-inch loaf pan with cooking spray. Preheat the oven to 350 F.

5 slices bacon
1 stalk celery, diced
1 cup fine bread crumbs
1 cup milk
3 eggs
1 teaspoon Worcestershire sauce
1 teaspoon ground black pepper
½ teaspoon onion powder
1 pound ground beef
1 pound ground pork
⅓ cup ketchup
3 tablespoons brown sugar
1 tablespoon dry mustard
½ teaspoon Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Heat remaining bacon grease over medium-high heat. Saute celery in hot grease until soft but not browned, about 5 minutes. Set aside.
  • Combine bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and sauteed celery in a large bowl. Mix well.
  • Crumble beef and pork into egg mixture and mix together using your hands, making sure not to overmix. Form into a loaf and place into the prepared loaf pan. Place the bacon slices along the top of the loaf long-ways.
  • Bake in the preheated oven on the middle rack for 30 minutes.
  • While the meat is cooking, combine ketchup, brown sugar, dry mustard, and Worcestershire for glaze in a small bowl; mix well.
  • Remove loaf from the oven and drain any fat bubbling around edges and on top. Return to the oven and continue to bake for 25 minutes more. Remove once more, drain fat again, and spoon or brush glaze mixture evenly over the top. Increase oven temperature to 400 degrees F (200 degrees C).
  • Return loaf to the preheated oven and continue to bake until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let sit for at least 10 minutes before cutting and serving.

1 cup crushed saltines (25-30 crackers)
1/3 cup milk
1/4 to 1/2 cup minced fresh parsley
2 large eggs (lightly beaten)
2 teaspoons onion powder (see note to use fresh onions)
3 garlic cloves (finely minced or 1 teaspoon garlic powder)
1 tablespoon Dijon mustard
3 tablespoons Worcestershire sauce
1 1/2 teaspoons salt (I use coarse, kosher salt - use slightly less for table salt)
1/2 teaspoon black pepper (I use coarse black pepper - use slightly less for finely ground)
2 pounds ground meat (I use half ground beef/half ground pork - see note)
2/3 cup ketchup or BBQ sauce (or a combination)
2 tablespoons brown sugar
2 tablespoons apple cider or red wine vinegar

Steps:

  • For the meatloaf, in a large mixing bowl, add the crushed saltines and milk and let the mixture sit for 5-10 minutes. Add the parsley, eggs, onion powder, garlic, Dijon mustard, Worcestershire sauce, salt and pepper. Mix well.
  • Add the ground meat and mix until evenly and well combined. (You can use a food processor for all of the above if you want a an even more well combined spice and meat mixture.)
  • For the glaze, combine the ketchup (or BBQ sauce), brown sugar, and vinegar and whisk to combine.
  • Preheat the oven to 375 degrees F. Line a baking sheet with foil and lightly grease with cooking spray.
  • Pile the meat mixture in the middle of the prepared pan and shape into a loaf about 9 inches long and 4 inches wide (it doesn't have to be perfect; just try to get it an even thickness throughout).
  • Spoon the glaze over the meatloaf. Bake for 45-50 minutes until an instant-read thermometer registers 160 degrees F in the center of the meatloaf.
  • Loosely tent with foil and let the meatloaf rest for 10-15 minutes before slicing and serving.

2 teaspoons Kosher salt
1 1/2 teaspoons chili powder
1 teaspoon black pepper

3/4 teaspoon garlic powder

1 large egg, beaten
1 tablespoon Worcestershire sauce
1 1/2 teaspoon unsalted liquid smoke
2 pounds 80/20 ground beef
1 small yellow onion, finely minced
2/3 cup thick, sweet BBQ Sauce ((separated))

Steps:

  • Preheat the oven to 350° and have ready a rimmed sheet pan lined with foil, preferably nonstick foil.
  • In a large bowl, use a fork to mix together breadcrumbs, salt, chili powder, pepper, cumin, garlic powder, and onion powder. Add the milk, egg, Worcestershire, and liquid smoke and mix once more.
  • Add the ground beef and minced onion and mix with your hands until all of the ingredients are evenly incorporated. Transfer the mixture to the prepared pan and shape into a narrow loaf (the meatloaf will spread as it bakes).
  • Pour half of the BBQ sauce over the meatloaf and bake for 35 minutes. Remove from the oven, carefully pour over the remaining sauce and bake an additional 25 minutes.

I love meatloaf but don't always have time to wait the hour and change a regular loaf takes to cook. This recipe makes great individual-size meatloaves for the family in about half the time. I like to bake a batch of these, then wrap and freeze them for a perfect make-ahead entrée.

Nonstick cooking spray
2 tablespoons unsalted butter
1 large onion, finely diced
1 rib celery, finely diced
1 carrot, finely diced
1 clove garlic, minced
1 teaspoon chopped fresh thyme leaves or 1/2 teaspoon dried thyme
2 large eggs
1 1/2 pounds ground chuck
1/2 pound loose pork sausage
1/2 cup heavy cream
1/2 cup ketchup
1/2 cup breadcrumbs
1 1/2 tablespoons Worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup ketchup
1/2 cup barbecue sauce
1/4 cup yellow mustard

Steps:

  • Preheat the oven to 400 degrees F. Spray a 6-cavity mini loaf pan with nonstick spray.
  • Melt the butter in a large skillet over medium-high heat. Add the onions, celery, carrot and garlic and cook, stirring occasionally, until the vegetables are lightly browned, 4 to 5 minutes. Add the thyme and cook for an additional minute. Remove from the heat and allow to cool.
  • Beat the eggs until combined in a large bowl. Add the ground chuck, sausage, cream, ketchup, breadcrumbs, Worcestershire, salt and pepper. Pour in the cooked vegetables. Use your hands to massage the meatloaf mix together until well combined (glove up for this if you like!).
  • For the glaze: Stir the ketchup, barbecue sauce and mustard together in a small bowl until well mixed. Set aside.
  • Divide the meat mixture evenly between the loaf pans, pushing down and flattening the tops of the meatloaves. Top each loaf with about 1/4 cup of the glaze. Bake until cooked through (an instant-read thermometer inserted into the loaves should register 160 degrees F), 25 to 35 minutes.
  • Remove the meatloaves from the oven and allow to rest for 5 minutes. Remove the loaves from the pans and serve warm.
