NORTHWEST SALMON CHOWDER

I've lived on a farm in the Yakima Valley all my life. I have a big garden, and by the end of fall, my cellar shelves are full of canned fruits and vegetables. This recipe uses some of the root vegetables I grow...along with the delicious salmon that is so plentiful here. -Josephine Parton, Granger, Washington

1/2 cup each chopped celery, onion and green pepper
1 garlic clove, minced
3 tablespoons butter
1 can (14-1/2 ounces) chicken broth
1 cup uncooked diced peeled potatoes
1 cup shredded carrots
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/4 to 3/4 teaspoon dill weed
1 can (14-3/4 ounces) cream-style corn
2 cups half-and-half cream
1-3/4 to 2 cups fully cooked salmon chunks or 1 can (14-3/4 ounces) salmon, drained, flaked, bones and skin removed
Optional: crumbled cooked bacon, chives and cracked black pepper

Steps:

  • In a large saucepan, saute celery, onion, green pepper and garlic in butter until the vegetables are tender. Add broth, potatoes, carrots, salt, pepper and dill; bring to a boil. , Reduce heat; cover and simmer for 40 minutes or until the vegetables are nearly tender. Stir in the corn, cream and salmon. Simmer for 15 minutes or until heated through. If desired, garnish with bacon, chives and cracked black pepper.

1-1/2 cups chopped sweet yellow or red peppers
1 large onion, quartered and thinly sliced
2 tablespoons olive oil
3 garlic cloves, minced
1 can (28 ounces) crushed tomatoes
2-1/4 cups water
1 can (14-1/2 ounces) chicken broth
1 cup uncooked long grain rice
1/2 cup white wine or additional chicken broth
1/2 to 1 teaspoon dried thyme
1/2 to 1 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon crushed red pepper flakes
8 ounces uncooked medium shrimp, peeled and deveined
8 ounces cod fillets, cut into pieces

Steps:

  • In a Dutch oven, saute peppers and onion in oil until tender. Add garlic; cook 1 minute longer. Add the tomatoes, water, broth, rice, wine or additional broth and seasonings. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender. , Stir in the shrimp and cod; cover and simmer for 2-4 minutes or until shrimp turn pink and fish flakes easily with a fork.

¾ cup chopped onion
½ cup chopped celery
1 teaspoon garlic powder
2 cups diced potatoes
2 carrots, diced
2 cups chicken broth
1 teaspoon salt

2 (16 ounce) cans salmon
1 (12 fluid ounce) can evaporated milk
1 (15 ounce) can creamed corn

Steps:

1 pound large shrimp (32 to 36 per pound), peeled and deveined (save shells for stock)
1/2 pound scallops
1/2 pound monkfish
1/2 pound fresh lump crabmeat, picked over to remove shells
1/4 pound unsalted butter
1 cup peeled and medium-diced carrots (4 carrots)
1/2 cup medium-diced yellow onion (1 onion)
1 cup medium-diced celery (3 stalks)
1 cup medium-diced small white or red potatoes
1/2 cup corn kernels, fresh or frozen
1/4 cup all-purpose flour
1 recipe Seafood Stock, recipe follows
1 1/2 tablespoons heavy cream (optional)
2 tablespoons minced parsley
Salt and freshly ground black pepper to taste
2 tablespoons good olive oil
Shells from 1 pound large shrimp
2 cups chopped yellow onions (2 onions)
2 carrots, unpeeled and chopped
3 stalks celery, chopped
2 garlic cloves, minced
1/2 cup good white wine
1/3 cup tomato paste
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
10 sprigs fresh thyme, including stems

Steps:

  • Cut the shrimp, scallops, and monkfish into bite-sized pieces and place them in a bowl with the crabmeat.
  • In a heavy-bottomed pot, melt the butter; add the carrots, onions, celery, potatoes, and corn and saute over medium-low heat for 15 minutes, or until the potatoes are barely cooked, stirring occasionally. Add the flour; reduce the heat to low and cook, stirring often, for 3 minutes. Add the Seafood Stock and bring to a boil. Add the seafood; reduce the heat and simmer, uncovered, for 7 to 10 minutes, until the fish is just cooked. Add the heavy cream, if desired, and the parsley. Add salt and pepper to taste, and serve.
  • Warm the oil in a stockpot over medium heat. Add the shrimp shells, onions, carrots, and celery and saute for 15 minutes, or until lightly browned. Add the garlic and cook 2 more minutes. Add 1 1/2 quarts of water, the white wine, tomato paste, salt, pepper, and thyme. Bring to a boil, then reduce the heat and simmer for 1 hour. Strain through a sieve, pressing the solids. You should have approximately 1 quart of stock. You can make up the difference with water or wine if you need to.

1 Medium Onion, sliced
3 Celery Ribs with leaves, cut into small pieces
3 Large Potatoes, skinned and cut into 1/2 inch cubes
1 lb Salmon, trimmed of skin and dark areas
2 Cups Skim Milk
1 Cup Water
1 16oz jar of Mild Salsa
3 Tbsp Capers
1 Tbsp Worcestshire Sauce
1/2 Tsp Salt
1 Tsp Coarse Black Pepper
3 Tbsp Dill
Sprigs of Cilantro (Optional)
Fat-Free Sour Cream (Optional)

Steps:

  • In a 3-Quart Dutch Oven, coat the bottom with Extra Virgin Olive Oil. Heat to Low-Medium. Saute Onion and Celery until tender (5 minutes). Add potatoes, Turkey Sausage and salsa. Stir to coat evenly. Add water and bring to boil, reduce heat and simmer, covered for 10 minutes. Add milk and simmer until potatoes are tender (about 5 minutes - test with a fork). Stir in salmon, capers, Worcestshire, salt, pepper and dill. Simmer until salmon is cooked thoroughly (about 4 minutes). Spoon into bowls and top each bowl with a dollop of sour cream and a sprig of Cilantro.

1 leek, white and pale-green parts only, halved lengthwise, thinly sliced, and rinsed well
1 red onion, quartered and thinly sliced
Coarse salt and freshly ground white pepper
3 small Yukon Gold potatoes, peeled and cut into 3/4-inch cubes
2 carrots, halved lengthwise and thinly sliced
6 cups store-bought low-sodium fish stock or Lucinda Scala Quinn's Homemade Fish Stock
12 ounces skinless salmon, cut into 3/4-inch cubes
1/2 cup heavy cream
1 tablespoon chopped fresh dill

Steps:

  • Heat butter in a medium stockpot over medium-low heat. Cook leek and red onion until soft, 6 to 8 minutes. Season with 1 teaspoon salt. Stir in potatoes and carrots. Add stock and bring to a boil. Reduce heat to low and simmer until potatoes are almost tender, 6 to 8 minutes.
  • Add salmon and simmer until opaque, about 3 minutes. Stir in cream to heat through. Stir in dill, 1/2 teaspoon salt, and 1/4 teaspoon white pepper. Chowder can be refrigerated for up to 2 days. Reheat before serving.

1 jar (24 oz.) CLASSICO Vodka Sauce Pasta Sauce

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat oil in large saucepan on medium heat. Add vegetables; cook 5 min. or until crisp-tender, stirring frequently. Add shrimp and scallops; cook 2 to 3 min. or just until shrimp turn pink and scallops are opaque, stirring occasionally. Add remaining ingredients; stir. 4 cups chopped fresh spinach
½ cup sun-dried tomatoes packed in oil, drained and chopped
½ cup artichoke hearts, drained and chopped
¼ cup crumbled feta cheese
1 pinch garlic powder, or to taste

Steps:

  • Make a horizontal slice in the center of each salmon fillet but do not cut all the way through.

2 tomatoes, seeded coarsely chopped
3 tablespoons olive oil, divided
1 tablespoon red wine vinegar
1/2 cup nicoise olive, pitted and coarsely chopped
1/4 cup red onion, chopped
2 tablespoons capers, drained
3/4 teaspoon salt, divided
1/2 teaspoon pepper, divided
4 (6 ounce) salmon fillets
1/3 cup fresh basil, loosely packed thinly sliced

Steps:

  • Combine tomatoes, 2 tablespoons olive oil, red wine vinegar, olives, onion, capers, 1/2 teaspoon salt, 1/2 teaspoon pepper.
  • Set aside.
  • Brush both sides of the salmon with the remaining olive oil.

¼ cup balsamic vinegar
4 cloves garlic, pressed
4 (3 ounce) fillets salmon
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh basil

Steps:

  • Mix together the olive oil and balsamic vinegar in a small bowl. Arrange the salmon fillets in a shallow baking dish. Rub garlic onto the fillets, then pour the vinegar and oil over them, turning once to coat. Season with cilantro, basil, and garlic salt. Set aside to marinate for 10 minutes.

1 medium sweet potato, peeled and cut into 1/2-inch cubes
1 cup reduced-sodium chicken broth
1/2 cup fresh or frozen corn

1-1/2 cups fresh spinach, torn
1/2 cup flaked smoked salmon fillet
1 teaspoon pickled jalapeno slices, chopped
1 tablespoon cornstarch
1/2 cup 2% milk
1 tablespoon minced fresh cilantro

Steps:

  • In a large saucepan, combine the first 5 ingredients; bring to a boil. My mom makes the most delicious salmon chowder. It always reminds me how tasty leeks are. The combination of tomatoes and cream creates a pretty pink base.

2 tablespoons extra-virgin olive oil
1 cup diced russet potatoes (although any type on hand will do)
1 cup sliced leeks
1 cup sliced button or cremini mushrooms
2 cloves garlic, minced
1 cup dry white wine
1 (14.5-ounce) can crushed tomatoes
3 cups fish or vegetable stock
1 cup half-and-half, plus 1 tablespoon for garnish
1 cup fat-free plain Greek yogurt
1/4 cup fresh parsley, chopped
1 tablespoon fresh dill, chopped
Salt and freshly cracked pepper to taste
1 pound wild salmon, cut into about 2-inch pieces

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the potatoes, leeks, and mushrooms. Sauté the vegetables until softened, about 5 minutes. Add the garlic and continue to stir for 1 minute. Add the white wine and simmer until most of the liquid has cooked off. Stir in the tomatoes, fish or vegetable stock, half and half, yogurt, parsley, and dill and bring to a low simmer. Season to taste with salt and pepper. Add the salmon and simmer until just cooked through, about 5 minutes.
  • Ladle into bowls and garnish with drops of half and half and parsley or dill, if desired.

2 pounds red potatoes, peeled and cubed
1 large onion, chopped
1 can (49-1/2 ounces) chicken broth
1 pound salmon fillets, cut into 1-inch pieces
1/2 pound sliced bacon, cooked and crumbled
2 cups whole milk
1 cup half-and-half cream
1 tablespoon butter
1/2 teaspoon salt
Pepper to taste

Steps:

  • In a Dutch oven, combine the potatoes, onion and broth. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until potatoes are tender. Add salmon and bacon; cook over medium heat until fish flakes easily with a fork. , Reduce heat; stir in the milk, cream, butter, salt and pepper; heat through (do not boil). Thicken if desired.
