Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix thoroughly the ground beef and taco seasoning; set aside. In a medium saucepan, heat the refried beans over medium low heat until they are completely heated through.
- Place the ground beef mixture on a large piece of foil. Press the mixture into an approximately 1 inch thick square shape. Spread the refried beans evenly over the top of the flattened beef. Layer the flour tortillas on top of the refried beans, trimming the edges to fit the square. Layer tortillas with salsa and Cheddar cheese, staying 1/2 to 1 inch away from edges of the square.
- Gently roll the layered beef into a Swiss roll shape, pressing and compacting the loaf as you go. Pinch and seal the edges. Wrap in the foil and seal.
- Bake in preheated oven 40 to 45 minutes, or until no longer pink in the center. Cut loaf in half to test for doneness, if necessary.

MEDITERRANEAN MEATLOAF
This is a nice substitute for regular meatloaf. We're not big fans of traditional meatloaf but we really like this dish. I've served it with a Greek salad, marinated olives and bread. From an AP food story in the newspaper which said the recipe was developed by the Quaker Oat Company.

Steps:
- Preheat the oven to 350 degrees F. Spray an 8 1/2-by-4 1/2-inch loaf pan with cooking spray. Line the pan lengthwise with a long strip of parchment, rubbing it to adhere it to the pan and making sure it is long enough to hang over the ends of the pan.
- Put the beef, lamb and pork into a large mixing bowl and add the olives, onions, crushed saltines, yogurt, mint, oregano, cumin, garlic and egg. Add the hot sauce, salt and some ground pepper and very gently mix with your hands until the ingredients are evenly incorporated. Add the feta and mix lightly, incorporating the feta in whole crumbles if possible. Try not to overmix; it can make the meatloaf tough.
- Transfer the meat mixture to the pan and press it gently to eliminate any air pockets. Set the loaf pan on a baking sheet and bake until an instant-read thermometer inserted into the center registers 155 degrees F, 40 to 45 minutes.
- Let the meatloaf cool in the pan for about 20 minutes before using the parchment paper to lift it out of the pan and transfer it to a serving platter. Slice while warm and serve with the Mint Tzatziki on the side.
- Grate the cucumber on the large holes of a box grater into a large fine-mesh strainer set over a bowl. Sprinkle the cucumber generously with salt, tossing a few times with your hands to evenly distribute it; let stand for 10 minutes to drain.
- Using your hands, squeeze the cucumber to drain any excess moisture. Transfer to a mixing bowl and add the yogurt, mint and garlic. Stir well to combine, taste and adjust the seasoning with salt if necessary.
- Store the tzatziki in an airtight container for up to 3 days.

Steps:
- 1. Place the turkey in a large bowl, and break it up a bit with your hands or a fork. Add the remaining ingredients in the order given, combining as you go along. Mix well. 2. Coat a 5-x-9-inch loaf pan with olive oil cooking spray, and place the turkey mixture in the pan. Bake in a preheated 350°F oven for 50 to 60 minutes, or until the loaf is firm and has begun to shrink from the sides of the pan. 3. Place the loaf pan on a wire rack and allow to rest for 10 minutes so that the loaf can absorb the juices. Slide a knife around the edges of the loaf, put a plate on top, and invert the pan so that the loaf slides onto the plate. Cut into thick slices and serve immediately. Variation: For a striking variation of Mediterranean Meatloaf, omit the olives from the meatloaf mixture and divide the mixture in half. Place half of the loaf mixture in the bottom of the loaf pan, and arrange a row of stuffed olives down the center lengthwise, pushing the olives down to keep them in place. Place the remaining loaf mixture on top and press it down. Then bake the loaf according to the above directions. When you slice the meatloaf, you'll find a luscious olive in the center of each slice.
