CRAZY CRUST PIZZA DOUGH
A quick and easy way to make your own pizza crust. Simply add the meat and vegetable toppings of your choice.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a rimmed pizza pan or baking sheet.
- In a large bowl, stir together flour, salt, oregano and black pepper. Mix in eggs and milk; stir well. Pour batter into prepared pan and tilt until evenly coated. Arrange toppings of choice on top of batter.
- Bake in preheated oven for 20 to 25 minutes, until crust is set.
- Remove crust from oven. Drizzle on pizza sauce and sprinkle on cheese. Bake until cheese is melted, about 10 minutes.

Steps:
- In a small bowl, mix warm water and 1 teaspoon sugar; add yeast and whisk until dissolved. Let stand until bubbles form on surface. In a large bowl, whisk 3 cups flour, salt, remaining 1 teaspoon sugar and, if desired, dried herbs. Make a well in center; add yeast mixture and oil. Stir until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead, adding more flour to surface as needed until no longer sticky and dough is smooth and elastic, 6-8 minutes. Place in a large greased bowl; turn once to grease top. Cover and let rise in a warm place for 30 minutes; transfer bowl to refrigerator and chill overnight. Allow dough to come to room temperature, about 30 minutes, before rolling.

MEDIUM CRUST PIZZA DOUGH
Steps:
- 1) Mix water, 1 Tsp yeast, and 1 Tsp sugar in mixing bowl. Let sit for 5 minutes. 2) Mix in oil, flour, and salt on low, adding flour until dough is only slightly sticky, pulling cleanly from the sides of the bowl. 3) Mix for 8 minutes. 4) Break dough into 4 equal portions. 5) Knead each portion by hand for one minute, wrapping dough around so it's seamless except for the center point on the bottom where you've tucked any edges in. 6) Let each portion rise in oiled bowls for 90 minutes or until doubled. 7) Preheat grill with pizza stone on one side to 450 degrees. 8) Stretch dough on well-floured pizza peel or rimless backing sheet, adding flour if sticky. 9) Top with sauce & toppings & lightly oil exposed crust edges. 10) Bake on pizza stone for 14 minutes.
BASIC PIZZA CRUST
My aunt shared this basic pizza dough recipe quite a few years ago. I like to double the recipe and keep one baked crust in the freezer for a quick snack or meal later.

- In a large bowl, dissolve yeast in warm water. Add the oil, sugar, salt and 1-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a firm dough. - Pour 1 1/2 cups warm water into a large bowl; sprinkle with yeast and let stand until foamy, about 5 minutes.
- Whisk sugar, oil, and salt into yeast mixture. Add flour and stir until a sticky dough forms. Transfer dough to an oiled bowl and brush top with oil. Cover bowl with plastic wrap and set aside in a warm, draft-free place until dough has doubled in bulk, about 1 hour. Turn out onto a lightly floured surface and gently knead 1 or 2 times before using.

- Dissolve yeast and sugar in hot water in a bowl. Let stand until yeast forms a creamy foam, 5 to 8 minutes.
- Mix 1 3/4 cup flour and salt in a large bowl. Pour in yeast mixture; mix well until dough comes together.
- Transfer dough to a floured surface and knead until smooth, adding remaining 1/4 cup flour if dough is too sticky, about 2 minutes. Roll dough into a 12-inch circle. Transfer to a greased pizza pan.

- In a large bowl, combine 3/4 cup flour, salt, sugar, and yeast and blend well.
- In a small saucepan, heat water and oil until very warm (120 to 130) and add to flour mixture.
- Blend at low speed until moistened and beat 2 minutes at medium speed.
- Stir in 1/2 to 3/4 cup of flour to form a stiff dough.
- On a floured surface, knead in 1/4 cup to 1/2 cup flour until dough is smooth and elastic (about 3 to 5 minutes).
- Place dough in greased bowl and cover loosely with plastic wrap and a towel.
- Let rise in warm place (80 to 85 degrees) until light and doubled in size (30 to 40 minutes).
- Punch down several times to remove all air bubbles.
- Prepare as directed in Pizza Deluxe or for your favorite pizza recipe.

HOMEMADE CHICAGO THIN CRUST PIZZA DOUGH
Craig's world famous Chicago pizza dough. makes 8-10 medium thin crust pizzas can add a handful of basil, chiffonade with 1 C Parmesan cheese instead of garlic for added fragrance and flavor. Garlic in the dough does not add a lot of flavor but adds incredible aroma as it's rising and cooking.

Steps:
- Mix yeast with warm water and salt and stir.
- Combine wet ingredients (water with yeast, oil, beer/water) with garlic or basil and Parmesan cheese if using.
- Add flour 1/2 cup at a time, stirring well until dough pulls together.
- Knead until dough is silky smooth, adding flour until it does not stick to your hands. You want the dough to be moist and pliable but not too sticky.
- Let dough rise until nearly doubled in size and punch down. Ideally do this several times to increase the pliability of the dough and flavor of the crust.
- When you are ready to make pizzas, preheat the oven to 500 (550 ideally if possible) with baking stone on bottom rack (any floor tile will do well).
- Punch down the dough and pull off a piece of dough about the size of your fist. Sprinkle the area you will roll out the dough with cornmeal and a small amount of flour and roll out the dough until it is about 1/8 inch thick. If you have the skills for it--toss the dough in the air.
- Prick holes in the pizza with a fork all over.
- Add toppings and slide into oven, making sure pizza peel (back of a cookie sheet will work) is very well covered in cornmeal so the pizza will easily slide off onto the baking stone.
- Bake for 5-7 minutes until cheese is bubbling and edges are crispy.
