RED ROASTED POTATOES
Roasting red potatoes is one of my favorite way to prepare them. Some fragrant rosemary, fresh or dried, gives these potatoes a distinctive but subtle taste. This dish is simple to prepare, yet elegant in color and flavor. It's a wonderful addition to any menu. -Margie Wampler, Butler, Pennsylvania

Steps:
- Place potatoes in a 13x9-in. baking dish. Drizzle with oil. Sprinkle with the garlic, rosemary, salt and pepper; toss gently to coat. , Bake at 450° until potatoes are golden brown and tender, 20-30 minutes.

MEGA EASY, MONSTER DELICIOUS ROASTED RED POTATOES
I tried a basic roasted potato recipe many years ago, and needed to crank up the flavor. My kids come running when they smell these little starch bombs cooking. You can adjust any of the spices, based on what your taste buds like.

Steps:
- Pre heat oven to 425 F.
- Wash Potatoes. Have a large bowl with cold water near your cutting board. Leaving skins on, cut potato in half, then cut each half into 8 wedges. Easiest way is to cut the half in a cross pattern, then cut another cross pattern. Place cut potatoes into cold water bath.
- Drain potatoes into colander. Shake off all excess water. Wipe out large bowl until dry. Put drained potatoes back into bowl.
- Add all other ingredients. Using a large spoon, mix until all potatoes are completely, and evenly coated.
- Place potatoes on a cookie sheet, in a single layer. This is ALOT of potatoes, so you may need 2 sheets. I needed to use 2 ovens.
- Cook for 25 minutes. Flip potatoes. Cook for 15 minutes. Remove from oven and re-season with salt to taste. Serve.
- Eat it! Ketchup has never been so happy!

SUPER EASY ROASTED RED POTATOES
These are a family pleasing easy work night side dish anyone can make! I approximate my measurements as I tend to be heavy handed and don't measure but did my best to estimate everything. ;) We also like potatoes a lot and leftovers. ;) ***It came to my attention that I failed to mention a step - basting is always a good idea as you have time. ;)

Steps:
- Preheat oven to 400 degrees.
- Place cleaned potatoes and all liquids and spices in covered baking dish.
- Bake for 40 minutes, basting periodically as you have time, or until potatoes are tender when poked with a fork (varies depending on size of potatoes).
- Cool 5 minutes and serve - great with any grilled or bakes meat dish - especially pork, beef and salmon!

- Adjust oven rack to lowest position and heat oven to 450 degrees. Toss potatoes with oil, salt and pepper. Arrange, cut side down, on a large lipped cookie sheet or jellyroll pan.

- Preheat oven to 400 degrees F (200 degrees C).
- Pour olive oil into a heavy baking dish (such as an enameled cast iron dish). Place potatoes into the baking dish and toss to coat with olive oil. Sprinkle with fresh thyme sprigs, kosher salt, black pepper, cayenne pepper, and red bell pepper pieces.
- Bake in the preheated oven for 30 minutes. Toss vegetables to turn over. Some potatoes may stick; don't try to turn them. Return to oven and bake for 20 more minutes.
- Toss potatoes again, turning potatoes so unbrowned sides contact the bottom of the dish. Continue baking until potatoes are browned and tender, about 15 more minutes.
- Turn oven off and leave potatoes in the oven for 15 more minutes. Toss once more and adjust levels of salt, black pepper, and cayenne pepper before transferring potatoes to a serving bowl.
