MEMPHIS FRIED TURKEY

Memphis Fried Turkey image

Provided by Patrick and Gina Neely : Food Network

Time 2h25m

Yield 10 servings

Number Of Ingredients 8

1 14-pound turkey, giblets removed, washed and dried
1 tablespoon smoked paprika
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 teaspoon cayenne pepper
1 teaspoon dried thyme
Kosher salt and freshly ground black pepper
Peanut oil, for frying (about 3 gallons)

Steps:

  • Figure out how much oil you need to fill your fryer: Put the turkey in the empty fryer and cover with cold water. Remove the turkey; mark the line where the water is in the pot. Empty the water and dry the fryer and turkey well.
  • Mix the smoked paprika, garlic powder, onion powder, cayenne pepper, thyme, 1 tablespoon salt and 1 1/2 teaspoons black pepper in a bowl. Sprinkle some of the spice rub inside the cavity of the turkey. Separate the skin from the breast meat with your fingers, starting at the top of the breast and sliding to the right and left, then working down. Massage some of the rub onto the meat under the skin. Sprinkle the remaining rub on the turkey's skin. Place the turkey on a sheet tray and cover with plastic wrap. Refrigerate overnight or up to 24 hours so the flavors can marry.
  • Fill your fryer with peanut oil to the line you marked (do not fill more than three-quarters of the way). Preheat the oil to 400 degrees F; it will take about 1 hour.
  • Meanwhile, remove the turkey from the refrigerator and let it come to room temperature as your oil heats. Once the oil reaches 400 degrees F, very carefully lower the turkey into the hot oil. (Most turkey fryers come with a basket for the turkey that has hooks and a handle to lower and lift; otherwise, get yourself a long set of sturdy tongs to grip the inside cavity and breast and an industrial kitchen fork to hold the back side of the bird.) Make sure the oil maintains its temperature while frying. Fry the turkey until the skin is dark golden brown and crisp, or until the internal temperature of the breast reaches 155 degrees F on an instant-read thermometer, about 45 minutes. Carefully remove the turkey from the oil and let it rest and drain on a wire rack, about 30 minutes. Do not cover the turkey with foil or it will lose some of its crispness. The internal temperature will rise to 165 degrees F while resting. Transfer the turkey to a board or platter.

MEMPHIS-STYLE HICKORY-SMOKED BEEF AND PORK RIBS

Memphis-Style Hickory-Smoked Beef and Pork Ribs image

Provided by Food Network

Categories     main-dish

Time 14h25m

Yield 4 to 6 servings

Number Of Ingredients 16

1 1/2 cups paprika
3/4 cup sugar
3 3/4 tablespoons onion powder
2 (about 4 pounds each) slabs beef spareribs
2 (about 3 pounds each) slabs pork spareribs
Neely's BBQ Sauce, recipe follows
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard

Steps:

  • For the rub:
  • Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
  • For the ribs:
  • Rinse and dry ribs. Place on a clean cutting board and pull off the membrane, the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat. Liberally season both sides of the ribs with 1/4 to 1/2 cup Neely's BBQ Rub. Wrap ribs and refrigerate for at least 8 hours so flavors can permeate.
  • Preheat grill to 250 degrees F using hickory and charcoal.
  • Use indirect heat and cook with the cover down.
  • Place ribs, meatier side down, on the grill away from the coals. Cook beef 2 hours, adding more coals as needed. Turn and cook for 45 minutes more, or until the ribs "bend" and the meat easily separates from the bone using a fork. Cook the pork ribs 3 hours. Turn and cook another hour, or until ribs bend. Remove from grill.
  • For dry ribs: Sprinkle extra Neely's BBQ seasoning over ribs, cut bones and serve.
  • For wet ribs: Coat ribs with Neely's BBQ Sauce, cut and serve.
  • In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cooked uncovered, stirring frequently, for 1 hour 15 minutes.

SMOKED TURKEY

Smoked Turkey image

This is an easy to make recipe. I've tried numerous others using colas, fancy pans, etc., but none come out near as good as this. Keeping it simple is the best way. Be sure to use a high-quality charcoal, so that it will burn for a long time. Turkey will be moist tender and smoky!

Provided by Glenn

Categories     Meat and Poultry Recipes     Turkey     Whole Turkey Recipes

Time 7h30m

Yield 18

Number Of Ingredients 3

1 (12 pound) whole turkey, neck and giblets removed
1 (20 pound) bag high quality charcoal briquettes
hickory chips or chunks

Steps:

  • Place the charcoal into the bottom pan of the smoker. Light the coals and wait for the temperature of the smoker to come to 240 degrees F (115 degrees C). Lightly oil grate.
  • Rinse turkey under cold water, and pat dry. Place hickory chips into a pan with water to cover.
  • Place turkey onto the prepared grate. Add 2 handfuls damp chips at start of cooking, then a handful every couple of hours during the cooking process. Leave the lid on - DO NOT keep looking at the turkey, or you will let the heat out! Continue smoking until the internal temperature of the turkey reaches 165 degrees F (74 degrees C), or keep going until the coals die out.

EASY SMOKED TURKEY

Easy Smoked Turkey image

Smoked turkey is a delightful way to cook a turkey while relaxing. I know lots of people are a bit apprehensive about preparing their first smoked turkey. I have smoked over 100 and never has a bad one. The skin is beautifully tanned and the meat is so juicy.

Provided by TOM TROTTIER

Categories     Meat and Poultry Recipes     Turkey     Whole Turkey Recipes

Time 4h20m

Yield 12

Number Of Ingredients 7

1 (12 pound) thawed whole turkey, neck and giblets removed
1 tablespoon chopped fresh savory
1 tablespoon chopped fresh sage
1 tablespoon salt
1 tablespoon ground black pepper
⅛ cup olive oil
½ cup water

Steps:

  • Rinse the turkey and pat dry with paper towels. Combine savory, sage, salt, and black pepper in a bowl; rub half the herb mix inside the turkey's cavity and inside the neck cavity. Loosen turkey skin over breast and legs; rub remaining half of the herb mixture underneath the loosened skin. Rub olive oil over the entire turkey.
  • Light 20 charcoal briquettes and place half of them on each side on the lower grate of a kettle charcoal grill. Place a drip pan or disposable aluminum baking pan in the middle of the lower grate and pour in water. When the coals are gray with ash, place a 2-inch square piece of hickory or other hardwood onto each bank of coals.
  • Place turkey on the cooking grate and cover the grill. Monitor the heat with a grill thermometer to maintain temperature between 150 and 250 degrees F (65 to 120 degrees C); add 3 to 5 coals to each side about every 1 1/2 hours. If pieces of hardwood burn away, add more to keep a steady stream of smoke rising from the wood. If open flames erupt when you open the lid, douse them with a drizzle of water or beer.
  • Smoke the turkey for 20 minutes per pound, about 4 hours; let the heat increase to 250 degrees F (120 degrees C) during the last hour of smoking. An instant-read meat thermometer inserted into the thickest part of a thigh, not touching a bone, should reach 165 degrees F (75 degrees C).

MESQUITE SMOKED TURKEY WITH A PEACH GLAZE RECIPE - (4.6/5)

Mesquite Smoked Turkey with a Peach Glaze Recipe - (4.6/5) image

Provided by raffterman

Number Of Ingredients 23

SOUTH-WESTERN RUB:
3 tablespoons brown sugar
1 tablespoon granulated garlic powder
1 tablespoon kosher salt
2 tablespoons paprika
2 teaspoons dry mustard
2 teaspoons chilli powder
1 teaspoon ground cumin
1 teaspoon granulated onion
2 teaspoons chilli flakes
1 teaspoon cracked pepper
GLAZE:
3/4 cup good quality peach preserve
1 jalapeño, chopped fine
3 tablespoons rice wine vinegar
1 tablespoon fresh ginger, minced
1 tablespoon Dijon mustard
Juice of 2 oranges
TURKEY:
1 (12 to 16-pound) whole turkey
12 cups mesquite wood chips (8 of these cups soaked in cool water for 1 hour and drained)
2 lemons halved, optional
2 oranges halved, optional

Steps:

  • In a medium bowl combine all rub ingredients. Remove giblets from turkey, rinse turkey in cold water and pat dry. Place turkey on a large tray. Massage rub mixture into turkey until generously coated inside and out. Cover the turkey and place in the refrigerator to marinate overnight. The next day, place 8 cups of wood chips in water to soak for 1 hour. Prepare the glaze by placing all of the ingredients into a small saucepan set over low heat. Remove turkey from refrigerator (Optional: stuff the cavity with sliced oranges and lemons). Tie the legs with butcher twine to hold the bird together as compact as possible. Set it aside and allow to come to room temperature. Prepare smoke pouches by mixing 2 cups of the wet drained wood chips with one cup of the dry on a large piece of foil. Wrap loosely into a package. Using a fork, pierce the package all over to allow smoke to escape. Repeat these steps to make 3 more smoke pouches (4 pouches in total). Prepare barbeque for indirect cooking and smoking by removing the grate over one burner and turn only it onto high heat. Place a drip pan over the cool elements, but under the grates. Place a smoke pouch on direct heat. Wait for smoke to form and adjust barbeque temperature to reach 220°F (105°C). Place the turkey over the drip pan and no heat. Close the barbeque lid and smoke for 20 to 30 minutes per pound, changing the smoke pouch when smoke dissipates. In the last hour of cooking, baste the turkey with sauce at least 2 times. Remove turkey from the barbeque when a digital thermometer inserted in the thickest part of the bird reads 165°F (74°C). Cover turkey loosely with foil and let rest for 20 minutes. Carve and serve with extra peach glaze.

WHOLE SMOKED TURKEY (TEXAS STYLE) (SOUTHWEST)

Whole Smoked Turkey (Texas Style) (Southwest) image

I always cook up two birds for Thanksgiving. One cooked in the oven (see my aluminum football recipe) and one either smoked or fried. This is my smoked recipe. It's not easy, but smoking turkeys is not for the faint of heart. Prep time does not include time spent in the brine. Unless you want turkey jerky, please don't attempt this recipe without brining the bird first--it will be very, very dry.

Provided by Pokey in San Antonio

Categories     Whole Turkey

Time 9h

Yield 10-15 serving(s)

Number Of Ingredients 22

1 gallon water
1/4 cup vinegar
1 tablespoon pickling spices
1 teaspoon allspice
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon celery salt
1 1/2 cups kosher salt
1/4 cup brown sugar
1 tablespoon maple extract
1 teaspoon liquid smoke
10 ounces cajun injection marinade
1/4 cup olive oil
1/4 cup cajun seasoning
1/2 cup apple cider vinegar
1/2 cup water
1 teaspoon celery salt
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup butter
18 lbs turkey

Steps:

  • Combine first 12 ingredients in a pot and bring to a boil. Let cool.
  • Rinse turkey, pat dry and brine over night, completely submerged in the brine.
  • Rinse turkey and pat dry.
  • Using a syringe, inject your favorite marinade. I use a store-bought Cajun sauce, made for injectors, but you could certainly make your own.
  • Coat with oil, and season liberally with Cajun seasoning.
  • Cover with plastic wrap and let sit in the fridge overnight.
  • Remove and bring to room temperature while you're getting the smoker ready, following the manufacture's directions. Bring smoker up to 240 degrees. I like pecan or hickory. You could use almost any hard wood, but I do not recommend mesquite. It's too oily, and will be bitter after that long of a cooking period.
  • Smoke bird for 6-8 hours, keeping the temperature between 220--240 degrees, until internal temperature of the bird reaches 180 degrees.
  • Mop, rotate, and turn bird every 40-50 minutes. Add pieces of wood to keep temp up and smoke going.
  • For the mop: Combine cider vinegar, water, celery salt, salt, pepper, and butter in a pot and bring to a boil. Remove and set aside.
  • Remove, wrap in foil and let rest for 30 min before carving.
