Australian dessert with a meringue base, topped with fresh cream and fruit. This is a recipe that I have experimented with and all my friends and family say it's the best pavlova they've ever tasted!

3 egg whites
1 pinch salt
1 cup white sugar
1 tablespoon cornstarch
1 teaspoon lemon juice
1 ¼ cups heavy whipping cream
½ cup confectioners' sugar
1 pint fresh strawberries

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Line a sheet pan with parchment paper. Draw a 9 inch circle on the parchment. An easy way to do this is to draw around the outside of a 9 inch pan with a pencil.
  • In a large bowl, beat egg whites on high speed until soft peaks form. Add 3/4 cup of the sugar gradually, while continuing to whip. Make sure sugar is completely dissolved. Mix together the remaining 1/4 cup sugar with the cornstarch; lightly fold into meringue with lemon juice.
  • Spread a layer of meringue to fit circle on parchment, approximately 1/4 inch thick. With remainder of mixture, pipe or spoon swirls around the edges to form a shallow bowl shape.
  • Bake at 300 degrees F (150 degrees C) for 1 hour. Turn off oven, but leave meringue in oven for an additional 30 minutes. When cool, the meringue should be hard on the outside, and slightly moist on the inside.
  • In a large bowl, combine the cream and half a cup of confectioners sugar, and whip until thickened. Decorate with fruit of your choice; strawberries are excellent.

For Meringue Shell:
4 large egg whites (at room temperature)
1 cup castor sugar (also known as caster sugar, berry sugar, or superfine sugar )
1/2 tablespoon cornstarch
1 teaspoon white vinegar
1 teaspoon vanilla
For the Whipped Cream
1/2 cup whipping cream
1/2 teaspoon vanilla
1/2 cup icing sugar (also known as confectioners' sugar)
For the Fruit Garnish:
2 cups whole berries or sliced fresh fruit of choice (strawberries, kiwi fruit, passion fruit, bananas)
Optional: 1 tablespoon fresh lemon juice
Optional: fresh mint sprigs

Steps:

  • Gather the ingredients.
  • Heat the oven to 275 F/140 C and place the rack in the middle of the oven.
  • Line a baking tray with aluminum foil and score a 7-inch circle on the foil with the blunt edge of a knife, without tearing the foil. (Use a bowl as a guide.) Set aside.
  • In a clean, medium-sized metal bowl, beat the egg whites with a clean electric mixer on medium speed until the whites form soft peaks .
  • Gently sprinkle the sugar into the egg whites, 1 teaspoon at a time, beating continuously until the whites form stiff glossy peaks.
  • Sprinkle the cornstarch and vinegar on the meringue and fold in gently with a plastic spatula.
  • Add the vanilla and gently fold the mixture again.
  • Now gently spread the meringue in the circle on the foil to make a circular base. Make sure the edges of the meringue are slightly higher than the center so you have a shallow well in the middle.
  • Bake the meringue for about 1 hour and 15 minutes or until it turns a very pale, pinkish eggshell color.
  • Turn off the oven and leave the door slightly ajar to let the meringue cool completely. As the meringue cools, it will crack slightly.
  • Just before serving, take the meringue out of the oven and gently transfer it from the foil to a plate.
  • Gather the ingredients.
  • Whip the cream with the vanilla and icing sugar until it forms peaks and set aside.
  • Prepare the fruit by washing it and slicing any that aren't going to be left whole.
  • If using bananas, toss with the lemon juice to prevent browning.
  • Gently spread the cream over the top of the cooled meringue with a spatula.
  • Arrange the fruit on top. Garnish with fresh mint, if desired.
  • Serve immediately and enjoy.

In this elegant dessert, a crisp white meringue layer is filled with whipped cream and fresh fruit. To keep your meringue from being flat and grainy, try beating egg whites until stiff but not dry. Overbeaten egg whites lose volume and deflate when folded into other ingredients. Also, when beating in sugar, beat in about 1 tablespoon at a time, beating well between each addition. Then beat until meringue is thick, white and glossy. Be absolutely sure not a particle of grease or egg yolk gets into the whites.

1/8 teaspoon cream of tartar
3/4 cup granulated sugar

Steps:

  • Preheat the oven to 200 degrees F; line 2 baking sheets with parchment paper.
  • In a stand mixer fitted with a whisk attachment, add the egg whites, vanilla and cream of tartar. Beat until the mixture is frothy and soft peaks form. Gradually add the sugar 1 tablespoon at a time, waiting about 15 seconds between each addition. Once all of the sugar has been added, beat for an additional 5 minutes. The egg whites should be glossy and stiff but not dry.
  • Spoon the mixture into a large pastry bag fitted with a large star tip. Pipe 2-inch cookies onto the lined baking sheets, leaving 1 inch between each cookie.
  • Bake for 45 minutes, then turn off the oven and leave the cookies in the oven for an additional 30 minutes. Remove and cool completely before storing in an airtight container.

1 1/4 cups granulated sugar
1 teaspoon cornstarch
2 teaspoons white-wine vinegar

1 pint blueberries
Zest of 1 lemon

Steps:

  • Preheat oven to 250 degrees with racks in the upper and lower third. Using a 3-inch bowl or round cutter, trace 6 circles on each of 2 sheets of parchment paper. Transfer each sheet of paper to a baking sheet tracing-side down.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg whites and a pinch of salt on medium-high speed until soft, glossy peaks form. With mixer running, add granulated sugar 1 tablespoon at a time. Beat meringue on high until stiff and glossy, about 5 minutes more. Sprinkle in cornstarch, vinegar, and vanilla; gently fold to combine.
  • Using two spoons, scoop a mound of meringue in the center of each of the circles. Use the back of one spoon to create an indentation in the center of each mound. Transfer baking sheets to oven. Bake until firm and dry to the touch but not browned, 35 to 40 minutes. Turn off oven and let meringues cool for 1 hour. Transfer to a wire rack to cool completely.
  • Whisk cream and confectioners' sugar until soft peaks form. Top meringues with a dollop of whipped cream and a spoonful of blueberries. Sprinkle lemon zest over berries. Serve immediately.

This beautiful torte was named after the Russian ballerina Pavlova because it's light and airy-and gets rave reviews! I adapted it from one made with only kiwi fruit. My family prefers this kiwi/strawberry combination. It's best not to make Pavlova on a humid day. Be sure it cools gradually, away from drafts...that way it won't get "chewy".

MERINGUE:
4 large egg whites, room temperature
1 cup sugar
1 teaspoon cornstarch
1 teaspoon white vinegar

1 teaspoon vanilla extract
1 pint fresh strawberries
2 medium kiwifruit
GLAZE:
1/4 cup sugar
1/4 cup water

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Beat egg whites until soft peaks form. Gradually add sugar and cornstarch, beating until stiff and glossy. Beat in vinegar and vanilla. (Test meringue by rubbing between thumb and finger--it should not be grainy.) , Spread meringue on a foil or parchment-lined 12-in. pizza pan (or form in any shape desired). Bake at 275° for 50-60 minutes; turn off heat and allow to stand in oven for at least 1 hour. , Make cream layer by whipping cream, sugar and vanilla until stiff. Spread over top of cooled meringue. Arrange fruit in attractive patter over top of cream layer. Set aside. Combine glaze ingredients in small saucepan. Bring to a boil to thicken. Cool. Brush glaze over fruit to seal with small, soft brush. Chill until serving time.

Steps:

  • Preheat oven to 300 degrees. Using an 8-inch bowl as a guide, trace the perimeter of the bowl onto a sheet of parchment paper. Transfer parchment paper, pencil side down, to a baking sheet. Set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg whites and salt together until glossy peaks form. With mixer running, add sugar in three additions, beating until meringue is stiff and glossy. Sprinkle in cornstarch, vinegar, and vanilla; gently fold to combine.
  • Mound the meringue in the center of the 8-inch circle. Using a spatula, evenly spread meringue out towards the edges. Transfer baking sheet to oven and immediately reduce the temperature to 250 degrees. Bake for 1 hour and 15 minutes.
  • Turn off oven and let meringue cool completely in oven. When meringue is cool and completely dry, top with whipped cream and desired fruits.

  • Preheat oven to 180C/Gas 4
  • Line a baking sheet with baking parchment and draw a rough 25cm/10in diameter circle onto it, A standard dinner plate is a good tool.
  • In a LARGE bowl, seperate the egg whites and whisk until soft peaks form, then whisk in the Sugar, 1 tbsp at a time, until the mixture is firm and glossy and holds stiff peaks when whisk removed.
  • Add in the Cornflour, Vanilla and Vinegar and gently combine with a metal spoon.
  • transfer the mixture to the prepared baking parchment, keeping within your pre drawn circle, with a spatula smooth out the top and edges.
  • place in the oven and IMMEDIATLY reduce the temperature to 120C/Gas 1/2 and cook for 1 Hour. Then turn the oven OFF and leave the meringue to cool completly.
  • Once cooled completly remove the meringue from the oven (at this point you can freeze for 1 month or place in an airtight container for a few days) and place top down onto your serving platter and remove baking parchment.
  • topping - whisk you cream to firm peaks and add the vanilla then heat your cranberries in a pan for a few moments until softened. add the blackcurrents and icing sugar. Once soft but still retaining thier shape seive the fruit over a bowl, retaining the sauce.
  • assembly - Cover the meringue with Cream and cover with the cooled berries. drizzle coulis over the entire meringue and voila you are complete. you can dust with icing sugar if you prefer.

  • PREHEAT THE OVEN to 150C/130C fan/300F/gas 2. Very lightly oil a baking sheet and cover with a sheet of nonstick baking parchment.
  • TO WHISK THE EGG WHITES Using an electric mixer, or a bowl and electric hand whisk (ensure both bowl and whisk are spotless), beat the egg whites with the caster sugar until very firm - about 4 minutes - then add the icing sugar, vanilla extract, cornflour and vinegar, and beat for another 3 minutes until very firm and glossy.
  • FOR INDIVIDUAL MERINGUES Using a large metal spoon, dollop spoonfuls of the mixture on to the prepared baking sheet, allowing at least 5cm between them. Shape or swirl them to your liking with a spatula or knife, or allow a trail of mixture to flop over backwards, making a peak. FOR A PAVLOVA BASE Using a large metal spoon, scoop the mixture on to the baking paper, then, using the back of the spoon and starting from the centre, spread out and flatten slightly in one sweep, to give a round cushion with a slight dip in the middle. Don't touch the sides as this will spoil the fluid lines.
  • TO COOK THE MERINGUES Just before placing them in the oven, reduce the heat to 140C/120C fan/275F/gas 1 and bake on a middle shelf for 35 minutes for individual meringues, 1 hour 10 minutes for a pavlova. Turn off the oven, open the door and leave the meringues to cool gently for a few minutes before removing. Once out of the oven leave in a warm place to cool (this helps prevent excessive cracking, although a few cracks are the norm). Meringue should be marshmallow-soft at the centre, with a fragile and crisp exterior. When cool, carefully detach from the paper and, if made in advance, keep in an airtight container for up to two days.
  • TO FINISH A PAVLOVA Whip 300ml double cream with 1 tbsp icing sugar until it forms soft peaks, then pile on to the base and top with fruit of your choosing (passionfruit and berries are especially good)

150g light brown soft sugar
150g golden caster sugar
6 medium egg whites (about 180g)
1 tsp vanilla extract
1 peach, destoned and sliced
150g raspberries
150g strawberries, hulled and quartered
130g pineapple chunks
2 passion fruits, halved and seeds scooped out
450ml double cream
2 tbsp icing sugar
1 tsp vanilla extract

Steps:

  • Heat the oven to 150C/130C fan/gas 2 and line two large baking trays with baking parchment. Using a 900g loaf tin as a template, trace two rectangles onto the parchment. Turn it over. Sift both the sugars into a large bowl (use a spoon to push it through). Whip the egg whites on low speed in a stand mixer or with an electric whisk until small bubbles form. Turn the speed up to medium and whisk to stiff peaks. Add the sugar mix, 1 tbsp at a time, whisking between each addition until all the sugar has been added. Drop in the vanilla. Whisk for 3-4 mins more until the meringue is smooth (not grainy) - test it between your fingertips.
  • Spoon the meringue into a piping bag fitted with a star nozzle, and pipe it over the parchment using the templates so you have two meringue rectangles. Use a skewer to create more swirls, if you like. Bake for 50 mins-1 hr until crisp, then turn off the oven. Leave to cool inside.
  • To decorate, whisk the cream, icing sugar and vanilla extract to soft peaks using an electric whisk. Place one meringue on a serving board, then pipe or spoon over half the cream. Layer over half the fruit, top with the second meringue, then the rest of the cream and the remaining fruit. Best eaten on the day it's made, but will keep chilled for up to two days.
