MEXICAN-SPICED FUDGE BROWNIES

Steps:
- Heat oven to 325°F. Spray 8-inch square pan with cooking spray.
- In medium bowl, mix flour, sugar, cocoa, salt, cinnamon and red pepper; set aside.
- In large microwavable bowl, microwave butter and chocolate uncovered on High 2 minutes, stirring after 1 minute, or until melted and mixture can be stirred smooth. Stir in flour mixture, eggs and vanilla. Pour into pan.
- Bake 50 minutes or until toothpick inserted in center comes out almost clean. Cool completely on cooling rack, about 1 hour. Cut into 4 rows by 4 rows.

- Prepare your favorite boxed or homemade brownies, adding 3/4 teaspoon ground chipotle chile pepper and 1 teaspoon ground cinnamon to the batter (for a batch that fits a 9-by-13-inch pan). Top each Mexican brownie with a scoop of dulce de leche ice cream and sprinkle with cinnamon.
MEXICAN BROWNIES WITH ICE CREAM AND FUDGE SAUCE
Steps:
- Preheat oven to 325 degrees. Butter 8x8-inch glass baking dish. Stir chopped unsweetened chocolate and butter in heavy medium saucepan over low heat until melted and smooth. Pour into medium bowl. Whisk in sugar. Whisk in eggs, then flour, vanilla extract, and ground cinnamon. Stir in chopped Mexican chocolate and chopped toasted almonds. Transfer batter to pan; smooth top. Bake brownie until tester inserted into center comes out with fudgy crumbs still attached, about 30 minutes (do not overbake). Transfer to rack; cool. Cut brownie into 12 squares. Serve brownies with vanilla ice cream and fudge sauce.
JJ'S MEXICAN BROWNIES
Steps:
- To add a little kick to these brownies, lightly brown 2 cups hazelnuts in 2 tablespoons peanut oil. Let cool, then remove the skins by rubbing the nuts in between a clean dish towel. In a food processor, pulse the nuts until they are slightly crumbled, then add the cocoa powder and the chili powder and pulse until fully incorporated. Transfer to a bowl and set aside.
- Preheat the oven to 350 degrees F.
- Line an 8 by 8-inch baking pan with parchment paper leaving a 2-inch overhang to use as handles for removal.
- Add the butter and chocolate to a medium-sized saucepan over medium heat, stirring to melt. Once melted and smooth, remove from heat. Whisk in the sugars. Add the eggs, 1 at a time, stirring between additions, then add the vanilla extract.
- Whisk together the cocoa powder, flour, baking powder and salt, if using, in a separate bowl. Add the dry ingredients to the chocolate mixture and stir well.
- Fold in 1 1/2 cups of the hazelnut mixture. Pour the batter into the prepared pan and spread evenly. Sprinkle the top with the remaining 1/2 cup of hazelnut mixture and bake for 20 to 30 minutes. Remove the brownies from the oven, and cool to room temperature. Cut into squares and sprinkle with confectioners' sugar before serving.

Steps:
- Brownies: Preheat oven to 180°C or 350°F.
- Cook the sugar, margarine and cocoa powder on stove over medium until the margarine is melted.
- Remove from heat, add eggs and vanilla. Stir.
- Add remaining ingredients (flour, baking powder and salt).
- Stir in nuts.
- Put in greased 20cm (8 inch) square pan.
- Bake at 180°C or 350°F for 25 minutes.
- Sauce: Combine melted margarine, sifted cocoa and water in a microwave proof bowl.
- Blend in condensed milk with wire whisk.
- Microwave on high for 1 minute, then whisk to blend.
- Microwave 1 1/2 minutes more on high. Add vanilla and blend with whisk completely.
- Serve hot with brownies and ice-cream of choice.
- To preserve: Leave to cool, put in jar with lid and refrigerate.
- To reheat: Remove lid from jar and microwave. If the sauce is too thick, add some water.
MEXICAN BROWNIES
I found this recipe a while ago, but I changed it quite a bit, so here is my version. This type of brownie is not too sweet nor too dense. I would definitely say this is a mature brownie.

- Preheat oven to 350 degrees F (175 degrees C). Line a 12x15-inch baking pan with parchment paper, leaving about 3 inches of paper overhanging 2 sides to use as handles.
- Place the butter in a microwave-safe bowl, and cook on Medium until the butter is about half melted, about 1 minute. Mash the butter with sugar until well combined, and stir in eggs one at a time, incorporating each one before adding the next. Mix in vanilla extract.
- Sift the cocoa, flour, cinnamon, pequin pepper, salt, and baking powder into a bowl. Sprinkle in any salt caught in the sifter. Mix the flour mixture into the butter mixture, stirring to blend well, and pour the batter into the prepared baking pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out with moist crumbs, 20 to 25 minutes. Let cool in the pan, and use parchment paper handles to remove the brownies for slicing.

Steps:
- Preheat oven to 325 degrees.
- Line 9x13x2 inch cake pan with foil,lightly butter foil.
- Fill saucepan half full of water,bring to boil over medium high heat.
- Put butter and unsweetend chocolate in stainless steel bowl,put on saucepan,reduce heat to low.
- Stir until mixture is smooth and melted,about 5 minutes.
- Remove from heat and let cool 5 minutes.
- Add sugar,mix.

- Invert onto plate,peel foil off carefully.

- Combine whipping cream and milk in a small saucepan over medium heat. Cook for 2 minutes. Stir in ground espresso. Gently add chocolate chips and stir continuously until chocolate melts and is fully blended with the cream mixture, making sure nothing sticks to the bottom of the pan.
- Stir in brown sugar until dissolved, reducing heat to low when the mixture starts to boil. Mix in cocoa powder until incorporated. Add butter; stir until melted. Stir in vanilla extract. Continue stirring over low heat until mixture is dark brown and smooth.
- Pass the mixture through a fine strainer to remove espresso granules, then pour into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

- In a heavy 1 1/2-quart saucepan melt butter and chocolate over low heat, stirring, until smooth and remove pan from heat. Cool chocolate mixture 10 minutes.
- In a food processor process sugar and almonds until ground fine. Stir almond mixture into chocolate mixture and add eggs, 1 at a time, beating well with a wooden spoon until mixture is glossy and smooth. Stir in flour, salt, and cinnamon until just combined.
- Spread batter evenly in pan and bake in middle of oven 25 to 30 minutes, or until a tester comes out with crumbs adhering to it. Cool brownies completely in pan on a rack before cutting into 16 squares. Brownies keep, layered between sheets of wax paper in an airtight container at cool room temperature, 5 days.
