This is a condiment served with almost any meal in El Salvador. It goes great with tamales and pupusas!

1 head cabbage, finely shredded
1 white onion, halved and sliced 1/4-inch thick
1 large carrot, grated
4 red bird's eye chile peppers, grated
1 ½ tablespoons salt, or to taste
3 cups boiling water
½ cup vinegar
1 tablespoon oregano

Steps:

  • Mix cabbage, onion, carrot, and chile peppers together in a large bowl. Sprinkle salt evenly on top. Cover with boiling water. Cool to room temperature, about 1 hour.
  • Pour vinegar over cabbage mixture; add oregano. Mix together carefully.
  • Cover and refrigerate until flavors combine, 8 hours to overnight.

SPICY CURTIDO (PICKLED CABBAGE SLAW)



Spicy Curtido (Pickled Cabbage Slaw) image

Curtido is a lightly pickled cabbage slaw common in Central America. Using a half jalapeno gives it some real zip but you can always dial back on it if you want. (Note: these instructions are not meant for long term canning.)

Number Of Ingredients 9

1/2 head green cabbage
1 carrot
1/2 onion
1/2 jalapeno
1 cup vinegar
1.5 cups water
1 teaspoon Mexican oregano
freshly cracked black pepper
2 teaspoons salt (Kosher or sea salt)

Steps:

  • Thinly slice the 1/2 head of cabbage, 1/2 onion and 1/2 jalapeno. Grate the carrot.
  • Combine the remaining ingredients in a bowl: 1 cup vinegar, 1.5 cups water, 1 teaspoon Mexican oregano, freshly cracked black pepper, 2 teaspoons salt (Kosher or sea salt).
  • Add the liquid mixture to the veggies and combine well. Crush the cabbage a bit so that it will fit into the jars.
  • Fill two pint-sized Mason jars with the veggies and top with the brine.
  • Seal well and let pickle overnight in the fridge.

1 quart boiling water
3 green onions, minced
1 cup distilled white vinegar
½ cup water
2 teaspoons dried oregano

Steps:

  • Combine the cabbage and carrot in a large bowl and pour the boiling water over the mixture. Allow the mixture to steep for 5 minutes; drain well. Return the cabbage and carrots to the bowl. Mix in the green onion, vinegar, 1/2 cup of water, and oregano. Toss until all ingredients are combined. Chill for 20 minutes before serving.

3 tablespoons apple cider vinegar

Steps:

  • In a large bowl, toss together cabbage, onion, carrot, and jalapeño, if using. In a small saucepan, combine vinegar, salt, and sugar a cook over medium heat, stirring, until salt and sugar are just dissolved. Pour brine over vegetables and toss to combine. Cover and refrigerate for one hour before serving.

Often served alongside pupusas, curtido is quick to assemble, but aged over three days so the shock of pink cabbage can develop high notes and deep flavor. Transfer your finished curtido to clean jars, which make it easy to store and give away to friends.

1 pound cabbage, finely shredded (green or red or both)
2 1/2 cups water
1/2 of a medium onion, thinly sliced
1/2 cup white vinegar
2 tablespoons kosher salt
1/2 to 1 teaspoon dried oregano, crumbled
Black pepper, to taste
Ground cumin, to taste

Steps:

  • Combine all ingredients in a large, clean bowl. Using clean tongs or hands, gently crush the vegetables in the brine.
  • Place a clean plate on top of the vegetables, and weigh it down to fully submerge them under the brine. Let sit at room temperature for at least 3 days, or longer to your taste; the flavor will deepen and mellow over time. When it's to your liking, transfer to clean jars, making sure brine covers the vegetables, and store in the refrigerator. Can keep for weeks.

Curtido is a fat-free slaw from Mexico made with white cabbage, carrot and onion. Pile it high on tacos or in burritos, or serve as a salad in its own right

1 small white cabbage (around 680g), finely shredded
1 red onion , finely sliced
2 carrots , thinly sliced lengthways
50ml apple cider vinegar
2 tsp golden caster sugar
½ small pack coriander , leaves only, roughly chopped

Steps:

  • Mix the cabbage with the onion and carrots in a heatproof bowl. Heat the vinegar, sugar and 1 tsp salt in a pan over a low heat until dissolved, then pour over the vegetables and mix well.
  • Put the slaw in the fridge for at least 30 mins or until ready to serve. Just before serving, stir through the coriander leaves and season well, to taste.

Posted for Zaar World Tour 2005. Pickled onions are served alongside meat dishes all over Mexico, but you can serve them with anything you want, like me when I make this recipe! Will last in the refrigerator for 2-3 weeks. The lime juice, zest and grapefruit make something called sour orange juice. I've never heard of it, can't buy it in the store and I wouldn't want to experiment with regular orange juice to make it! The beet juice is used to turn the onions red(der). Serving size is a guess. Chilling time is included in cooking time. From a special issue of Saveur, The Best of Tex-Mex Cooking.

1 medium beet, trimmed, peeled and coarsely grated
2 garlic cloves, peeled and crushed
2 bay leaves
1/2 cup white wine vinegar
1 lb red onion, peeled and thinly sliced
1/3 cup lime juice
1 tablespoon lime zest
2/3 cup grapefruit juice
salt

Steps:

  • Put beets in medium saucepan and add garlic, bay leaves, vinegar and 4 cups water.
  • Bring to a boil over high heat, reduce heat to medium, and simmer 10 minutes.
  • Put onions in a medium bowl. Strain hot beet cooking liquid over onions and set aside to rest until onions soften slightly, about 5 minutes.
  • Drain onions and return to bowl. Add sour orange juice (or lime juice, lime zest and grapefruit juice) and salt to taste and toss well.
  • Cover and marinate in the refrigerator for 1 hour before serving.
