Quinoa is an ancient super grain that has more protein than any other grain. Try it with a Mexican twist! My family loves it! Optional is to add a bit of queso asadero or other Mexican cheese before serving.

1 tablespoon butter
1 cup quinoa
2 cups chicken broth
1 (14.5 ounce) can fire-roasted diced tomatoes with garlic
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 (15 ounce) can black beans, drained and rinsed
½ cup green onions, chopped
½ cup chopped fresh cilantro

Steps:

  • Melt butter in a pan; add quinoa and cook over medium heat until toasty, 3 to 5 minutes. Add broth and tomatoes. Season with salt, pepper, and cayenne. Cover and cook on low to medium-low until quinoa appears soft and translucent, and the germ ring is visible along the outside edge of the grain, about 20 minutes.
  • Add black beans, green onions, and cilantro to the quinoa. Stir and heat through.

Wonderfully light, healthy and nutritious. And it's so easy to make - even the quinoa is cooked right in the pan!

1 tablespoon olive oil
2 cloves garlic, minced
1 jalapeno, minced
1 cup quinoa
1 cup vegetable broth
1 (15-ounce) can black beans, drained and rinsed
1 (14.5 oz) can fire-roasted diced tomatoes
1 cup corn kernels, frozen, canned or roasted
1 teaspoon chili powder
1/2 teaspoon cumin
Kosher salt and freshly ground black pepper, to taste
1 avocado, halved, seeded, peeled and diced
Juice of 1 lime
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Heat olive oil in a large skillet over medium high heat. Add garlic and jalapeno, and cook, stirring frequently, until fragrant, about 1 minute. Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder and cumin; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until quinoa is cooked through, about 20 minutes. Stir in avocado, lime juice and cilantro. Serve immediately.

  • Stir black beans, tomatoes, yellow corn, quinoa, and chicken broth into skillet; season with red pepper flakes, chili powder, cumin, salt, and black pepper. Bring to a boil, cover the skillet with a lid, reduce heat to low, and simmer until quinoa is tender and liquid is mostly absorbed, about 20 minutes. Stir avocado, lime juice, and cilantro into quinoa until combined.

1 cup uncooked quinoa
1 medium onion, finely chopped
3 cloves garlic, minced
1 small green bell pepper, chopped
1 (8 ounce) can tomato sauce
2 ½ cups water

¼ teaspoon garlic powder
¼ teaspoon ground cumin

Steps:

  • Heat the vegetable oil in a large saucepan over medium-high heat. Stir in the quinoa, onion, garlic, and green pepper. Cook and stir 5 to 10 minutes until the onion is tender, and the quinoa has lightly toasted. Stir in the tomato sauce and water, then season with the chili powder, garlic powder, and cumin. I was craving Mexican, but didn't have a whole lot in the house, rather than go shopping I threw this together and liked it so much I figured I should share the recipe. Next time I'm going to try adding corn with the tomatoes and kidney beans, perhaps a Mexican cheese blend, and Greek yogurt rather than sour cream. Also, I used the Allrecipes top-rated recipe for taco seasoning rather than a packet from the store.

1 onion, diced
½ cup quinoa
1 ounce taco seasoning mix
1 cup water
1 (15 ounce) can kidney beans, rinsed and drained

¼ cup sour cream

Steps:

I threw this together last night to have on hand to take for lunches. Similar to Mexican Rice, only made with the nutritional powerhouse, Quinoa! This began as an attempt to use of some left-over homemade tomato soup I had in the fridge. This recipe is open to many interpretations and additions. I encourage you to experiment. A can of rinsed and drained black beans or garbanzos would be nice, or some chopped fresh cilantro or tomatoes too. Also a 14 oz can of diced tomatoes can be uses in place of the tomato sauce plus water. One note: the Southwest seasoning I use is by Pampered Chef, but you can easily substitute cajun seasoning, or a mix of garlic poweder, onion powder, oregano, and paprika

3 garlic cloves, minced
1 medium onion, diced
1 green bell pepper, diced
1 teaspoon southwest seasoning (Pampered Chef)
3/4 cup tomato sauce
1/3 cup water
1/2 cup quinoa, washed and drained
salt and pepper, to taste
1 (4 ounce) can diced green chilies
1 teaspoon chili powder
1 teaspoon cumin

Steps:

  • Heat oil in a saute pan and saute garlic and onions until translucent.
  • Shake in about 1 tsp Southwest Seasoning and stir to coat.
  • Add diced green peppers and stir to coat, saute about a minute.
  • Toss in the rinsed quinoa to toast along with the chopped veggies.
  • Add the tomato sauce plus the water and bring to a boil.
  • Add pepper and salt to taste.
  • Reduce heat to low, cover and cook for 15 minutes or until the liquid is absorbed.
  • Stir in green chillies, chili powder, and cumin.
  • Cook another 2-4 minutes until hot.

1 small onion, chopped

1 envelope gluten-free taco seasoning mix
2 cups low-sodium chicken broth
¼ cup chopped fresh cilantro

Steps:

  • Heat olive oil in a large skillet over medium heat; cook and stir quinoa and onion in the hot oil until onion is translucent, about 5 minutes. Add garlic and jalapeno pepper to quinoa mixture and cook until garlic is fragrant and slightly softened, 1 or 2 more minutes.
  • Mix undrained can of diced tomatoes with green chiles, taco seasoning mix, and chicken broth into quinoa mixture. Bring to a boil, reduce heat to medium-low, and simmer until liquid has been absorbed, 15 to 20 minutes. Stir in cilantro.

1 cup quinoa
1 cup chicken stock
1 cup drained canned Italian plum tomatoes
1 cup tomato juice from canned tomatoes
1/2 to 1 whole jalapeno or serrano chile, seeded and chopped
2 tablespoons chopped fresh coriander

Steps:

  • Saute onion and garlic in hot oil in heavy-bottomed pot large enough to hold remaining ingredients.
  • When onion is soft add quinoa, chicken stock, plum tomatoes, tomato juice and chili. Bring to boil; reduce heat; cover and cook for about 10 minutes, until quinoa is tender.
  • Sprinkle coriander over quinoa mixture and serve.

1 ½ cups water, or vegetable broth
1 ¼ cups salsa
1 tablespoon cumin
15 oz black beans, 1 can, drained and rinsed
1 cup frozen corn, defrosted
salt, to taste
olive oil, to taste
1 avocado, mashed
1 clove garlic, minced
2 teaspoons lemon juice
3 tablespoons olive oil
salt, to taste
pepper, to taste
4 tablespoons water
tortilla, to serve, optional

Steps:

  • In a medium saucepan, combine quinoa and water, and bring to a boil over high heat. Reduce heat to low, cover with a lid, and simmer for 10 minutes.
  • Add in salsa and cumin, and cover for 5 more minutes or until quinoa is fluffy.
  • Add in black beans, corn, salt, and olive oil, and stir until combined.
  • For the avocado dressing, combine avocado, garlic, lemon juice, olive oil, salt, and pepper in liquid measuring cup and whisk until smooth.
  • Whisk in water a little bit at a time until desired consistency is reached. 6. For extra smooth consistency, process all ingredients in blender or food processor.
  • Portion out into 4 containers and refrigerate for up to 5 days.
  • Enjoy!
