MEXICAN PIZZA I
Mexican Pizzas are delicious corn tortillas topped with beans, beef and all the delicious taco toppings you can imagine! They can be cut into wedges and served as an appetizer or left whole and served as a main dish.

Steps:
- Heat the refried beans.
- In a large skillet, brown the ground beef. Stir in the seasoning packet.
- Preheat oven to 350 degrees F (175 degrees C).
- Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
- Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
- Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

- Heat oven to 350°F.
- Mix cream cheese spread and 1 cup shredded cheese; spread onto bottom of 9-inch pie plate. Top with salsa and remaining shredded cheese.
- Bake 25 min. or until dip is heated through and cheese is melted.
- Top with remaining ingredients.

LAYERED SUPREME MEXICAN PIZZA DIP

- First mix your spices and softened cream cheese in a bowl.
- Then spread on the bottom of a 9 inch round pie plate. Now you layer your ingredients.
- First we added cheese, then meat, pasta sauce, more cheese, and lastly added green peppers and sliced olives.
- Pop in microwave for 5 minutes on High.
- Serve hot and with a side of sour cream!

- Preheat the oven to 375 degrees F.
- Dust a work surface with flour to keep the dough from sticking. Divide each dough ball into 12 equal-size pieces. Roll each piece into an 8-inch rope and twist into a knot. Arrange the knots around the edge of a 13-by-18-inch sheet pan, leaving 1/4 inch between each. Use the remaining knots to form 2 lines to divide the pan into 3 sections widthwise. Cover the pan with a clean kitchen towel and let the dough rise, about 15 minutes.
- Meanwhile, make the garlic oil. Combine the butter, olive oil, parsley, garlic powder, fresh garlic and 2 teaspoons salt in a medium bowl. Stir to combine.
- Brush the knots with about 1/4 cup of the garlic oil and sprinkle with 2 tablespoons Parmesan. Bake until just starting to brown, about 20 minutes. (The knots won't be fully baked.) Reduce the oven temperature to 350 degrees F.
- Meanwhile, combine the cream cheese, ricotta, heavy cream, red pepper flakes, 1 cup mozzarella, the remaining 1/2 cup Parmesan and 6 tablespoons of the garlic oil in a large bowl. Beat with an electric mixer until fluffy and combined, about 3 minutes.
- Make the dips in the pan of half-baked knots. Divide the marinara sauce evenly between the far left and far right sections. Sprinkle half of the pepperoni over the right-hand section. Sprinkle half of the peppers and onions over the left-hand section. Then dollop and spread two-thirds of the ricotta mixture in the center section. Divide the remaining ricotta mixture between the right and left sections, dolloping it over the sauce and gently spreading with the back of a spoon or small offset spatula. Divide the remaining cup mozzarella between the far right and far left sections, sprinkling it on. Top the far right section with the remaining pepperoni and the far left section with the remaining peppers, onions and olives. Bake until the knots are golden and the dips are bubbling and lightly browned, 20 to 25 more minutes.
- Brush the knots with the remaining garlic oil and sprinkle the fresh basil over the center section.

- Unroll crescent roll dough and place in an ungreased 15x10x1-in. baking pan. Flatten dough to fit the pan, sealing seams and perforations. Bake at 375° for 8-10 minutes or until light golden brown; cool on a wire rack. , In a small bowl, combine cream cheese and sour cream until blended; spread over crust. Chill 30 minutes. , Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning. Add water according to package directions and simmer for 5 minutes, stirring occasionally. Spread over cream cheese layer. Top with olives, tomato, cheeses and lettuce. Cut into serving-size pieces. PIZZA DIP RECIPE
Steps:
- Preheat oven to 350 degrees F.
- In a medium sized mixing bowl combine the cream cheese, sour cream, and parmesan cheese. Spread this mixture evenly in an 8x8-inch baking dish.
- Mix tomato sauce and garlic salt together. Heat in a microwave safe dish for 45 seconds. Stir well and spread over cream cheese layer.
- Sprinkle shredded cheese on top.
- Saute mushrooms in butter until cooked through. Then spread mushrooms, pepperoni and cooked sausage over the shredded cheese layer.
- Bake uncovered for 20 minutes. Be sure it is heated through.
- Serve with tortilla chips or bread sticks.

FANTASTIC MEXICAN DIP
This recipe was given to me by my sister-in-law and always goes fast! Cream cheese at the base of the dip makes it extra thick and scoopable. Seasoned beef and vegetables make it extra filling and tasty! You may want to prepare two batches. Serve with tortilla chips and enjoy.
