1/2 teaspoon lime juice
1/2 teaspoon Lea & Perrins Worcestershire Sauce
1/2 teaspoon finely chopped onion
2 drops Tabasco sauce
2 tablespoons dry white wine
1/2 cup catsup (Some chefs use tomato juice, others use both)
3 tablespoons shrimp juice (for the shrimp cocktail only)
sliced lime

Steps:

2 medium tomatoes
1/2 small onion, quartered
1 -2 fresh jalapeno
2 tablespoons chopped fresh cilantro
1/4 teaspoon Mexican oregano
1 teaspoon extra virgin olive oil
3 cloves garlic, thinly sliced
2/3 lb large shrimp, peeled and deveined
2 lime wedges
1 tablespoon chopped fresh cilantro
salt
fresh ground pepper

Steps:

  • Heat a well-seasoned cast iron skillet over medium-high heat.
  • Roast the tomatoes, onion, and jalapenos, until nicely browned on all sides, turned frequently.
  • Note: you may get a lot of smoke from this so you might want to open a window.
  • Transfer roasted vegetables to a metal bowl and cover with plastic wrap; allow to sweat and cool.
  • When cool, peel the skins and discard.
  • Remove any scorched areas from the onion by rubbing with paper towels.
  • For a milder dish, seed the jalapenos, or otherwise, keep the fire dept.

1 pound Jumbo shrimp, peeled and deveined
1 cup ketchup
1 cup freshly-squeezed lime juice, plus 2 tbsp
1 tablespoon hot sauce, preferably Mexican (add more to taste)
2 tablespoons extra-virgin olive oil
1/3 cup chopped cilantro, plus several sprigs for garnish
1/2 medium white onion, chopped (about 1/2 cup)
1 cup jícama and/or cucumber, diced and peeled
1 avocado, peeled, pitted and cubed
Several lime slices for garnish
Tostadas, chips or saltine crackers for serving

Steps:

  • Bring 1 quart (1L) of salted water to a boil. Add the shrimp and let the water return to a simmer and poach for an additional minute or two. Scoop the shrimp out and place onto a rimmed baking sheet and chill 30 minutes. The shrimp can be made a day in advance and chilled until ready to serve.
  • For the sauce, stir together the ketchup, lime juice, the Mexican hot sauce, olive oil and cilantro in a large bowl. This step can be completed a day in advance, stored in the refrigerator in an airtight container.
  • In a small strainer, rinse the onion under cold water, then shake off the excess liquid, and add to the sauce. Peel, dice and add the jicama; dice and add the cucumber. Stir in the chilled shrimp and the avocado right before serving.
  • Garnish with lime and serve with tostadas, chips, or saltine crackers.

1 cup sofrito sauce
12 gilthead fillets

  • Cover the shrimp shells with water in a saucepan. Bring to a boil, and then reduce the heat and simmer to create a shrimp broth, about 20 minutes. Strain.
  • Heat the oil in a large, heavy-bottomed skillet. Add the shrimp, squid, sofrito, gilthead, langoustines and mussels and cook for 3 minutes. Remove the seafood from the pan and set aside. Stir the rice into the juices from the seafood in the pan and saute for 1 to 2 minutes. Pour over the shrimp broth and red sauce and return the seafood to the pan; stir together. Cover and cook until the broth has been absorbed and the rice is cooked through, 15 to 20 minutes.
