Mexican street corn salad served over juicy grilled chicken

1/2 cup mayo
1/2 cup sour cream
2 tsps garlic paste or fresh minced garlic
1 tsp chili powder
1 tsp lime juice
1/4 tsp ground red pepper
kosher salt, pepper
4 thin cut chicken breasts
4 ears corn on the cob (shucked)
1 Tbsp olive oil
1/2 cup crumbled cotija cheese
1/4 cup chopped cilantro
4 lime wedges

Steps:

  • In a bowl add mayo, sour cream, garlic, chili powder, lime juice, ground red pepper, kosher salt, and pepper. Stir until evenly mixed.
  • Place the chicken breasts in a gallon size plastic bag, add half of the mayo mixture to the bag. Massage the bag until the chicken is evenly coated.
  • Brush the corn with olive oil on all sides.
  • Place the corn on a grill over medium to medium high heat. After 4 minutes rotate the corn and add the chicken to the grill. Cook the chicken and corn an additional 4 minutes, flip the chicken and rotate corn again. Cook 4-6 more minutes depending on thickness of chicken.
  • Remove the chicken and corn from the grill. Let the corn cool slightly and cut the kernels off the cobs.
  • Put the corn kernels in a bowl and add remaining mayo mixture, cotija cheese, and cilantro. Stir until evenly mixed.Note: Add the mayo mixture a little at a time until it's the right consistency for your taste, you may not use all of the mayo mixture.
  • Serve the grilled chicken with the Mexican Street Corn over top and a lime wedge on the side to squeeze over top.

3 cups shredded rotisserie chicken (from 1 large)
2 cups frozen, roasted corn with peppers and onions
4 ounces cream cheese, softened
1/2 cup mayonnaise
One 4-ounce can chopped green chiles, not drained
2 cloves garlic, pressed
2 green onions, sliced
2 tablespoons salted butter, melted
1 mounded tablespoon chili powder, plus more for sprinkling
1/2 cup plus 2 tablespoons sour cream
1/2 cup crumbled Cotija
1/2 cup chopped fresh cilantro
3 limes
One 8.8-ounce bag instant microwaveable Spanish rice, cooked according to package instructions
2/3 cup shredded pepper jack cheese
Warmed tortillas and tortilla chips, for serving
Tomato Avocado Salad, recipe follows
1 cup halved cherry tomatoes
1 avocado, diced
2 green onions, sliced thin
2 limes, juiced
2 tablespoons olive oil
Pinch kosher salt
Pinch freshly ground black pepper
1/4 cup chopped fresh cilantro

Steps:

  • Preheat the oven to 425 degrees F.
  • In a bowl, mix the chicken, corn, cream cheese, mayonnaise, green chiles, garlic, green onions, butter, chili powder, 1/2 cup sour cream, 1/4 cup Cotija and 1/4 cup cilantro. Juice in 1 lime and mix well.
  • Add the rice to a 10-inch ovenproof skillet or baking dish and spread to cover the bottom. Top with the chicken and corn mixture, spreading as needed. Top with the pepper jack cheese and a sprinkle of chili powder. Bake until bubbly and browned, 12 to 14 minutes.
  • Remove from the oven and top with the remaining 2 tablespoons sour cream, 1/4 cup Cotija and 1/4 cup cilantro. Cut the remaining 2 limes into wedges. Serve with the warmed tortillas, chips and lime wedges on the side, and with the Tomato Avocado Salad.
  • Add the tomatoes, avocado, green onions, lime juice, olive oil, salt and pepper to a bowl. Toss to combine. Garnish with the cilantro.

2 lbs boneless, skinless chicken breast ((4-6 thin chicken breasts))
3 cups sweet corn ((2 cans, drained))
1/4 cup mayonnaise
1/4 cup sour cream
1/2 tbsp lime juice
1½ tsp chili powder
1/2 tsp salt
1/2 tsp garlic powder
1/4 tsp cayenne pepper ((optional))
1/4 cup queso fresco (crumbled)
1/4 cup cilantro (chopped)

Steps:

  • In a large bowl, combine the sweet corn, mayonnaise, sour cream, lime juice, and chili powder and mix to combine.
  • In a casserole dish, lay the thin chicken breasts flat in the dish. Then season with salt, garlic powder and cayenne pepper. Spread the corn mixture evenly over the top of the chicken.
  • Bake at 350˚F, uncovered, for 30-40 minutes or until the chicken is cooked through (165˚F internal temp.) Then remove from the oven and garnish the top with crumbled queso fresco and chopped cilantro.

salt and ground black pepper to taste

1 (15.25 ounce) can whole kernel corn, drained

1 medium head butter lettuce, torn

Steps:

¼ cup crumbled Cotija cheese
¼ cup chopped fresh cilantro
2 teaspoons chili powder
2 limes, juiced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place corn, in husks, directly on the oven rack.
  • Roast in the preheated oven until tender and cooked through, 40 to 45 minutes.
