- Heat the oil in a deep saucepan and fry the chopped onion over a medium heat until tender. Add the garlic and tomato purée, stirring for 1-2 mins until combined. Sprinkle in the spices and cook for another 1 min.
- Tip in the chopped tomatoes, half fill the can with water, and add to the pan. Pour in the stock and simmer on a medium heat for 10-15 mins, uncovered. Season, then whizz using a hand blender until smooth. Add the beans and red pepper, and cook for another 15 mins until the pepper is tender.
- Serve in bowls topped with a small pile of tortilla chips and a lime wedge.

- Add the rinsed beans to a large pot with plenty of water, salt, and a small piece of onion.
- Let boil for about 1.5 hours, checking often to make sure that there is still enough water.
- Add the rinsed beans to a slow cooker with plenty of water, salt, and a small piece of onion.
- Turn the slow cooker on to high and heat for 3 hours.
- Add the bacon to a large pot and cook for about 5 minutes.
- Add the chorizo and continue cooking until cooked through.
- After about 5 minutes, add the ham, the beef franks, and the seasonings (including the garlic).
- Next, add the tomatoes, the cilantro, the onion, the jalapeno, and the chipotle pepper and cook for 5 additional minutes.
- Finally, add the cooked pinto beans and the water that they were cooked in and let boil for about 15 minutes so that all of the flavors can combine.
- If you want to thicken your charro beans, you can combine 2 tablespoons of corn starch with 1/4 cup of cold water and mix well before adding it to the pot.
- Serve hot as a side dish or on its own.

- 1.) In a medium pot put 1/2 lb of pinto beans along with water and boil on high for 4 hours or untill soft adding more water as needed.
- 2.)Mean While slice bacon into small peices, cube winners and canadian bacon into small cubes. (Do so ones beans are almost cooked) Slice vegtables small(tomatoe,Jalapeno,onion and cilantro ) and set aside.
- 3.) In a large pan fry bacon untill medium brown and put bacon and bacon fat along with boiling beans.Now reduce pot to low.
- 4.) On same pan where bacon was sauted add winners and canadian bacon. Fry untill brown.
- 5.) Now add winners and canadian bacon to pot along with vegtables and seasoning and put heat on high for five minutes.

- You can watch the video in the post for visual instructions.Heat oil in a large pot over medium/high heat. Add onion and sauté for about 4-5 minutes, stirring frequently.
- Stir in the roasted tomatoes, garlic, carrots, potato, and all spices. Cook for 1-2 minutes, until fragrant, then pour in the vegetable broth (I also added 2 bay leaves for flavor).
- Bring the soup to a boil and let it simmer with a lid for about 10-15 minutes. Add in the pinto beans and cook for a further 10 minutes or until the veggies are softened, stirring from time to time. Then turn off the heat.
- You can add more veggie broth or water if you notice that too much liquid evaporated.
- I poured about 50% of the soup into a different pot and used an immersion blender to blend it. You can also fill about half of the soup into a blender and blend it to the desired consistency.
- Then pour the blended soup back into the large pot and stir to combine. Taste it and add more salt/pepper/spices if needed. You can also add a little lime juice.
- Serve in bowls and garnish with fresh herbs. Enjoy!

- Roast 2 tomatoes in the oven at 400F for 15 minutes or so
- Saute 1/2 white onion and 2 peeled garlic cloves in a dollop of oil
- Rinse 1 can of black beans (2 cups worth) under tap water
- Prepare the chipotle by de-stemming and scraping out some of the seeds
- Add the tomatoes to the onion and garlic
- Add the beans along with 1.5 cups of stock
- Add 1/4 teaspoon oregano (use Mexican oregano if you have it)
- Add 1/2 teaspoon salt and dashes of freshly ground pepper
- Add half of a single chipotle pepper
- Cook for a couple minutes until everything is at a uniform temperature
- Add the mixture to a blender and pulse blend (let some of the warm air out as you blend)
- Add mixture back to pan for a final 10 minute simmer
- Taste for seasoning and add additional salt, oregano and chipotle if desired

- Roast the tomatoes, onion, and garlic until they are blackened. You can do this under the broiler or in a pan on the stove.
- Blend the roasted vegetables, cumin, and oregano until smooth. (Add a little water if necessary to blend)

This soup is a mixture of two recipes that I have for black bean soup. I love the flavor and it is great by itself or as an addition to a Mexican dinner. This recipe uses canned black beans so there is no soaking them overnight and you can also use a slow cooker so you can leave the house while it thickens. I have also added cooked, cubed chicken breast or shredded pork roast to make it even more hardy.

- Remove bacon and chop coarsely.
