Mexican Beef and Mushrooms image

This main dish made an impression on our children. Now grown, every one of them has requested the recipe. Often, I stir my home-canned salsa into the mix.

Number Of Ingredients 12

2-1/2 pounds boneless beef top round steak, cut into 1-inch cubes
1 large onion, chopped
2 tablespoons butter
1 garlic clove, minced
2 jars (6 ounces each) sliced mushrooms, drained
1 jar (16 ounces) salsa
1 cup water
1/2 teaspoon salt
1/4 teaspoon chili powder
3 cups hot cooked rice
1 cup sour cream
1 cup shredded cheddar cheese

Steps:

  • In a Dutch oven over medium-high heat, cook beef and onion in butter for 4-6 minutes or until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Stir in the mushrooms, salsa, water, salt and chili powder. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until the meat is tender., Serve over rice and top with sour cream and cheese.

I created it one night when we needed something fast and easy and had very little in the house. i have changed the ingredients a time or two since that first time, but my family always says it tastes like more. Note: Please know you can substitute most of the ingredients for whatever you have in your refrigerator/pantry at the time. So have fun.

1 (15 ounce) can vegetarian refried beans
1 (15 ounce) jar black bean dip
1 yellow onion, diced
4 garlic cloves, minced
1 cup picante sauce
1 (4 ounce) can green chilies, chopped
1 (15 ounce) can whole kernel corn, drained
4 ounces frozen spinach, chopped
2 cups chihuahua cheese, shredded (or use whatever kind of cheese you want)
2 veggie burgers (any flavor)
1 tablespoon extra virgin olive oil
sour cream (optional)

Steps:

  • Heat the oil in a large pan.
  • Sauté onions and garlic until tender.
  • Add picante sauce, green chiles, beans, bean dip, corn, veggie burgers, and.
  • spinach and stir to blend.
  • Break the burgers up as they defrost.
  • When the mixture heats, add your favorite cheese and stir until melted.
  • Serve over chips garnished with whatever you would like (sour cream, more.

The Mexican mash came from a shiva call! Aunt Lee was paying a condolence call on a friend when in Chicago and someone had made the dish. She asked for the recipe and I stole it from her. Now it's going to the Super Bowl!

1/2 cup guacamole
1 package taco seasoning mix
1/2 bottle mild red taco sauce
chopped green olives
grated cheddar cheese
chopped tomato

Steps:

  • Layer all ingredients in a shallow glass bowl. Serve with tortilla chips, corn chips, or taco shells.

5 garlic cloves
2 (15 ounce) cans garbanzo beans, drained well (chick-peas)
1/3 cup tahini (sesame seed paste)
1/4 cup lemon juice
1/4 teaspoon cumin, ground
5 drops hot sauce
cilantro, for garnish

Steps:

  • Position the knife blade in a food processor bowl. Drop the garlic through the food chute with the processor running; process 3 seconds or until garlic is minced.
  • Add garbanzo beans and remaining ingredients; cover and process until smooth, stopping once to scrape down the sides. Transfer the dip to a serving bowl and serve with pita bread chips.

These mushrooms taste great with rice and beans of course or as any side dish to any Mexican style meal.

1 lb mushroom, with stems
3 tablespoons salad oil
3 tablespoons butter
1 garlic clove, chopped
1/4 teaspoon dried epazote
1 -2 canned chile, rinsed and seeded, and sliced
salt
fresh ground pepper

Steps:

  • Wipe all mushrooms clean with a damp washcloth. Cut large mushrooms into quarters.
  • Heat the butter and oil in a heavy skillet.
  • When butter and oil mixture starts foaming add the garlic , mushrooms, epazote, chiles, and salt and pepper to taste, and cook.
  • Stirring from time to time, over a medium heat until the mushrooms are lightly browned, approximately 6-8 minutes.

1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper

1 lemon, juice
1 lime, juice and zest of
1/4 cup salsa verde
2 tablespoons sour cream
1 tablespoon cilantro
1 tablespoon thyme
1 -3 tablespoon olive oil

Steps:

  • Combine all ingridents except oil in a food processor and pulse till combined.
  • Stream in olive oil till the consistency of the dip is smooth and creamy.
  • Let sit for at least 1 hour.
