1/2 ts Oregano
4 Chicken breasts, skinless
Cayenne pepper to taste
1/2 Tes capers drained
2 tb olive oil
1 pn Sugar
1 md Onion
1/2 Green pepper chopped
1 1/2 ts Balsamic vinegar
salt and pepper to taste

Steps:

  • 1. Heat 1 1/2 tablespoons oil in a skillet with onion and pepper. Cook until softened, about 5 minutes. Add oregano, salt, black and cayenne peppers, capers and sugar. Cook as additional 2 minutes. 2. Transfer contents of skillet to a food processor and puree. Add remaining oil and balsamic. Taste and correct seasoning. (Recipe can be done ahead to this point) 3. Place chicken breasts in a microwave-oven proof dish or pie plate large enough to hold them in a single layer. Pour sauce over the chicken, cover the casserole loosely with waxed paper and cook on high power for 4 minutes. Turn the chicken, recover and cook an additional 4 minutes or until the chicken is cooked through but still juicy. Partially rotate the dish after 2, 4 and 6 minutes. Set aside for 2 minutes. 4. Spoon 1 or 2 chicken breasts and sauce onto heated plates. Serve with rice or steamed potatoes. When we moved out to a friend's farm the house we were renting didn't have an oven or stovetop (bar the wood burning one that filled the kitchen with smoke). So all my cooking was restricted to an electric frying pan and a microwave oven. After experimenting for a few weeks I came up with this little number which is super easy and full of flavour

2 chicken thighs, with bones (you could use another part of the chicken if you wanted)
1/2 cup long grain rice
400 g diced tomatoes
1/2 large zucchini (diced)
1/2 large carrot (diced)
4 mushrooms (diced)
1/2 diced onion (white, red or spring)
8 olives (with pips)
1 cup water
1 teaspoon instant chicken bouillon granules
1/2 cup basil leaves
salt and pepper

Steps:

  • Put rice, water & tomatoes in a 2 or 3L microwave safe dish and mix.
  • On top of that add the zucchini, carrot, mushrooms, onion, olives and basil leaves.
  • Sit the chicken on top and sprinkle the stock powder on the vegetables and the chicken and season with salt and pepper.
  • Cover the dish with a lid (microwave safe) or cling wrap and cook for 40 minutes on 90% power. I use an 1100watt oven but I wouldn't worry about altering the time if yours is less powerful.

1/4 teaspoon garlic powder
1/8 teaspoon paprika
1 teaspoon water
2 boneless skinless chicken breasts
1/4 teaspoon dried Italian seasoning

Steps:

  • Stir first three ingredients well and allow mixture to thicken for 1 minute.
  • Spread rub evenly onto chicken breast halves.
  • Sprinkle 1/4 teaspoon dried Italian seasoning blend onto chicken.
  • Place prepared chicken breasts in Ziploc® Brand Zip 'n Steam™ Medium or Large bag. Seal bag and place in microwave.
  • Cook on full power for 4 - 5 minutes or until chicken is cooked through, with no trace of pink. If needed, continue microwaving at 30-second intervals until chicken is done.
  • Allow bag to stand 1 minute before handling. Carefully open bag and serve.

This is one of the few main dishes I cook completely in the microwave. It's easy, delicious and simple to adapt to ingredients on hand. If I don't have spaghetti sauce, I substitute a can of diced tomatoes, a can of tomato sauce, along with some basil, oregano, and a bay leaf. You can also cut the chicken into strips or chunks, depending on your preference.

4 boneless skinless chicken breasts
1/2 medium green pepper, thinly sliced
1/2 medium red pepper, thinly sliced
1/2 medium onion, thinly sliced
2 garlic cloves, minced
8 ounces fresh mushrooms, sliced
2 stalks celery, sliced
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon water
4 ounces of sliced black olives, drained
2 cups prepared spaghetti sauce
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons tomato paste

Steps:

  • Combine celery, peppers, onion, garlic and mushrooms with 1 T water and 1 T butter in a 2 quart microwave-safe dish.
  • Cook uncovered on high for 3-4 minutes, stirring after every minute.
  • Drain.
  • Stir in spaghetti sauce, olives, tomato paste, salt and pepper.
  • Slice chicken breasts in half lengthwise.
  • Slide chicken into casserole dish with other ingredients, turning to coat with sauce.
  • Arrange with meatiest portions out towards the outside of the dish.
  • Cover and cook 10-12 minutes on high, or until chicken is cooked through.
  • Serve over hot pasta or rice.

4 boneless skinless chicken breasts, pounded to about 1/4-inch thick
4 slices swiss cheese (thinly sliced)
4 slices ham (thinly sliced)
3 -4 tablespoons grated parmesan cheese
1 1/2 teaspoons paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried tarragon
1/2 teaspoon dried basil
1 -2 tablespoon melted butter
1/3 cup dry breadcrumbs

Steps:

  • Butter/grease a microwave-safe baking dish (large enough to hold 4 rolled chicken breasts).
  • Season the inside of the chicken breast with salt and black pepper, then place 1 slice of Swiss cheese and 1 slice ham on top of each pounded chicken breast.
  • Roll up as tightly as possible and secure with toothpicks (if necessary).
  • In a small bowl combine the Parmesan cheese, paprika, garlic powder, tarragon, basil and dry breadcrumbs.
  • Roll/coat the rolled chicken breast into the spice/breadcrumb mixture to coat on all sides.
  • Place into a baking dish, then drizzle with melted butter.
  • Cook on HIGH for about 10 minutes or until the chicken is cooked through and the juices run clear.
