Mexican Pizzas are delicious corn tortillas topped with beans, beef and all the delicious taco toppings you can imagine! They can be cut into wedges and served as an appetizer or left whole and served as a main dish.

1 (16 ounce) can refried beans
1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded Cheddar cheese
8 tablespoons sour cream
2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
½ avocado, diced
1 tablespoon black olives, sliced

Steps:

  • Heat the refried beans.
  • In a large skillet, brown the ground beef. Stir in the seasoning packet.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
  • Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
  • Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

1/2 pound uncooked lean ground beef
1 cup refried beans
1 teaspoon dried oregano
1/2 teaspoon ground cumin
8 uncooked manicotti shells
1-1/4 cups water
1 cup taco or picante sauce
1 cup sour cream
1/4 cup finely chopped green onions
1/4 cup sliced ripe olives
1/2 cup shredded Monterey Jack cheese

Steps:

  • In a large bowl, combine the beef, beans, oregano and cumin. Stuff into manicotti shells; place in an ungreased 11x7-in. microwave-safe dish. , In a small bowl, combine water and taco sauce; pour over shells. Loosely cover dish; microwave on high for 3-4 minutes. Turn shells with tongs. Microwave 3-4 minutes longer; turn shells again., Cover and cook at 50% power for 12-15 minutes or until pasta is tender and meat is no longer pink, turning dish a half turn once., Spoon sour cream lengthwise down center; sprinkle with onions, olives and cheese. Microwave, uncovered, on high for 1-2 minutes or until cheese is melted.

8 ounces ground beef
1/2 cup water
1/2 teaspoon ground cumin
1/2 teaspoon oregano
1/2 teaspoon salt
4 large flour tortillas
3 tablespoons vegetable oil (or use Pam spray)
2 tomatoes, diced
6 ounces black olives, chopped
3 -4 green onions, chopped
6 ounces green chilies, chopped, drained
2 cups cheddar cheese or 2 cups monterey jack cheese, shredded

Steps:

  • Preheat oven to 400.
  • Fry the ground beef with the water, the cumin, oregano and salt, stirring until the water has evaporated; drain excess grease; cool.
  • Rub each tortilla on each side with a bit of vegetable oil.
  • Place tortillas on a baking sheet and bake for 4 minutes.
  • Remove from oven, and top with the seasoned beef, veggies, then the cheese.
  • Bake for 10 minutes, or until the cheese is melted.

3/4 cup pizza sauce
Crisp breadsticks or garlic toast

Steps:

  • In a 1-qt. microwave-safe dish, combine the onion, mushrooms and green pepper. Cover and microwave on high for 1-1/2 to 2-1/2 minutes or until vegetables are crisp-tender; drain on paper towels. In a small bowl, combine the mozzarella, 1/2 cup Parmesan and parsley., Spread vegetable mixture in an 8-in. square microwave-safe dish. Top with pepperoni, cheese mixture and pizza sauce. Microwave, uncovered, at 70% power for 3-5 minutes or until cheese is melted, rotating a half turn once. Top with remaining Parmesan. Serve warm with breadsticks or garlic toast.

  • Ferment the Dough. Cover the dough with greased oil. Then transfer it to an air-tight container and let it ferment for about one hour at room temperature, that is, about 86° F. You may want to let it sit a little longer if you are baking during the cold season.
  • Prepare the Toppings. As you wait for the dough to rise, prep your toppings and cook those that need precooking. Perhaps you want to throw in Italian sausage, for instance.
  • Stretch Out the Dough. Once your dough has fermented, roll it into a ball and spread it out on a flat surface. Use a rolling pin so you can stretch the dough ball evenly.
  • Add the Toppings. Transfer the crust onto a greased baking dish or onto the microwave platter lined with parchment paper and make some holes in the dough using a fork.
  • Bake Your Pizza. Set the pizza inside the microwave, making sure the platter or the baking dish sits properly at the center of the microwave. Hit the oven settings on the microwave and let the pizza bake for between 20 and 25 minutes or until the cheese melts.
  • Remove the Pizza From the Microwave. Once your pizza has cooked, remove it from the microwave and transfer it onto a serving plate. Give it about 4 to 5 minutes to cool.
