Categories     Bon Appétit     Chicken     Grill     Grill/Barbecue     Spice     Chile Pepper     Hot Pepper     Garlic     Dinner     Summer     Rum     Chive     Fourth of July     Juneteenth

Yield 8 servings

Number Of Ingredients 12

1 bunch chives, cut into 1-inch pieces
4-8 Scotch bonnet chiles or habanero chiles
5 garlic cloves, crushed
3/4 cup malt vinegar
3/4 cup soy sauce
2 tablespoons Jamaican rum
2 tablespoons Diamond Crystal or 1 tablespoon Morton kosher salt
2 1/2 teaspoons ground allspice
1 1/2 teaspoons ground nutmeg
3/4 teaspoon ground cloves
8 pieces skin-on, bone-in chicken legs (about 6 pounds total), drumsticks and thighs separated, patted dry
Vegetable oil (for grill)

Steps:

  • Blend chives, chiles, garlic, vinegar, soy sauce, rum, salt, allspice, nutmeg, and cloves in a blender until smooth. Place chicken in a large bowl and pour jerk marinade over. Turn thighs and drumsticks several times to coat. Cover and chill, turning chicken pieces once, at least 2 hours and up to 1 day.
  • Remove chicken from marinade, wiping off any excess, and let come to room temperature, about 30 minutes. Discard marinade.
  • Prepare grill for 2-zone heat (for a charcoal grill, bank two-thirds of coals on one half of grill and scatter remaining coals over other side; for a gas grill, set one burner to high heat and the remaining burners to medium-low heat). Lightly brush grate with oil. Arrange chicken drumsticks and thighs, skin side down, on grate over hottest part of grill and grill, turning halfway through, until lightly charred, 5-10 minutes. Move chicken to cooler part of grill and continue to grill, turning several times, until an instant-read thermometer inserted into the thickest part registers 165°F, 20-25 minutes longer.
  • Transfer chicken to a platter and let rest 10 minutes before serving.

Yield 4 servings

Number Of Ingredients 30

1 whole chicken, split into 2 halves
8 cups Brine, recipe follows
1/2 cup Jerk Marinade, recipe follows
Oil, for oiling grill grates
2 cups Jerk BBQ Sauce, recipe follows
1/2 cup kosher salt
1/4 cup light brown sugar
1/2 cup soy sauce
2 tablespoons vegetable oil, plus more as needed
1 tablespoon kosher salt
20 whole allspice berries
6 sprigs fresh thyme, leaves stripped from stems and stems discarded
2 bunches green onions, chopped
3 cloves garlic
2 Scotch bonnet chiles
1 knob fresh ginger, peeled and chopped
1 medium yellow onion, chopped
1/2 cup tomato paste
1/2 cup Jerk Marinade, recipe precedes
1/4 cup molasses
1/4 cup white vinegar
1/8 cup brown sugar
2 teaspoons dry mustard powder
2 teaspoons tamarind puree
1 teaspoon celery salt
1 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/2 teaspoon liquid smoke
1/2 teaspoon chopped fresh thyme leaves
Juice of 1 lime

Steps:

  • Place the chicken in a large bowl or baking dish and pour the brine over it, making sure the chicken is fully submerged. Cover and refrigerate for 24 hours.
  • Rinse the chicken well. Wearing latex or vinyl gloves (Scotch bonnet chiles can remain on the skin for 24 hours!) rub the Jerk Marinade all over the chicken. Place in a resealable plastic bag and refrigerate for 24 hours.
  • Preheat a grill for cooking over indirect medium heat. Lightly oil the grill grates, then place the chicken skin-side down over indirect heat. Grill, uncovered, turning the chicken every 5 to 6 minutes, until the juices run clear when the thighs are pricked with a fork, 40 to 50 minutes.
  • Remove from the grill and let rest for 5 minutes to allow the juices to distribute equally.
  • Cut the chicken into quarters, separating the leg portions from the breast portions, and serve with Jerk BBQ Sauce.
  • Stir the salt and light brown sugar into 8 cups water in a pot and bring to a simmer, stirring to ensure that the salt and sugar completely dissolve. Let cool to 38 degrees F before using.
  • Put the soy sauce, oil, salt, allspice, thyme, green onions, garlic, chiles, ginger and onion in a food processor and puree until a smooth paste is formed, adding more oil if necessary. Set aside.
  • In a nonreactive heavy-bottomed saucepan, stir together the tomato paste and 2 cups water and heat slowly, stirring, until well incorporated. Add in the Jerk Marinade, molasses, vinegar, brown sugar, mustard powder, tamarind, celery salt, cumin, pepper, liquid smoke, thyme and lime juice. Bring to a boil, then turn down the heat and simmer until the sauce has thickened and reached the desired consistency. Remove from the heat and let cool.

NEELY'S JERK CHICKEN

Provided by Patrick and Gina Neely : Food Network

Categories     main-dish

Time 2h25m

Yield 4 servings

Number Of Ingredients 13

1 bunch scallions, chopped
3 large garlic cloves, chopped
1 habanero chile, chopped
1 lime, juiced
3 tablespoons olive oil, plus more for greasing grill grates
2 tablespoons soy sauce
1 tablespoon packed brown sugar
2 teaspoons ground allspice
1 teaspoon chopped fresh thyme leaves
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
4 boneless and skinless chicken breasts
Kosher salt and freshly ground black pepper

Steps:

  • Blend all of the marinade ingredients together in a food processor until smooth.
  • Put the chicken in a 13 by 9-inch casserole dish and season it with salt and pepper, to taste. Cover the chicken with the jerk marinade and toss to coat. Cover with plastic wrap and refrigerate for at least 2 hours for the flavors to meld. If you have the time, letting the chicken marinate overnight is best.
  • Preheat grill to medium-high heat. Lightly oil the grates to keep the chicken and marinade from sticking. Remove the chicken from the marinade letting the excess drip off and arrange them on the grill. Cover the grill, and grill until the chicken is fully cooked and the jerk marinade has blackened and caramelized in spots, about 5 minutes on each side. Transfer the chicken to a serving platter and serve.

JAMAICAN JERKED PORK AND CHICKEN

Jamaican Jerked Pork And Chicken image

Provided by Michele Evans

Categories     dinner, main course

Time 1h25m

Yield Six to eight servings

Number Of Ingredients 15

1 6 1/2-pound pork shoulder, or 6 1-inch-thick loin pork chops
3 chicken breasts, split, with skin on
6 chicken legs
2 ounces whole allspice berries
1/4 teaspoon fresh grated nutmeg
1/2 teaspoon ground cinnamon
8 scallions (white part and 1 inch of green each), chopped
1 large garlic clove, chopped
1 teaspoon fresh serrano or other hot pepper, seeded and chopped
3 tablespoons red-wine vinegar
1/4 cup peanut or vegetable oil
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2 bay leaves, crumbled
Pickapeppa sauce (see note)

Steps:

  • Cut away the rind and most of the fat from the pork. Remove all the meat from the bones and cut it into pieces about one-and-a-half-inches thick and three or four inches long.
  • Put the pork pieces and the chicken in a large bowl, cover and refrigerate until needed.
  • To prepare the seasoning, heat the allspice berries over medium heat in a small heavy saucepan for three or four minutes, stirring often until heated through.
  • Two tablespoons at a time, crush the berries in a mortar and pestle until all are cracked.
  • In a medium-size bowl, combine the crushed berries, nutmeg, cinnamon, scallions, garlic, pepper and one tablespoon of the vinegar. Crush into a pasty mixture.
  • Add the rest of the vinegar, oil, salt, pepper and bay leaves. Mix well.
  • Turn the mixture over the pork and chicken and rub the meat with the seasoning, coating it evenly. Cover and refrigerate for two hours or overnight.
  • Cook the jerked pork and chicken on the grill over hot coals or on a gas-heated barbecue as far away from the heat source as possible, at least six inches. Cover with the lid. Turn the meat every 10 minutes for about one hour, until done. If desired, halfway through the cooking time, toss one teaspoon of whole allspice berries into the fire.
  • Cut the cooked pork into one-third-inch slices and serve with the chicken. Accompany with Pickapeppa sauce.
