MICHAEL'S VEGETARIAN CHILI

3 tablespoons olive oil
1 large onion (cut into 1/2-inch chunks)
1 green bell pepper (cut into 1/2-inch chunks)
1 serrano pepper (seeded and minced)
1 jalapeño pepper (seeded and minced)
1 anaheim pepper (seeded and minced)
10 cloves garlic (minced)
2 tablespoons dried basil
2 tablespoons dried oregano
4 tablespoons ground cumin
1 teaspoon ground cinnamon
5 tablespoons chili powder
1 tablespoon dried dill
1/2 teaspoon kosher salt
1 pound yellow squash (cut into 1/2-inch chunks)
1 pound zucchini squash (cut into 1/2-inch chunks)
2 pounds roma tomatoes (cut into chunks)
28 ounces canned crushed tomatoes
8 ounces canned tomato sauce
15 ounces canned black beans (drained and rinsed)
30 ounces canned kidney beans (drained and rinsed)
15 ounces canned garbanzo beans (drained and rinsed)
1/2 bunch cilantro (rough chopped (reserve some for garnish))
juice of 1 lemon

Steps:

  • Add olive oil to pot over medium-high heat. Add the onions, peppers, and garlic and cook until they start to turn golden. Add the basil, oregano, cumin, cinnamon, chili powder, dill, and salt. Stir and continue to cook until the spices are very fragrant, about 5 minutes.
  • Add the yellow and zucchini squash and saute until tender. You can add another tablespoon or two of olive oil as necessary.
  • Add the tomatoes and beans. Fill the can of crushed tomatoes with water and add it to the pot. Cover and cook over medium heat for 10 minutes. Reduce heat to low and cook for at least 30 minutes. The flavors develop the longer it cooks. Taste and adjust seasonings as necessary.

1 tablespoon ground coriander
1 tablespoon sweet smoked paprika
1 teaspoon ground cumin
1 teaspoon cayenne
Salt and pepper
3 pounds cubed stew meat of your choice, such as beef, pork or chicken (ground meat is also an option, or cubed eggplant if you want to make it vegetarian)
4 tablespoons oil or other fat
1 onion, finely chopped
3 cloves garlic, minced
1 jalapeno, chopped
One 12-ounce bottle beer
2 cups water
28 ounces tomato product of your choice, such as sauce, crushed, diced, etc.
1 canned chipotle in adobo, chopped, optional
Two 15-ounce cans beans of your choice, rinsed (if using pre-soaked dried beans, add with the tomato product)
Optional toppers: fresh cilantro, sour cream, lime wedges, sliced jalapeno, diced avocado or whatever you have on hand

Steps:

  • Heat a large pot over medium heat. Mix together the coriander, paprika, cumin, cayenne and some salt and pepper in a small bowl and toss with the cubed meat, ground meat or eggplant.
  • Add the oil to the pot and when hot, add the meat or eggplant and cook, turning as necessary, until brown, 3 to 5 minutes. Add the onion, garlic and jalapeno and cook, stirring, until beginning to soften, about 2 minutes.
  • Add the beer and water and deglaze the pot, scraping up any brown bits on the bottom with a wooden spoon. Add the tomato and chipotle if using, bring to a simmer and simmer until the meat is tender, 1 to 1 ½ hours. (The cooking time will be less for ground meat, chicken and eggplant.)
  • Add the beans and continue to simmer for 10 to 15 minutes to thicken. (If using pre-soaked dried beans, the cooking time may be longer.) Serve the chili garnished with your favorite toppers on hand.

2 (28 ounce) cans diced tomatoes
2 cups water
1 (12 ounce) can whole kernel corn, drained
¼ cup dry red lentils
¼ cup uncooked quinoa
¼ cup chili powder
¼ cup brown sugar
1 tablespoon smoked paprika
1 teaspoon kosher salt
1 teaspoon ground turmeric
1 teaspoon dried oregano
½ teaspoon ground cumin
½ teaspoon red pepper flakes
½ teaspoon cracked black pepper
3 teaspoons cornstarch
3 tablespoons water, or more as needed

Steps:

  • Heat oil in a medium Dutch oven over medium heat; stir in onion, green and red bell peppers, and garlic. Cook and stir until vegetables have softened, about 5 minutes.
  • Mash 1/2 of the black beans in a small bowl. Transfer to the Dutch oven with the remaining whole black beans. Add diced tomatoes, 2 cups water, corn, lentils, quinoa, chili powder, brown sugar, paprika, salt, turmeric, oregano, cumin, red pepper flakes, and black pepper; stir to combine. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, for 2 hours.
  • Make a slurry by mixing cornstarch with 3 tablespoons water until completely dissolved, adding more water if necessary. Stir slurry into the chili and simmer until thickened, about 15 minutes. Mash chili with a potato masher to desired consistency.

1 pound baby bella mushrooms
2 tablespoons vegetable oil
Kosher salt
1 yellow onion, diced
2 stalks celery, chopped
1 orange bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 poblano pepper, seeded and chopped
1/2 cup chopped fresh cilantro stems (reserve leaves for garnish)
4 cloves garlic, grated
1 tablespoon chili powder
1 tablespoon smoked paprika
2 teaspoons ground cumin
1 teaspoon ground coriander
One 28-ounce can diced tomatoes
One 28-ounce can crushed tomatoes
1 large zucchini, quartered and sliced
1 1/2 cups frozen corn
One 15-ounce can black beans, rinsed and drained
One 15-ounce can pinto beans, rinsed and drained
Assorted toppings, such as sour cream, grated Cheddar, chopped white onion, avocado, pickled jalapeños

Steps:

  • Remove all the stems from the mushrooms and add them to a food processor fitted with the blade attachment. Add half of the mushroom caps, slightly breaking them up with your hands as you add them. Pulse the mushrooms until they are finely chopped. Set aside. Halve and slice the remaining mushroom caps and set aside.
  • Heat a large Dutch oven over medium-high heat. Add the oil and heat until shimmering. Add the finely chopped mushrooms from the food processor and 1/2 teaspoon salt. Cook until the natural liquid from the mushrooms has released and evaporated, about 4 minutes. Add the onion, celery, bell peppers, poblano pepper, cilantro stems and 1/2 teaspoon salt. Cook, stirring occasionally, until the vegetables begin to soften, 4 to 5 minutes. Add the garlic, chili powder, smoked paprika, cumin and coriander. Stir to coat until the spices are fragrant, about 1 minute. Add the diced tomatoes, crushed tomatoes, zucchini and sliced mushrooms. Stir to combine. Bring the mixture up to a boil, then turn the heat down to low. Cover and simmer for 30 minutes.
  • Remove the lid from the Dutch oven and add the corn, black beans and pinto beans. Stir to combine. Continue cooking until the corn and beans are heated through, an additional 5 minutes. Season with salt.
  • Ladle the chili into bowls and top with the desired toppings.

1 (28 ounce) can whole peeled tomatoes with liquid, chopped
1 (15 ounce) can black beans, undrained
1 (15 ounce) can kidney beans, undrained
1 (15 ounce) can pinto beans, undrained
1 (15 ounce) can whole kernel corn, drained
1 tablespoon cumin
1 ½ tablespoons dried oregano
1 ½ tablespoons dried basil
½ tablespoon garlic powder

Steps:

  • Heat the oil in a large pot over medium heat. Cook and stir the garlic, onion, and carrots in the pot until tender. Mix in the green bell pepper and red bell pepper. Season with chili powder. Continue cooking 5 minutes, or until peppers are tender.
  • Mix the mushrooms into the pot. Stir in the tomatoes with liquid, black beans with liquid, kidney beans with liquid, pinto beans with liquid, and corn. Season with cumin, oregano, basil, and garlic powder. Bring to a boil. Reduce heat to medium, cover, and cook 20 minutes, stirring occasionally.

1 1/2 lbs ground beef
2 medium onions
1 (28 ounce) can diced tomatoes
1 (6 ounce) can Italian-style tomato paste
1 cup water
1 beef bouillon cube
1 (40 ounce) can dark red kidney beans
1/2 whole green bell pepper, diced
4 garlic cloves, minced
2 teaspoons salt
2 teaspoons oregano
2 teaspoons chili powder
1 teaspoon coriander
1 teaspoon cumin
1 1/2 teaspoons crushed red pepper flakes
1 bay leaf
3 tablespoons flour
1/2 cup cold water
3 tablespoons tequila (optional)

Steps:

  • Combine the ground beef and onions in a kettle until meat is brown.
  • Drain fat.
  • Then add the remaining ingredients, except for the flour and 1/2 cup of water.
  • Stir to blend.
  • Cover and simmer for 1½ hours, stirring occasionally.
  • When done, mix the 3 tbsp of flour with the 1/2 cup of cold water into the chili, mixing well until desired thickness.
  • Remove bay leaf and enjoy.
