Millet and Oat Date Squares image

There's an organic bakery that uses locally-sourced ingredients called Bread & Sons in Ottawa, Ontario at the corner of Cooper and Bank. They sell delicious organic date squares made with millet. I tried to find a recipe but couldn't so I made up my own instead. Mine aren't identical to Bread & Sons', but I think my recipe is pretty successful all the same. The millet gives the date square a crunchy texture that's really nice. I've lowered the butter and sugar content of typical date squares, but you could increase it if you prefer. Also, where I use 3/8 cup all-purpose flour, 3/8 cup buckwheat flour, 1/8 cup ground flax seed and 1/8 cup wheat bran (for a total of 1 cup), you could simplify it by using just 1 cup of all-purpose flour. I'd love to receive feedback on how I could improve this recipe. Please leave comments!

1 cup chopped pitted dates
1 teaspoon brown sugar
1/2 cup orange juice
3/8 cup all-purpose flour
3/8 cup buckwheat flour
1/8 cup ground flax seeds
1/8 cup wheat bran
1/2 teaspoon baking soda
1/8 teaspoon salt
3/4 cup butter or 3/4 cup margarine
3/4 cup packed brown sugar
3 tablespoons maple syrup or 3 tablespoons golden syrup
1 cup oats (not instant)
1 cup millet

Steps:

  • Preheat oven to 350°F.
  • Combine dates, 1 TSP of brown sugar and orange juice in a small saucepan. Bring to a boil.
  • Reduce heat and cook, stirring often, until dates are soft enough to be mashed with a fork. Set aside.
  • In a mixing bowl, blend all-purpose flour, buckwheat flour, flax, wheat bran, baking soda and salt.
  • Cut in butter/margarine until mixture resembles course crumbs.
  • Stir in brown sugar, maple/golden syrup, oats and millet, but do not over mix. Mixture should stay crumbly.
  • Press half of crumb mixture over bottom of lightly buttered 8x8-inch pan to form bottom crust.
  • Gently spread date filling over bottom crust.
  • Sprinkle remaining oat mixture over date filling and lightly pat with palm of hand to even out.
  • Bake for 25 minutes at 350°F.
  • Allow to cool a bit in the pan and cut into squares.

1 cup (2 sticks) unsalted butter, room temperature
1/4 cup vegetable shortening
1 cup packed light-brown sugar
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 1/2 cups rolled oats
1 cup dried dates, chopped into 1/4-inch pieces
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees. In a large bowl, beat butter and shortening with a wooden spoon or electric mixer until smooth. Add both sugars, and beat until smooth. Beat in eggs, one at a time, until incorporated. Beat in vanilla.
  • Combine the remaining ingredients in a separate bowl. Gradually add dry ingredients to the butter mixture, mixing until just combined.
  • Drop batter by the tablespoon about 1 1/2 inches apart on ungreased baking sheets. Bake until golden brown, about 12 to 14 minutes. Transfer cookies to wire racks to cool.

2 cups quick-cooking oats
3/4 cup shortening
1/2 cup sugar
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
FILLING:
3 cups chopped dates (about 1 pound)
1 cup sugar
1 cup water
1 to 2 tablespoons lemon juice, optional
GLAZE:
1-1/2 cups confectioners' sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
3 tablespoons milk

Steps:

  • Place oats in a food processor, cover and process until finely ground; set aside. In a large bowl, cream shortening and sugar until light and fluffy. Combine the oats, flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. , Divide in half. On a lightly floured surface, roll half of dough to fit a greased 13-in. x 9-in. baking pan; set aside. , In a large saucepan, combine the dates, sugar, water and lemon juice if desired; bring to a boil. Cool for 10 minutes. , Spread over crust. Roll remaining dough to fit pan; place over filling and seal edges. Bake at 400° for 15-20 minutes or until crust is golden brown. Combine glaze ingredients; spread over bars while warm. Cool on a wire rack before cutting.

1 ½ cups sifted pastry flour
¼ teaspoon salt
¾ teaspoon baking soda

¾ pound pitted dates, diced

1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.

⅔ cup orange juice
1 orange, zested
2 teaspoons vanilla extract

¾ cup cold unsalted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat dates, 2/3 cup brown sugar, orange juice, and orange zest in a saucepan over low heat; cook, stirring occasionally, until dates have softened, absorbed the liquid, and mixture is like a paste, about 10 minutes. Remove from heat; stir in vanilla extract.

Traditional date squares using spelt flour instead of wheat and sucanat instead of brown sugar. You can use 1 1/2 cups whole spelt or 2 cups light spelt instead of part whole and part light. Nice and not too sweet.

1 cup sucanat

Steps:

  • Mix dry (first 7) ingredients together.
  • Boil 1 lb. (or more) dates with a pinch of salt and water level to top of dates. Boil 5-10 minutes-until dates become mushy and water is absorbed. Cool slightly and add 1 teaspoons vanilla.
  • Place half of oat mixture in a lightly greased 9 x 12-inch pan and press down lightly, spread dates over, then top with remaining oat mixture pressing down lightly.
  • Bake at 375ºF for 20 minutes or until lightly browned.
