THIN MINT COOKIES
If you love chocolate and mint you are sure to love this homemade version of the Girl Scout Cookies.

Steps:
- In a large bowl, beat 1/2 cup butter or margarine until creamy. Add the sugar, and beat until mixed well. Beat in egg and mint extract.
- Sift flour, cocoa, and salt together into a small bowl. Add flour mixture by halves into creamed mixture, beating well after each addition.
- Divide dough in half. On lightly floured surface roll dough into two 1 1/2 inch diameter cylinders. Wrap each cylinder in waxed paper, and refrigerate 5 hours.
- Preheat oven to 350 degrees F (175 degrees C). Thirty minutes prior to baking, place both cylinders in freezer.
- Remove one cylinder at a time, and slice 1/4 inch thick pieces with very sharp knife. Place on cookie sheets about 1 1/2 inches apart. Bake 10 to 12 minutes.
- Melt 1/4 cup butter or margarine and the semisweet chocolate in a double boiler or in the microwave. Drizzle over warm cookies. Place on wire racks, and let cool and harden completely.

ITALIAN TORCETTI COOKIES/BISCOTTI
Steps:
- In a mixing bowl whisk together the flour, powdered sugar, baking powder and salt.
- Make a well in the middle and add the vanilla, cream and yolk, mix together with flat beaters or even a fork or spatula, until a soft compact dough forms. Move to a flat surface and knead gently a few times to bring the dough together.
- Remove pieces, roll into ropes, approximately 8 inches (20cm) long, cross the rope in the middle 1-2 times. Place the formed cookies on the prepared cookie sheet, sprinkle with cane or granulated sugar, chill while the oven is pre-heating, approximately 15-20 minutes.
- Pre-heat oven to 350F (180C).
- Remove from the fridge and bake for 12-15 minutes or until golden brown. Let cool 5 minutes on the cookie sheet, then move to a wire rack to cool completely. Enjoy!

MIMI'S BISCORTA COOKIES
This is from a hand-written recipe of my mom's, called "Biscorta - large recipe". It makes approximately 144 cookies! Mimi used to make these at Christmas time, usually with my younger sister. They are delicious. This is posted as Mimi wrote it, and it was handed down from her Polish immigrant mother. There's not a lot of detail, and no substitutions are mentioned. I remember these cookies being no larger than 2-3 inches long, (in pretzel shapes). I am guessing at the prep and cooking time (for 144 cookies). At the bottom of the recipe it says, "THIS IS ALOT OF DOUGH! VERY GOOD AND NOT TOO SWEET." Enjoy!

Steps:
- Mix flour and sugar and cut in shortening.
- Beat eggs slightly and add to mixture.
- Add baking powder, salt, vanilla and milk.
- Mix well.
- Roll dough (small pieces at a time) to about 1/4 -inch thick.
- Cut strips and twist dough like pretzels, or use cookie cutters and cut out desired shapes.
- Add sugar sprinkles before baking if desired.
- Bake in a preheated 375 degree F oven for about 15 minutes.
- Cool 5 minutes, remove to rack and cool completely.
- NOTE: My guess is you could sprinkle with confectioner's sugar after baking.

MIMI'S MONSTER COOKIES
These are huge cookies that the kids will love to get their little hands on. They are great to take to picnics or gatherings. I used to take them to Sunday School picnics when my grandkids were little. I even did a double batch for a treat at AWANA. Adults like them, too. They have delicious flavor. You may notice that there is no flour in the recipe--that is correct--there is no flour. The oats bind it together.

Steps:
- In a large bowl with mixer at medium speed, beat together the first 4 ingredients till light and fluffy.
- Add eggs and vanilla; beat 2 minutes.
- Blend in baking soda.
- Stir in oats and remaining ingredients.
- Dough will be very stiff and crumbly.
- Drop dough by 1/3 cup measures, 4" apart on a ungreased baking sheet.
- Flatten with a spatula to 3 1/2" cookies.
- Bake in 350 oven for 12-14 minutes or till golden.
- Remove and cool on racks.
- NOTE:.
- If you need more than 22 cookies, you may use a 1/4 cup measure, but they will not be quite as huge as the other measure.
