SAUSAGE STUFFING

This stuffing has lots of flavor and is nice and moist. You can also change the ingredients to your liking. I quadruple this recipe and make the extra in my electric roaster, that's how much everyone loves it. Originally submitted to ThanksgivingRecipe.com.

Yield 6

Number Of Ingredients 7

1 pound breakfast sausage
¾ cup chopped onion
1 ½ cups finely diced celery
¾ cup margarine, melted
8 cups white bread cubes
3 teaspoons poultry seasoning
¼ teaspoon ground black pepper

Steps:

  • Cook sausage. Drain.
  • Melt margarine. Add enough to sausage drippings to make 1 cup.
  • Saute; onions and celery in margarine/dripping mixture until onion is tender. DO NOT BROWN. Stir in about 1/3 bread cubes. Put in big bowl and add remaining bread cubes, poultry seasoning, and pepper. Watch your hands, it's hot. Mix well.
  • Stuff turkey. You can also omit the sausage, increase the bread cubes to 9 cups, and add a teaspoon or two of salt. You can also add apples, giblets, oysters, etc. This recipe is very adaptable. When cooking extra in the oven, place the stuffing in a buttered casserole dish, and place in a pan of hot water. Cover, and baste with turkey drippings occasionally. It comes out really good.

MIMI'S (JONES) SAUSAGE STUFFING

Mimi's (Jones) Sausage Stuffing image

This is the most wonderful sausage stuffing, and my mom Mimi made it every year at Thanksgiving and/or Christmas. I like it even better than her homemade cornbread stuffing. I'm assuming she got it from the Jones Sausage package. I think you could use any mildly-seasoned ground sausage for this recipe. NOTE: The amount of liquid used may be adjusted based on your preference; start with 2 cups as a baseline.

Categories     Winter

Time 1h30m

Yield 8-12 serving(s)

Number Of Ingredients 6

1 lb jones country sausage
2 large onions, fine dice (about 2 cups)
2 celery ribs, fine dice
1 (16 ounce) package seasoned stuffing mix (Pepperidge Farms seasoned stuffing was used for this recipe)
2 eggs, beaten
2 cups chicken broth or 2 cups water

Steps:

  • In a large skillet, saute sausage, onion and celery. Break the meat up as it cooks.
  • When sausage is browned, DO NOT pour off the drippings. Add stuffing mix, 2 cups liquid and eggs.
  • Blend thoroughly.
  • IF STUFFING TURKEY: Makes enough to stuff a 14 - 16 pound bird. Follow directions on your turkey for baking time.
  • IF BAKING SEPARATELY: Spoon dressing into an oil-sprayed 9 x 13 inch baking pan.
  • Bake in a 350 degree oven 40 - 60 minutes.
  • If necessary, cover stuffing with foil to keep from drying out.
