Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Cream together brown sugar and shortening.
- Add in egg and mincemeat and mix well. Sift together flour, salt and baking soda and stir into mincemeat mixture.
- Drop onto cookie sheet and bake 7 - 10 minutes.

MINCE PIE COOKIES

Steps:
- Heat the oven to 180C/160C fan/gas 4 and line two baking sheets with baking parchment. Beat the butter and sugar until very light and fluffy, then beat in the egg and vanilla. Stir in the mincemeat until combined, then the flour, bicarb, cinnamon, chocolate and ¼ tsp salt.
- Scoop tablespoons of the mixture onto the sheets, leaving space between each for spreading. Bake for 10-12 mins, or until firm at the edges but soft in the middle - they will firm up a little as they cool. Leave to cool on the sheets slightly before eating warm, or transfer to a wire rack and leave to cool completely.

MINCEMEAT SQUARES
A pie in a cookie sheet! Excellent company or pot luck recipe for mincemeat lovers everywhere. My family loves these squares at Thanksgiving and Christmas but they are good any time of the year. Good with a scoop of ice cream and some butterscotch sauce on top if you dare. Or a dollop of whipped cream is nice too.

Steps:
- PASTRY:.
- Sift flour, sugar and salt into a large bowl.
- Cut in lard with a pastry blender until it resembles coarse meal.
- Put egg yolk in measuring cup, add milk to make 1/2 cup.
- Add egg mixture to bowl; stir until dough clings together and forms a ball.
- Roll out half the dough on a floured surface to a 15" x 11" rectangle; transfer to a cookie sheet.
- Note: You can make a parchment paper or wax paper pattern measuring 15" x 11". Roll out pastry directly onto the paper for easy transfer to baking sheet.
- FILLING:.
- Spread mincemeat filling evenly over dough to within 3/4 inch of edges.
- Dot the top of the mincemeat with the bits of butter.
- FINAL ASSEMBLY:.
- Roll out remaining half of dough; cut vents.
- Moisten edges of bottom pastry with cool water using a pastry brush or your fingers. Cover filling with the top pastry, sealing edges.
- Pinch edges together and crimp.
- TOPPING:.
- Beat egg white until stiff; spread on top crust.
- Bake in preheated 400 degree Fahrenheit oven for 25 minutes, or until golden brown. Remove to wire rack.
- GLAZE (optional):.
- Combine icing sugar and lemon juice in a small bowl.
- Drizzle over warm pastry.
- Cool slightly before cutting into squares to serve.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- Cream shortening, sugar and eggs together, then beat in vanilla. Sift the flour, salt and baking soda together, and add to shortening mixture. Mix until well blended. Stir in the nuts and mincemeat and mix well. Drop by teaspoonfuls on the cookie sheet.
- Bake 8 to 10 minutes until light brown.

- In a large bowl, mix flour and salt; cut in shortening until crumbly. Gradually add ice water, tossing with a fork until dough forms a ball. Divide dough in half. Shape each into a disk; wrap and refrigerate 1 hour or overnight., For filling, in a large skillet or Dutch oven, cook beef over medium heat until no longer pink, 3-5 minutes, breaking into crumbles; drain. Add apples, apricot, brown sugar, raisins, apple juice, vinegar, orange zest and seasonings. Bring to a boil; reduce heat. Simmer until apples are tender, 15-17 minutes. Stir in rum. Remove from heat; cool slightly., Preheat oven to 375°. On a lightly floured surface, roll half of dough to 1/8-in. thickness. Cut 20 circles with a floured 2-3/4-in. round biscuit cutter. Top half the circles with 1 tablespoon filling. Top with remaining circles; press edges with a fork to seal. Cut slits in top. Brush tops with egg; sprinkle with coarse sugar. Repeat with remaining dough and filling., Bake until crust is golden brown and filling is bubbly, 20-25 minutes. Cool on a wire rack.

- Heat the oven to 180C/160C fan/gas 4. Beat the butter with both types of sugar and the salt. Beat in the egg, vanilla extract and mincemeat. Stir in the flour and bicarbonate of soda, then chill for 20 mins.
- Scoop tablespoons of the mixture onto two lined baking sheets, leaving a bit of space between each so they can spread. Bake for 10-12 mins, or until the cookies are just firm around the edges but still soft in the middle - they will firm up as they cool. Transfer to a wire rack and leave to cool.

MINCE PIES
Steps:
- Preheat oven to 400 degrees.
- Butter and flour a muffin tin. Roll out the pastry until it is about a quarter of an inch thick. Using a cookie cutter or a glass, cut it into three-inch rounds. Place half the rounds in the muffin tin (you may need two tins).
- Mix the brandy into the mincemeat. Place a tablespoon onto each pastry round. Beat the egg and use a little to moisten the edges of each round. Place a pastry top on each mincemeat round and press the edges together with a fork.
- With a sharp knife, make a slit in the top of each pie. Brush with egg and bake for 10 minutes. Reduce heat to 350 and bake for 10 more minutes or until the pies are golden. Remove from oven and cool on a rack. Dust with sugar and serve hot or cold.

- Preheat oven to 400°. Line an 8-in. square baking pan with foil; grease foil with butter. In a large bowl, whisk flour, sugar, baking soda and salt. Stir in oil and milk. Reserve 1 cup for topping. Press remaining crumb mixture onto bottom of prepared pan. Spread with mincemeat. Stir pecans into reserved crumb mixture; sprinkle over top.
