SCOTTISH MINCE PIE



Scottish Mince Pie image

My mother-in-law made this pie in Scotland. It is not a sweet mince pie, but it's easy to make, and a hearty dinner. I serve boiled parsley potatoes and a nice salad with this pie. My children always ask for this pie when they come home to visit.

1 ½ pounds lean ground beef
1 large onion, minced
⅛ teaspoon beef bouillon granules
4 cups water to cover
2 tablespoons cornstarch
¼ cup water
1 recipe pastry for a 9 inch double crust pie

Steps:

  • Place the ground beef in a large pot and pour in enough water to cover beef. Boil until beef is cooked through. Drain.
  • Add water to cover cooked beef, add onions and enough bouillon granules to taste. Cook until the onions are soft. Season with salt and pepper to your taste and make sure the filling has enough bouillon to have a nice beef flavor.
  • Combine the 1/4 cup water with the cornstarch and stir until smooth. Add to the beef mixture and cook until mixture has thickened. Allow to cool to room temperature.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Roll out pastry to fit a 9-inch pie plate.
  • Pour beef mixture into the pastry crust and cover the top with pastry. Crimp edges and prick top.
  • Bake in preheated oven until pie crust is lightly browned, about 40 minutes.

This crumbly, sweet, sticky traditional mince pie recipe is so easy to make for your Christmas spread.

For the Pastry:
350 grams all-purpose flour (plus extra for dusting the work surface)
225 grams unsalted butter (or an equal mix of butter and lard; cold and cubed)
1 pinch salt
1 egg (beaten)
Water (cold, as needed)
For the Pie:
1 (776-gram) jar mincemeat (store-bought or homemade mincemeat )
2 tablespoons confectioners' sugar

Steps:

  • Gather the ingredients.
  • Place the flour, butter, and salt into a large clean bowl.
  • Rub the butter quickly into the flour with your fingertips until the mixture resembles rough sand.
  • Stir the egg into the mixture using a cold knife.
  • Add the cold water, a teaspoon at a time, and stir until the mixture binds but is not sticky.
  • Wrap the dough in plastic wrap and chill for a minimum of 15 minutes and up to 30 minutes.
  • Gather the ingredients.
  • Preheat the oven to 400 F / 200 C / Gas Mark 6. Choose a muffin or bun tin for the size of the tart you want. Choose from a standard 12-cup muffin tin down to small canapé size. The number of pies will depend on the size of the tin you use.
  • Dust a work surface lightly with a little flour and roll out 2/3 of the pastry to 1/8 inch thick. Cut circles to line the cups of your tin; don't worry if the pastry doesn't come to the very top.
  • Fill the pastry-lined tins 2/3 full with mincemeat.
  • Roll out the remaining pastry to the same thickness and cut smaller circles to fit as lids on the tarts or, to be decorative, cut stars or other fancy shapes.
  • Dampen the edges of the tart bases with a little cold water and press the lids on. Make a small hole in the surface of each pie with a small sharp knife to allow the steam to escape.
  • Bake in the preheated oven for 20 minutes (15 minutes if making canapé-sized ones), or until golden brown.
  • Let cool and sprinkle with the confectioners' sugar.
  • Serve and enjoy.

2 teaspoons salt
1-1/3 cups shortening
1/2 cup plus 2 tablespoons ice water
FILLING:
1/4 pound ground beef
3 medium apples, peeled and chopped
1 medium apricot, peeled and chopped
3/4 cup packed light brown sugar
1/2 cup golden raisins
1/2 cup unsweetened apple juice
1 tablespoon cider vinegar
1-1/2 teaspoons grated orange zest
1-1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/4 cup rum
1 large egg, beaten
1 to 2 tablespoons coarse sugar

Steps:

  • In a large bowl, mix flour and salt; cut in shortening until crumbly. Gradually add ice water, tossing with a fork until dough forms a ball. Divide dough in half. Shape each into a disk; wrap and refrigerate 1 hour or overnight., For filling, in a large skillet or Dutch oven, cook beef over medium heat until no longer pink, 3-5 minutes, breaking into crumbles; drain. Add apples, apricot, brown sugar, raisins, apple juice, vinegar, orange zest and seasonings. Bring to a boil; reduce heat. Simmer until apples are tender, 15-17 minutes. Stir in rum. Remove from heat; cool slightly., Preheat oven to 375°. On a lightly floured surface, roll half of dough to 1/8-in. thickness. Cut 20 circles with a floured 2-3/4-in. round biscuit cutter. Top half the circles with 1 tablespoon filling. Top with remaining circles; press edges with a fork to seal. Cut slits in top. Brush tops with egg; sprinkle with coarse sugar. Repeat with remaining dough and filling., Bake until crust is golden brown and filling is bubbly, 20-25 minutes. Cool on a wire rack.

2 tbsp vegetable oil
500 g beef mince
2 medium red onion chopped
1 tbsp tomato purée
2 tbsp plain flour plus extra for dusting
250 ml beef stock
50 ml Red Wine Optional
1 tbsp Worcestershire sauce
2 sprigs fresh thyme or 1 tsp of dried thyme
Salt and black pepper
500 g block of shortcrust pastry/puff pastry or make your own shortcrust pastry
1 egg beaten

Steps:

  • Leave the Pastry in the fridge until neededPreheat the oven to 200°C/180°C fan/gas mark 6.
  • Heat a deep pan over a medium-high heat and cook the mince until it has browned all over and no pink meat remains, make sure you break the meat up with a spatula. leaving no lumps, you can heat some oil in the pan if you wish, but I prefer to let meat cook in its own juices.Let it cook in its own juices for 3 to 4 minutes
  • Add the onion and thyme and cook for another 3 to 4 minutes. Stirring continuouslyStir in the tomato purée and cook for 2/3 minutes., keep stirring
  • Stir in the flour and combine well, allow the mince to cook out for a further minute or two.
  • Gradually stir in the stock, and Worcestershire sauce, add the wine at this stage if using. Bring to the boil, then reduce the heat, cover the pan with a lid and leave to simmer for 30 minutes.If the sauce is not as thick as you would like, mix a little flour and water in a cup to a thickish paste and stir into the mix and let it simmer for another 10 minutes to thicken up, Remove the Thyme if using sprigs and set aside and allow to cool
  • Grab the pastry and divide into ⅓ and ⅔.
  • For the base of the pie, use the larger piece of pastry and shape it into a disc shape as best you can and roll out turning at 45° angles on each roll to get as round a piece of pastry as possible, which is larger than the pie dish
  • Roll the pastry onto a rolling pin and drape over the pie dish. Ease the pastry into the shape of the dish leaving the edges overlapping the top, make sure to get the pastry well into the angle of the base and sides of the dish.
  • Fill with the cooled mince mixture.
  • Beat the egg with a dash of milk
  • Roll out the second piece of pastry, in the same way, trying to get a circular shape slightly larger than the pie dishBrush the edges of the lined pie dish with a little egg wash and roll the pastry onto your rolling pin and drape over the top of the piePress the edges of the pastry together and trim the excess around with a sharp knife
  • Using the two forefingers of one hand and the thumb of the other crimp all around the edge of the pie, or you can use a fork to decorate the edge.
  • Brush the top with egg wash. Make two incisions with the tip of a sharp knife to allow steam to escape when baking

I have always liked a good mince round - what we call a mince pie here in Glasgow. Finally decided to make one for myself and the result was every bit as good as the one I usually buy from my butcher.

1 lb beef mince
1 large onion, diced
2 tablespoons sunflower oil
1 pint water
3 beef bouillon cubes
3 tablespoons Worcestershire sauce
340 g frozen shortcrust pastry
1 tablespoon milk, for brushing pastry

Steps:

  • Heat sunflower oil in a large pan and gently fry onions until translucent.
  • Add mince to pan and break up with a fork- add the water making sure the mince is completely covered and bring to the boil.
  • Crumble in the oxo cubes and add the worcestershire sauce.
  • Cover the pan and reduce heat- simmer gently for 20 minutes.
  • When mince and onions are cooked allow to cool for about 15 minutes.
  • Roll out pastry on a floured surface and use half to line a 9 inch round shallow baking tin- make a lid with remaining pastry.
  • Put mince and onion mixture in tin and cover with pastry lid- thumb round the edges to seal and cut a small slit in centre of pastry lid- brush pastry with the milk.
  • Cook in a preheated oven at 190c for 30 minutes.
  • Best served with mashed potatoes and vegetable of your choice.

1 quantity sweet shortcrust pastry, recipe follows
9 ounces/250 g mincemeat (just over half a jar), or make your own, recipe follows
1 egg, beaten
Icing sugar (confectioners'), for dusting
7 ounces/200 g plain flour, sifted
Pinch salt
3 1/2 ounces/100 g chilled butter, cubed
1/2 to 1 medium egg, beaten
2 large cooking apples, peeled, cored and cut into large chunks
Finely grated zest and juice of 2 oranges and 2 lemons
9 ounces/ 250 g shredded suet, or butter,chilled and grated
10 ounces/275 g raisins
10 ounces/275 g sultanas (golden raisins)
10 ounces/275 g dried currants
4 1/2 ounces/125 g Candied Peel, chopped, recipe follows
1 pound, 7 ounces/650 g soft dark brown sugar
2 ounces/50 g nibbed (chopped) almonds, orchopped pecans
2 teaspoons mixed spice
2 1/2 fluid ounces/75 ml Irish whiskey or brandy
5 oranges
5 lemons
5 grapefruit (or 15 of just one fruit)
1 teaspoon salt
2 pounds, 12 ounces/1.25 kg caster sugar

Steps:

  • Mince pies freeze very well, taking some of the headache out of all that Christmas preparation. If I make lots of these before Christmas, I freeze them raw and then cook them on the day. Cooked mince pies can be stored in a biscuit tin or airtight box and warmed through gently before serving. They are perfect with a glass of spicy mulled wine or a cup of coffee for a festive snack.
  • Preheat the oven to 400 degrees F/200 degrees C/Gas mark 6. Brush the tin with melted butter.
  • On a floured work surface, roll out the pastry to 1/8-inch/3 mm thick and, using the 2 1/2-inches/6 cm cutter, cut out 24 circles for the bases. Then use the smaller plain/fluted cutter or star cutter to cut-out 24 circles/stars for the lids. Re-roll the trimmings, if necessary.
  • Line the holes of the cake tin with the larger pastry rounds. Fill each base with a teaspoon mincemeat and top with one of the smaller rounds or stars. Brush the tops of the mince pies with the beaten egg.
  • Bake in the oven for 10 to 13 minutes until pale golden. Cool for 5 minutes before removing from the tin and transfer to a wire rack to cool. Dust with icing sugar (confectioners') to serve.
  • This basic pastry is used in many popular recipes, from mince pies to quiches; it's also one of the easiest pastries to start with. The uncooked dough can be frozen or kept in the refrigerator for a couple of days.
  • Shortcrust Pastry:
  • Put the flour, salt and butter in a food processor and whiz briefly. Add half the beaten egg and continue to whiz. You might add a little more egg, but not too much as the mixture should be just moist enough to come together. If making by hand, rub the butter into the flour until it resembles coarse breadcrumbs then, using your hands, add just enough egg to bring it together. With your hands, flatten out the ball of dough until it is about 3/4-inch/2 cm thick, then wrap in cling film or place in a plastic bag and leave in the refrigerator for at least 30 minutes or, if you are pushed for time, in the freezer for 10 to 15 minutes. Variations: Sweet Shortcrust Pastry: In place of the pinch of salt, use 1 tablespoon icing sugar (confectioners'). Soured cream shortcrust pastry: Replace the egg with 2 tablespoons sour cream or creme fraiche, adding just enough to bring it together.
  • This delicious mincemeat will keep happily in a cool dark place for at least a year. If you are making your own suet (the fat that surrounds the beef kidney), make sure that every trace of blood has been removed before you whiz it in the food processor, otherwise it will cause the mincemeat to go off.
  • Mincemeat:
  • Put the apple chunks in a small saucepan with 1 teaspoon water, cover and cook over low heat for about 8 to 10 minutes until the apples are cooked down to a pulp. Allow to cool.
  • Mix the apples with the orange zest, orange juice, lemon zest, lemon juice, suet, raisins, sultanas, currants, candied peel, dark brown sugar, almonds, mixed spice, and whiskey in a large bowl and put into sterilized jars.* Leave to mature, if possible for at least 2 weeks before using.
  • Cut the fruit in 1/2 and squeeze out the juice. (Reserve the juice for another use, perhaps home-made lemonade.) Put the peel into a large bowl, add the salt and cover with cold water. Leave to soak for 24 hours.
  • Next day, throw away the soaking water; put the peel in a large saucepan and cover with fresh cold water. Bring to the boil, cover and simmer very gently for about 3 hours or until the peel is soft.
  • Remove the peel from the pan and discard the water. Scrape out any remaining flesh and membrane from inside the cut fruit, using a teaspoon, leaving the white pith and rind intact.
  • In a clean large saucepan, dissolve the sugar in 1 3/4 pints/1 litre of water, then bring to the boil, stirring to dissolve the sugar. Add the peel and simmer gently for 30 to 60 minutes until it looks translucent (shiny and 'candied') and the syrup forms a thread when the last drop falls off a metal spoon. Remove from the heat and allow to stand for 20 to 30 minutes to slightly cool.
  • Put the candied peel into sterilized glass jars* and pour the syrup over. Cover and store in a cold place or in the refrigerator. It should keep, stored like this, for at least 3 months.

1 teaspoon salt
2 teaspoons sugar
1 beaten egg
About 4 to 6 tablespoons cold water
2 8-ounce jars mincemeat
1/2 cup brandy

Steps:

  • Put the flour in a bowl. Chop the butter and blend it into the flour with the tips of your fingers (or with a pastry blender), adding the salt and sugar until it is like bread crumbs. Add the water gradually and work into a dough, moistening with more water as needed. Put the dough on a floured board and knead with the palm of your hand. Shape into a ball and refrigerate for half an hour.
  • Preheat oven to 400 degrees.
  • Mix the brandy into the mincemeat. Roll the pastry out thin and cut in rounds half an inch larger than your cupcake tins. Use a glass or a cutter to cut rounds for the lids. Dust the baking tin with flour, fill each cupcake round with a round of pastry, and fill with mincemeat - not too full or it will boil over during cooking. Press on the lids, crimping the edges together.
  • Brush each pie with a little beaten egg and bake in the oven for eight to 10 minutes.

  • Preheat the oven to 200C/400F/Gas 6.
  • Heat the oil in a deep frying pan and fry the beef mince for 4-5 minutes, breaking it up with a wooden spoon as it browns.
  • Add the onion,leeks,carrot's, and cook for 2-3 minutes, then stir in the tomato Puree, and cook for 2-3 more minutes. Stir in the flour and cook for a further minute, then add the chopped mushrooms, the stout or beef stock and a couple of dashes of Worcestershire sauce. Bring to the boil, then reduce the heat, cover the pan with a lid and leave to simmer for 20 minutes. Set aside and leave to cool, then turn the meat mixture into a one litre pie dish.
  • Roll out the pastry on a floured work surface until it is slightly larger than the pie dish. Gently drape the pastry over the dish, pressing firmly onto the edges. Trim, then shape the edges into a fluted shape.
  • Cut some leaf shapes out of the pastry trimmings and decorate the top of the pie, sticking them to the pastry with the beaten egg yolk.
  • Make three or four slits in the pastry to allow the steam to escape, then brush the pie with the rest of the beaten egg yolk and bake in the oven for 20-25 minutes, or until golden-brown.

Learn to make British mince pies, which are basically rich tarts filled with dried fruits and spices soaked in alcohol, a Christmas specialty.

1¼ cup (175g) currants
1¼ cup (175g) large dark raisins
6 oz (175g) stewing apple, in small pieces
⅓ cup (50 g) candied orange peel
2 oz (50 g) prunes, pitted and chopped
½ cup (115g) butter, frozen and grated
½ cup (115g) soft brown sugar
½ tsp. ground cinnamon
½ tsp. ground mace
½ tsp. ground cloves
¼ tsp. ground nutmeg
¼ tsp. ground ginger
Pinch of sea salt
½ lemon or Seville orange, zest, and juice
1 cup brandy or rum (or half sherry, half rum) or as needed
1½ cups (180g) all-purpose flour
2 Tbsp. (20g) confectioners' sugar
Pinch of sea salt
7 Tbsp. (100g) chilled butter, diced
1 Tbsp. cold water
1 egg yolk
Butter, for greasing
Flour, for dusting
1 egg yolk
1 Tbsp. milk

Steps:

  • Put all the ingredients for the mincemeat in a bowl and add brandy or rum to cover the fruit. Stir well, then let it rest overnight. The next day, stir again and then divide among sterilized preserving jars.
  • To make the pastry, mix the flour, sugar, and salt in a large bowl. Rub the butter into the mixture until it is the consistency of fine breadcrumbs. Add the water and egg yolk and knead until the mixture comes together into a smooth dough. Alternatively, use a food processor to make the pastry. Wrap the dough in plastic wrap and let it rest for 30 minutes in the refrigerator.
  • Preheat your oven to 350° F. Grease the tart molds with butter and cover the base of each with a small circle of parchment paper. Dust with flour.
  • Briefly knead the pastry until smooth, then pat it into a rectangle and roll it out to a thickness of ⅛ inch. Use a round cutter with a diameter of 2¾ - 3¼ inches to cut out pastry circles. Gently push the pastry rounds into the tart molds. Prick the base or each tart shell three times with a fork.
  • Knead the remaining dough back together and roll it out to cut out the lids-you can choose whichever shape you like, but stars are the most traditional.
  • Divide the 8 ounces of filling among the tarts and press down gently. Place the lids on top and brush with the egg wash.
  • Bake in the middle of the oven for 20-25 minutes until golden brown. Serve warm or cold.

Steps:

  • Preheat oven to 400 degrees.
  • Butter and flour a muffin tin. Roll out the pastry until it is about a quarter of an inch thick. Using a cookie cutter or a glass, cut it into three-inch rounds. Place half the rounds in the muffin tin (you may need two tins).
  • Mix the brandy into the mincemeat. Place a tablespoon onto each pastry round. Beat the egg and use a little to moisten the edges of each round. Place a pastry top on each mincemeat round and press the edges together with a fork.
  • With a sharp knife, make a slit in the top of each pie. Brush with egg and bake for 10 minutes. Reduce heat to 350 and bake for 10 more minutes or until the pies are golden. Remove from oven and cool on a rack. Dust with sugar and serve hot or cold.
