MINI BLUEBERRY TARTS

I served this recipe to my family while we were on vacation and they were all amazed! The best part: I didn't spend tons of time on it thanks to refrigerated pie crust. Watch your mini tarts around the 13-minute mark to make sure they don't brown too quickly. Number Of Ingredients 5

2 cups fresh blueberries
1/3 cup sugar
4 teaspoons cornstarch
2 sheets refrigerated pie crust
1 large egg yolk, lightly beaten

Steps:

  • Preheat oven to 425°. Crush half the blueberries. Sift together sugar and cornstarch. Add whole and crushed blueberries; toss until berries are well coated. Set aside., On a lightly floured surface, unroll crusts. Cut out six 4-1/2-in. circles; press circles onto bottoms and up sides of greased muffin cups. Evenly spoon in blueberry mixture. Cut out six 2-in. circles from remaining crust; place over filling. Brush with yolk., Bake until crust is golden and filling bubbles, 13-17 minutes. Cool in pans 10 minutes; run a knife around sides of muffin cups and remove tarts to a serving plate.

Bring spring flavors together in these delectable miniature tarts. Raspberries and blueberries both work well with the whipped cream and lemon curd mixture or choose your favorite berries instead. Pastry for double-crust pie (9 inches)
2 tablespoons sugar
1 tablespoon cornstarch
1 package (12 ounces) frozen unsweetened mixed berries, thawed
1 tablespoon lemon juice
TOPPING:
1/3 cup heavy whipping cream
1/4 cup lemon curd
1 teaspoon sugar
1/4 teaspoon vanilla extract
Fresh berries, optional

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll dough to 1/8-in. thickness. Using a 4-in. round cookie cutter, cut 12 circles, rerolling scraps as necessary. Press circles onto bottoms and up sides of ungreased muffin cups., Mix sugar and cornstarch; toss with berries and lemon juice. Spoon 2 tablespoons filling into each cup. Bake on a lower oven rack until pastry is golden brown and filling is bubbly, 24-26 minutes. Cool 10 minutes before removing from pan to a wire rack; cool completely., For topping, beat cream until soft peaks form. In another bowl, mix lemon curd, sugar, vanilla and 1 tablespoon whipped cream; fold in remaining whipped cream. Spoon over filling. If desired, top with fresh berries. Refrigerate until serving.

Fruity and delicious mini blueberry pie tarts with an all-butter pie crust, blueberry pie filling and white chocolate drizzle!

1 3/4 cup plus 2 tablespoons all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1/4 cup cold water
3/4 cup ice-cold butter
3 cups blueberries
1/2 cup white granulated sugar
2 tablespoons cornstarch
1 teaspoon ground cinnamon
2 tablespoons lemon juice
1/4 cup White chocolate chips (for garnish)

Steps:

  • For the butter crust: place the flour, sugar, and salt into a food processor, along with the ice cold butter. Pulse for a few minutes until mixture resembles fine crumbs. Slowly add in the cold water and continue mixing until dough comes together to form a ball, about 30 seconds. Turn dough out onto lightly floured work surface and knead the dough into a smooth ball; don't overwork the dough. Cover with plastic wrap and place into refrigerator for at least 1 hour.
  • Preheat the oven to 350F. Meanwhile, prepare the filling. In a large bowl, toss together the blueberries, sugar, cornstarch, cinnamon and lemon juice. Stir until berries are coated.
  • Roll out the chilled dough into large rectangle; the dough needs to be on the thin side. Use a 2 1/2 inch cookie cutter or glass/cup to cut out small circles. Drop dough circles into mini-cupcake tins; I used a 24-count pan. Using your fingers or the bottom of a shot glass, press the dough into the bottom and sides of tin. Top with a generous and overflowing amount of blueberries.
  • Bake the mini tarts at 350F for 25-30 minutes, or until the edges of the tarts turn a golden brown color. Remove the tarts from the pan, using a spoon, onto a cooling rack to cool completely.
  • Once cooled, drizzle the top with melted white chocolate. I used the microwave to melt mine and placed the chocolate into a zip-lock bag, then cut off a tiny tip off the edge.

  • Combine all the filling ingredients in a small saucepan. Bring to a simmer or medium-low heat while constantly stirring until sauce begins to thicken. Remove from heat, transfer to heat proof container and cool completely or refrigerate overnight.
  • In a large bowl cream together maple syrup, palm shortening and vanilla extract until smooth. Add almond flour, shredded coconut, arrowroot and salt and work into the mixture with a fork adding 1/2 teaspoon of water if needed until a soft dough forms.
  • Pinch and press dough firmly across the bottom and a 1/3rd of the way up the sides of greased muffin pan with your fingers. Prick bottom of dough with a fork and place pan into oven.
