1 package (8 ounces) cream cheese, softened
2 cups shredded sharp cheddar cheese
Optional toppings: Toasted sesame seeds, minced fresh rosemary and paprika
Optional garnishes: Halved rye crisps and rolled tortilla chips

Steps:

  • In a large bowl, combine cheeses. Shape into 36 balls; roll balls in toppings as desired. Cover and refrigerate for 8 hours or overnight. To serve, if desired, press a rye crisp or rolled corn chip into the top of each cheese ball.

This Mexican Cheese Ball is great for holiday get-togethers and can easily be made ahead of time!

2 (8-oz) packages cream cheese, softened
1 cup shredded Mexican cheese blend
1 (4-oz) can of Old El Paso™ diced green chiles, drained
1 (1-oz) package Old El Paso™ taco seasoning mix
1/4 cup sliced green onions (about 2 green onions)
1 teaspoon lime juice
1 cup crushed tortilla chips (about 3 cups whole)
Tortillas chips and sliced red and green bell pepper for serving

Steps:

  • In a food processor, add the cream cheese, shredded cheese, diced green chilies, taco seasoning, green onions, and lime juice. Pulse well until ingredients are completely combined.
  • Line a bowl with plastic wrap. Spoon the mixture on top of the plastic wrap and wrap completely forming a ball.
  • Chill in the fridge (or the freezer for faster chilling) for at least an hour until ball is firm.
  • In a food processor, crush chips until fine.
  • Unroll ball from plastic wrap and roll in the crushed chips. Cut slices with a knife and serve with chips and bell peppers.

3 cups crumbled queso fresco cheese
1 1/2 teaspoons ancho chile powder
2 tablespoons chopped chipotle chiles in adobo sauce (from 7-oz can)
6 tablespoons chopped green onions (6 medium)
1 1/2 cups finely chopped pepitas (pumpkin seeds)
Tortilla chips

Steps:

  • In large bowl, beat Basic Cheese Ball Ingredients with electric mixer fitted with paddle attachment on medium speed until combined.
  • Stir in Flavor Stir-Ins. Drop mixture by teaspoonfuls on cooking parchment paper-lined cookie sheet. Refrigerate about 30 minutes or until set. Shape each into 1-inch ball.
  • If not using immediately, cover and refrigerate up to 3 days, or freeze up to 1 month. Roll balls in chopped pepitas to coat before serving. Serve with tortilla chips, as desired.

5 cups macaroni
2 tablespoons butter
2 teaspoons flour
1 ¾ cups milk
2 ½ cups cheddar cheese
2 ½ cups red leicester
salt, to taste
pepper, to taste
2 eggs, for egg wash
breadcrumb, as needed

Steps:

  • Boil water, add macaroni and cook until al dente
  • Melt butter in a pan and mix 2 tsp flour into it.
  • Add the milk gradually.
  • Add both cheeses and cook until melted and the sauce is thick
  • Season with salt and pepper.
  • Add cooked macaroni and thoroughly cover.
  • Refrigerate mixture for one hour.
  • Take mixture out and form into balls on another plate.
  • Refrigerate for 2 hours.
  • Dip the solid balls in egg wash, then breadcrumbs.
  • Fry in hot pan of oil until golden brown on both sides.
  • Enjoy!

2/3 cup chopped pecans, toasted
1 tablespoon melted butter
1/8 teaspoon salt
2 (8 ounce) blocks cream cheese, softened
4 green onions, chopped
1/2 cup shredded cheddar cheese
1/4 cup taco seasoning
1/4 cup picante sauce (I like Pace.)

Steps:

  • NOTE: Toasting the pecans is reflected in the PREP time.
  • Toast the pecans at 275 degrees for 20-30 min - do not burn. Stir together nuts with butter and salt and set aside to cool.
  • In a food processor, blend remaining ingredients until thoroughly combined. Shape into a ball and roll in the cooled pecans.
