EASY MEXICAN PIZZA
These Mexican Pizzas are even BETTER (and healthier) than the ones you love from Taco Bell! They're made with ground beef, refried beans, and cheese inside corn tortillas.

Steps:
- Cook ground beef, crumbling it into small pieces with a wooden spoon as it cooks. Remove any grease.
- Add taco seasoning and water and stir to combine.
- Heat oil in a small skillet over medium-high heat. Once hot, cook corn tortillas one at a time until golden and slightly crisp on both sides, flipping half way through. Remove to a paper towel.

- Preheat oven to 425°F (220°C)
- In a large bowl mix marinara sauce, parmesan cheese, pepper, salt, and oregano.
- Lightly oil a 12-cup muffin tin or coat with nonstick spray.
- Lay tortilla on a flat surface. Using an empty can, cut 3-4 medium circles, pressing firmly enough in a rocking motion to cut through the tortilla.
- Fit tortilla circle into each of 12 muffin cup.
- Scoop 1 tablespoon pizza sauce into each muffin cup.
- Sprinkle with mozzarella cheese.
- Top with mini pepperonis.
- Place into oven and bake for 10-12 minutes, or until cheese has melted.
- Serve immediately.
- Enjoy!

Mexican Pizzas are delicious corn tortillas topped with beans, beef and all the delicious taco toppings you can imagine! They can be cut into wedges and served as an appetizer or left whole and served as a main dish.

- Heat the refried beans.
- In a large skillet, brown the ground beef. Stir in the seasoning packet.
- Preheat oven to 350 degrees F (175 degrees C).
- Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
- Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
- Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

MINI MEXICAN PIZZAS

- To prepare the mini Mexican pizzas, use a biscuit cutter to cut small rounds of tortillas. You can keep the trimmings and fry to use on your favorite taco salad. Add enough oil to coat the bottom of a saucepan with vegetable oil. Fry the tortillas until golden brown on both sides. T
- his will take just a moment or two. Drain on a wire rack. Prepare the pizza sauce: Heat the butter and onion in a small saucepan over medium heat. When the onion becomes fragrant and translucent add the flour, and stir for both 60 seconds. Add the milk in two equal portions. Add the second portion of milk once the first has thickened. Season with salt and pepper.
- Prepare the ground beef in a medium-sized skillet. Drain off excess fat. Add taco seasoning and recommended amount of water according to the package directions. To assemble pizzas. Add about 1 teaspoon of the white sauce to each round, then add a portion of taco meat. Top with cheese, and place in a 350-degree oven until the cheese begins to melt. When you remove the mini Mexican pizzas from the oven place on a serving plate, and be sure to serve with plenty of Fresh Cravings Restaurant Style mild crave salsa.

- Cook the chorizo in a medium-size skillet over medium heat. Drain on paper towels.
- Preheat the oven to 375 degrees F.
- Put the dough out onto a well-floured surface. Divide the dough into 4 equal pieces. Roll into 4inch circles, using a rolling pin or stretching it into circles by hand. Arrange the circles on 2 baking sheets lightly brushed with oil.
- Top each pizza with tomato slices and crumbled cooked chorizo. Top with shredded cheese and sprinkle with dried oregano.
- Bake until the dough is golden brown and cheese is bubbly, about 20 minutes.

MINI MEXICAN PIZZAS
I found this recipe in an October issue of Quick & Simple magazine and I thought I would put it here for all to enjoy. I did however change a couple of steps and used taco seasoning instead of chili seasoning since that was the only thing I had. Submitted to "ZAAR" on October 9th,2007

Steps:
- Preheat oven to 375°F.
- While oven is heating,add ground beef and taco seasoning to a medium-sized skillet over medium heat.
- Cook beef until no longer pink,about 8 to 10 minutes,drain if needed.
- Lightly spray two medium sized cookie sheets with cooking spray.
- Place two tortillas on each sheet,then lightly spray tortillas with more cooking spray.
- Bake tortillas until lightly browned, about 6 to 8 minutes.
- Remove tortillas from oven and evenly spread 1 1/2 tablespoons of salsa on each.
- Divide ground beef, corn, onions, and tomatoes evenly over each tortilla.
- Divide cheese evenly over the top of ground beef mixture.
- Bake for 10 to 12 minutes or until cheese is melted.
MINI ANTIPASTO PIZZAS
These mini antipasto pizzas are easy to make and totally customizable! Start with your favorite toppings and create the most delicious pizza you can come up with; the varieties are endless!

- Preheat the oven to 450 degrees F and line 2 rimmed baking sheets with parchment paper. Spray the parchment with nonstick cooking spray and set aside.
- Prep all your toppings by cutting everything into small bite-size pieces.
- On a lightly floured surface, divide the dough into 4 pieces, then divide each piece into 4; you should end up with 16 pieces of dough. Spray your hands with nonstick cooking spray if the dough is sticking. Working one at a time, begin to stretch and flatten the dough with your hands, adding flour as needed to prevent sticking. Transfer it to the baking sheet and continue to stretch the dough until it's about 4 inches in diameter. Continue the process with the remaining pizza dough, placing 8 rounds on each baking sheet.
- Start with a spoonful of the sauce of your choice, spreading into a thin layer. Top your pizzas as desired, being sure to not load the pizza with too many toppings or it will not cook evenly.
- Bake until the crust is golden and the cheese is melted, 15 to 20 minutes. Remove the pizzas from the oven and top with fresh toppings and a light drizzle of olive oil. Transfer the pizzas to a platter and serve.
