MAKE YOUR OWN MINI PIZZAS

Steps:
- Preheat oven to 400 degrees F.
- Line a large baking sheet with parchment paper or nonstick aluminum foil. Place pizza dough on a well-floured surface, press dough firmly with your fingers to shape, and stretch gently into a 12" x 8" rectangle.
- With a round cutter, cut dough into 18-20 rounds; place rounds 1 inch apart on baking sheet. Top each with pizza sauce, cheese, and your desired toppings.
- Bake mini pizzas for 8-10 minutes, or until cheese is melted. Serve immediately.
- Stir together yeast and warm water in a small bowl; set aside for 5 minutes.
- Mix together the flour, salt, sugar and olive oil in a large bowl, or the bowl of a stand mixer fitted with the dough hook. Optionally, add dried herbs like basil, oregano or rosemary. Stir in the yeast water. Knead with the dough hook or by hand on a well floured surface for about 5 minutes. If using the stand mixer, once finished kneading, remove dough from bowl and shape into a large ball by hand.
- Oil two bowls lightly with olive oil and set aside. Divide the dough into two pieces and roll into balls. Place each ball into the oiled bowls, seam side down, and coat the tops with a little olive oil. Top each bowl with plastic wrap or a clean, dry towel and place the dough in a warm place (I use an oven preheated to 250 degrees F, then turned off). Let rise 2 hours.
- Once risen, either use immediately by turning dough out onto a floured surface and shaping. Or, wrap dough in plastic wrap, then a plastic bag, and freeze or refrigerate to use later.

- In a small bowl, dissolve yeast in warm water. Add the baking mix, Parmesan cheese, sugar, 1-1/2 teaspoons oil, Italian seasoning and 1/2 cup flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a lightly floured surface; knead until smooth and elastic, about 5-6 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 30 minutes., Punch dough down; divide in half. On a lightly floured surface, roll each portion into an 8-in. circle. Transfer to two 7-1/2-in. pizza pans coated with cooking spray; build up edges slightly. Prick dough thoroughly with a fork; brush with remaining oil., Bake at 400° for 8 minutes or until lightly browned. Spread with sauce; sprinkle with mozzarella cheese. Bake 10-12 minutes longer or until cheese is melted.

- Preheat oven to 425°F (220°C)
- In a large bowl mix marinara sauce, parmesan cheese, pepper, salt, and oregano.
- Lightly oil a 12-cup muffin tin or coat with nonstick spray.
- Lay tortilla on a flat surface. Using an empty can, cut 3-4 medium circles, pressing firmly enough in a rocking motion to cut through the tortilla.
- Fit tortilla circle into each of 12 muffin cup.
- Scoop 1 tablespoon pizza sauce into each muffin cup.
- Sprinkle with mozzarella cheese.
- Top with mini pepperonis.
- Place into oven and bake for 10-12 minutes, or until cheese has melted.
- Serve immediately.

- Preheat oven to 425 degrees F.
- Combine 2 cups flour, undissolved yeast, sugar and salt in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute.
- Gradually add enough remaining flour to make a soft dough. Dough should form a ball and will be slightly sticky. Knead** on a floured surface, adding additional flour if necessary, until smooth and elastic, about 4 minutes. Divide dough into 8 portions; cover. (If using RapidRise Yeast, let dough rise at this point for 10 minutes.)
- Pat each portion of dough with floured hands into an 8-inch circle on a greased baking sheet. Form a rim by pinching the edge of the dough. Add a second crust to the same baking sheet.
- Bake for 6 to 7 minutes, dough will be just set and only lightly browned on the bottom. Remove crusts to a wire rack to cool. Continue with remaining pizza dough. (Works best to use several baking sheets.) May use crusts immediately or place in freezer bags and freeze for up to 1 month.

- Preheat oven to 350°F. Lightly oil 24 muffin cups. Using 2 1/2- to 2 3/4 inch-diameter cookie cutter, cut out center of each bread slice (reserve trimmings for another use). Press bread rounds onto bottoms and about 1/2 inch up sides of prepared cups, forming crusts.
- Sautamp;é sausage and garlic in heavy large skillet over medium heat until brown, breaking up with spoon, about 15 minutes. Using slotted spoon, transfer mixture to bowl; mix in mozzarella, 1/2 cup pizza sauce and Parmesan. Divide filling among crusts. Top each with 1/2 teaspoon of remaining sauce.
- Bake pizzas until crusts are light brown and filling is heated through, about 20 minutes. Serve hot.
POLENTA MINI PIZZAS
This is a tasty snack or lunch that I came up with after reading the suggestion on the back of a polenta tube. This is how I made it, but you could also use mozzarella in place of the ricotta, add some pepperoni, etc. These would also make really cute appetizers.

- Preheat broiler.
- Heat olive oil on griddle or in frying pan on medium/medium high.
- Slice polenta into six 1/2 inch rounds.
- Fry polenta according to package directions. If there are no directions for frying, fry 5 minutes per side.
- Remove from griddle/pan, and place on a baking sheet. Prepare each slice like you would a pizza, layering 1 tablespoon pasta sauce, a basil leaf, 1 tablespoon ricotta, then 1 teaspoon parmesan. Broil 2-4 minutes until lightly browned.
- Note: Be careful when removing from the oven, especially if you're using a flat baking sheet. The polenta likes to slide around! Serve.

- Unroll pizza dough on cutting board. Cut into 12 (3x2-inch) rectangles; place 1 in each of 12 muffin pan cups sprayed with cooking spray.

- Line eggplant rounds up on a large cutting board and lightly salt both sides. Let sit 10 minutes. Pat dry with paper towels. Preheat the oven to 250 degrees F (120 degrees C).
- Meanwhile whisk egg and water together in a mixing bowl. Mix bread crumbs and Parmesan cheese together on a flat plate. Line a rimmed baking sheet with aluminum foil and place a cooling rack on top.
- Dip each eggplant round in beaten egg and then coat in bread crumb mixture.
- Preheat an air fryer to 400 degrees F (200 degrees C). Spray the basket with nonstick cooking spray.
- Place as many eggplant rounds into your basket as space allows without overcrowding. Spray the tops with cooking spray. Cook for 10 minutes. Transfer rounds to the cooling rack and place in the preheated oven to keep warm. Repeat with remaining eggplant.
- Spoon pizza sauce over each eggplant round. Add olive slices and cover with mozzarella cheese.
- Set the oven rack about 6 inches from the heat source and preheat the oven's broiler to high.
- Broil eggplant slice pizzas for 4 minutes or until cheese is melted. Garnish with basil.

- Seperate biscuits and place on cookie sheet.
- Flatten biscuit until it is about 5" in diameter.
- Pinch the sides to make a crust.
- For a tastier pizza, brush on a little olive oil and add a pinch of cumin and oregano.
- Put 2 tablespoons of pizza sauce on each biscuit and spread around.
- Add pepperoni and then sprinkle about 2-3 tablespoons of cheese on top.
- Do not add too much or the pizza will overflow when it is baking.
- Bake in oven for 8-11 minutes.
