45 double-stuffed chocolate cookie sandwiches, divided
4 cups heavy whipping cream
1 teaspoon vanilla
14 oz sweetened condensed milk

Steps:

  • Separate the cream and cookies from 15 chocolate sandwich cookies into 2 medium bowls.
  • Place the cookie halves in a zip-top bag and crush with a rolling pin until fine crumbs form.
  • Melt the cookie cream in the microwave for 30 seconds, or until melted.
  • In a large bowl, whip the heavy cream and vanilla until thickened and soft peaks form.
  • Add the sweetened condensed milk, melted cookie cream, and cookie crumbs.
  • Fold with a spatula until combined.
  • Line a separate large bowl with the remaining sandwich cookies.
  • Pour in the cream mixture and smooth the top to cover.
  • Cover and freeze overnight, or until solid.
  • Invert onto a serving plate, allowing the ice cream dome to release from the bowl. Slice and serve.

1/2 cup safflower oil, plus more for bowl
1 1/2 cups unsweetened Dutch-process cocoa powder, plus more for bowl
3 cups unbleached all-purpose flour
3 cups sugar
1 tablespoon baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons kosher salt
4 large eggs, room temperature
1 1/2 cups buttermilk
1 1/2 cups warm water
2 teaspoons pure vanilla extract
4 ounces semisweet chocolate, melted and cooled slightly
6 cups mint-chocolate-chip ice cream, softened in refrigerator until spreadable
9 ounces semisweet chocolate, chopped (about 1 2/3 cups)
1 stick unsalted butter, cut into tablespoons
3 tablespoons light corn syrup

Steps:

  • Cake:Preheat oven to 350 degrees. Brush bottom and sides of a large (approximately 10 inches in diameter and 5 inches deep) ovenproof glass, ceramic, or metal bowl with oil. Dust with cocoa, tapping out excess.
  • In a large bowl, whisk together cocoa, flour, sugar, baking soda, baking powder, and salt until thoroughly combined, 30 seconds. Add oil, eggs, buttermilk, warm water, and vanilla; whisk until smooth, about 2 minutes. Transfer to prepared bowl.
  • Bake until set and a tester inserted in center comes out clean, 1 hour, 25 minutes to1 hour, 45 minutes. Transfer bowl to a wire rack; let cool 15 minutes. Turn cake out onto rack; let cool completely.
  • Cut a 1-inch-thick slice from bottom of cake with a serrated knife. Invert "bowl" of cake; using a metal spoon or your fingers, hollow out all but a 1-inch border of cake (reserve scraps for snacking). Brush hollowed-out cake bowl and cut side of cake bottom with melted chocolate. Refrigerate until chocolate is firm, about 20 minutes.
  • Spoon ice cream into cake bowl, pressing to pack it all in and smoothing top. Return bottom of cake to bowl (it will be on top at this point). Cover with plastic; freeze until ice cream is firm,at least 4 hours and up to 3 days.
  • Glaze:Unwrap cake and place, dome-side up, on a rimmed baking sheet lined with a wire rack. Place chocolate, butter, and corn syrup in a heatproof bowl set over (not in) a saucepan of simmering water. Stir occasionally until melted and smooth. Remove from heat and immediately pour over top center of cake, all at once. Shake baking sheet back and forth and tap it on a work surface a few times, if necessary, to ensure that glaze fully and evenly covers cake. Using two large, wide spatulas slipped underneath, transfer to a serving plate. Serve immediately, or freeze, uncovered, up to 1 day. Remove from freezer 10 to 15 minutes before serving. To serve, use a knife dipped in hot water, then wiped dry, to cut into wedges.

She then pours a creamy white chocolate ganache over top and decorates with candy melts to bring Mike to life.

nonstick cooking spray, for greasing
1 box chocolate cake mix
1 cup whole milk, room temperature
3 large eggs
1 large egg yolk
½ cup vegetable oil
2 ½ cups white chocolate chip
1 can sweetened condensed milk
3 tablespoons unsalted butter, room temperature
8 drops green gel food coloring
buttercream frosting, or canned vanilla frosting
blue gel food coloring
black gel food coloring
purple food coloring
12 white candy melts, divided

Steps:

  • Make the cake: Preheat the oven to 350°F (180°C). Spray a 6-cavity round silicone baking mold with nonstick spray.
  • In a large bowl, whisk together the chocolate cake mix, milk, eggs, egg yolk, and canola oil until smooth. Pour the batter into the prepared molds, filling about ⅔ of the way.
  • Set the mold on a baking sheet, then bake about 14 minutes, or until a toothpick inserted into the center of a cake comes out clean. Remove from the oven and let cool for 10 minutes, then release from the molds and let cool completely on a wire rack set over a rimmed baking sheet.
  • Make the ganache: Add the white chocolate chips, sweetened condensed milk, and butter to a large, microwave-safe bowl. Microwave for 60-90 seconds, until melted and smooth. Add the green gel food coloring and stir to combine. Let the ganache cool until it starts to thicken slightly, 3-4 minutes.
  • Pour the ganache over the top of each cake. Let sit for 10 minutes at room temperature, then transfer to the freezer for 10 minutes, until hardened. Add the remaining green ganache to a piping bag fitted with a small tip.
  • Add 1 cup of vanilla frosting to a medium bowl with a few drops of purple food coloring and stir together, then transfer to a piping bag fitted with a medium round tip. Add about ¼ cup of frosting to 2 separate small bowls. Add a few drops of blue food coloring to a bowl and a few drops of black food coloring to the other and stir to combine. Transfer to piping bags fitted with small round tips.
  • Cut 6 white candy melts in half.
  • Set a cake on a small cake board. Pipe a bit of purple frosting onto the front of a cake and press on a whole white candy melt to adhere. Stick 2 halves of a candy melt into the top of the cake for ears. Pipe blue frosting onto the center of the whole white candy melt, then pipe a smaller dot of black frosting on top for the eye. Pipe green ganache over the eye a for a unibrow. Pipe purple frosting around the bottom edge of the cake. Repeat with the remaining ingredients.
  • Enjoy!

This minty cool dessert is made with everyone's favorite chocolate-mint Girl Scout cookie, so make sure to reserve two boxes for it, before they disappear. The cookies are used throughout: in the crust, mixed into the ice cream, decorating the sides and sprinkled on top.

Two 9-ounce boxes chocolate-mint cookies, such as Thin Mints®
2 tablespoons unsalted butter, melted
1/2 cup hot fudge sauce
One 48-ounce container mint chocolate chip ice cream, softened
2 cups heavy cream
2 tablespoons confectioners' sugar

Steps:

  • Line a 9-inch springform pan with plastic wrap with a 2-inch overhang.
  • Put one box of the cookies in a food processor and process until finely ground. Mix together the cookie crumbs and melted butter in a bowl until the butter is incorporated and the cookie crumbs are fully coated.
  • Spread the cookie crumb mixture on the bottom of the prepared pan; use your hands to pat the mixture down so it holds its shape and coats the entire bottom of the pan.
  • Warm the fudge sauce briefly so it's just pourable; set aside to cool slightly. Coarsely chop one sleeve of the remaining cookies.
  • Put the ice cream in a large bowl, add the chopped cookies and mix until the cookies are distributed throughout. Drizzle the hot fudge sauce on top and fold everything together so the chocolate forms a swirl throughout the ice cream.
  • Spread the ice cream mixture on top of the cookie crust. Fold the plastic wrap up over the top of the ice cream cake and place in the freezer for at least 2 hours and up to overnight.
  • Before serving, finely chop 2 of the remaining cookies; set aside. Press the remaining cookies flat-side in around the sides of the cake to surround it.
  • Combine the cream and confectioners' sugar in a large bowl and beat with an electric mixer until stiff peaks form. Top the ice cream cake with the whipped cream and sprinkle with the chopped cookies.
