1 cup butter, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
FILLING:
2 tablespoons cream cheese, softened
1 tablespoon whole milk
1/2 cup confectioners' sugar
2 tablespoons finely crushed peppermint candy or candy canes
1 drop red food coloring
TOPPING:
1/4 cup confectioners' sugar
6 tablespoons finely crushed peppermint candy or candy canes

Steps:

  • In a bowl, cream butter and sugar; add vanilla. Stir in flour; knead until mixed well. Reserve 1/2 cup of dough; shape remaining dough into 1-in. balls. , For filling, combine cream cheese and milk in a small bowl. Stir in sugar, candy and food coloring; mix well. Make a deep well in the center of each ball; fill with 1/4 teaspoon filling. Use reserved dough to cover filling. Reshape if necessary into smooth balls. , Place on ungreased baking sheets. Bake at 350° for 12-14 minutes. Combine topping ingredients; roll cookies in mixture while still warm. Cool on wire racks.

3 cups confectioners' sugar
1 ¼ cups butter, softened
1 teaspoon peppermint extract
1 teaspoon vanilla extract
1 egg
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup white sugar, or as needed
1 cup finely crushed peppermint candy
3 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets, or line with parchment paper.
  • Beat 1 1/2 cups confectioners' sugar with the butter, peppermint extract, vanilla extract, and egg in a mixing bowl at Medium speed until well blended and creamy, 2 to 3 minutes. Reduce speed to Low, and gradually mix in the flour, baking powder, and salt until well blended, 1 to 2 minutes. Stir in 1/2 cup crushed peppermint candy using a wooden spoon.
  • Place the white sugar in a shallow bowl. Roll a small amount of cookie dough between your hands to make 3/4 inch diameter balls. Roll in sugar. Place 1 inch apart on prepared baking sheets.
  • Bake in preheated oven until light brown, 10 to 12 minutes. Remove and cool on racks.
  • Meanwhile, to make the glaze, stir the remaining 1 1/2 cups confectioners sugar together with the milk in a bowl until smooth. Drizzle cooled cookies with the glaze, and sprinkle immediately with the remaining crushed peppermint candy.

1 1/2 cups all-purpose flour
1 cup granulated sugar
2 tablespoons cocoa powder
2 1/4 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup buttermilk, at room temperature
1/2 cup coconut oil, melted
2 teaspoons pure vanilla extract
2 teaspoons apple cider vinegar
1 teaspoon red gel or 1 tablespoon red liquid food coloring
1 large egg, at room temperature
1 1/2 cups powdered sugar
4 tablespoons cream cheese, at room temperature
2 tablespoons unsalted butter, at room temperature
1 1/2 tablespoons heavy cream or buttermilk
Pinch kosher salt
3/4 teaspoon vanilla bean paste or vanilla extract
One and a half 1/4-ounce packets unflavored gelatin powder (about 10 grams, 3 3/4 teaspoons)
1/2 cup granulated sugar
1/3 cup light corn syrup
Pinch kosher salt
Nonstick cooking spray, for the spatula
6 ounces sweetened shredded coconut

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line a 12-cup cupcake tin with liners and set aside.
  • Whisk the flour, granulated sugar, cocoa powder, baking powder and salt together in a medium bowl. Mix the buttermilk, coconut oil, vanilla, apple cider vinegar, food coloring and egg in a large bowl. Fold the flour mixture into the buttermilk mixture in two batches until well combined.
  • Pour about 1/4 cup batter into each cupcake liner and bake until a toothpick inserted into the center comes out clean, 20 to 25 minutes.
  • Let cool in the tin on a rack for 10 minutes, then remove the cupcakes to the rack to cool completely, about 1 hour.
  • For the filling: Beat together the powdered sugar, cream cheese, butter, cream and salt in a stand mixer fitted with a paddle attachment on low speed until smooth, then turn up to high speed and beat until lightened, a few minutes. Transfer to a piping bag fitted with a 1/2-inch tip.
  • Remove the cupcake liners from the cupcakes, then turn them upside down and place them on a parchment-lined sheet pan. Use an apple corer to extract the centers, then fill the centers with the filling. Set aside.
  • For the marshmallow: Combine the vanilla and 1/4 cup water in a stand mixer fitted with a whisk attachment. Sprinkle the gelatin over the liquid.
  • Meanwhile, stir together the granulated sugar, corn syrup, salt and 1/4 cup water in a small saucepan. Clip on a candy thermometer. Heat the mixture over medium-high heat until it reaches 240 degrees F, then immediately remove it from the heat and bring it over to the mixer.
  • Turn the mixer on low speed and drizzle the sugar mixture in a slow and steady stream down the side of the bowl. Once you have added the entire mixture, gradually increase the speed to high and let it mix until lukewarm and fluffy, 7 to 10 minutes. While the mixer is running, grease a rubber spatula with cooking spray and keep it near the mixer; also prepare a large piping bag fitted with a 5/8-inch round tip. Scrape the marshmallow mixture into the piping bag and secure the end with a twist tie.
  • For the assembly: Pour the shredded coconut onto a wide plate.
  • Working with a couple of cupcakes at a time, pipe a big blob of marshmallow on top of the cupcakes and use an offset spatula to spread it evenly around the sides. (You want to work with just a few at a time, because the marshmallow firms up quickly!) Cover with coconut. Let set 15 minutes, then enjoy!

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Combine butter, sugar, vanilla extract, and salt in a large bowl; beat using an electric mixer until smooth and creamy. Slowly add flour and mix in. Add mint chocolate chips until well incorporated. Roll dough into 1-inch balls and place on the prepared baking sheet.

1/4 cup finely crushed peppermint candies (12 candies)
1/4 cup powdered sugar
1 cup butter, softened
1/3 cup powdered sugar
1/4 cup finely crushed peppermint candies (12 candies)
1 teaspoon vanilla
2 1/4 cups Gold Medal™ all-purpose flour
1/4 teaspoon salt

Steps:

  • Heat oven to 325°F. Mix 1/4 cup crushed candies and 1/4 cup powdered sugar; reserve. Mix butter, 1/3 cup powdered sugar, 1/4 cup crushed candies and the vanilla in medium bowl. Stir in flour and salt.
  • Shape dough by level measuring tablespoonfuls into balls. Place about 2 inches apart on ungreased cookie sheet.
  • Bake 12 to 15 minutes or until set but not brown. Immediately remove from cookie sheet; roll in reserved candy mixture. Cool completely on wire rack. Roll in candy mixture again.

1 tablespoon butter, softened
1 tablespoon light corn syrup
1/2 teaspoon mint extract
1/8 teaspoon salt
1 cup confectioners' sugar
Red, green, blue and/or purple liquid or gel food coloring
Colored sprinkles, nonpareils and cake decorator candies

Steps:

  • In a small bowl, combine the butter, corn syrup, extract and salt. Gradually stir in confectioners' sugar. Knead by hand until mixture becomes pliable, 1-2 minutes., For each color of dough, combine 1 tablespoon of dough and food coloring; knead until blended. Leave remaining dough white. Roll white dough into a log; remove a fourth of the log and set aside., For the snowmen's bodies, divide the remaining log into 9 pieces and roll into balls. For the snowmen's heads, divide the reserved dough into 9 pieces and roll into balls. Stack 1 smaller ball on top of each larger ball. , Use the colored dough to form hats, scarves and earmuffs as desired. Use candies to make eyes, noses and buttons.

  • Cream butter. Add sugar and cream until fluffy. Add water. Sift flour and salt, add to creamed mixture.
