SPICY MISO SCRAMBLED EGGS



Spicy Miso Scrambled Eggs image

These eggs are really special. Perfectly fluffy with nice savory notes folded in. Keep a tub of miso paste in your fridge and improve your breakfast game!

Yield Serves 3-4.

Number Of Ingredients 8

1 tablespoon butter
1 shallot, sliced
1 tablespoon miso paste
1 tablespoon water
6 large eggs
Salt and pepper
Chili garlic sauce
Scallions

Steps:

  • In a medium skillet (nonstick works well) over medium heat, add butter and shallots and cook for a few minutes until shallot softens.
  • Meanwhile, in a medium bowl, stir together miso paste and water until it's an even consistency. Then beat in the six eggs.
  • Add egg mixture to skillet with shallots and turn heat down to medium-low. Cook, stirring regularly, until eggs are just set. Ideally, a thin layer of uncooked egg will be on the eggs which will continue to cook after the eggs come off the heat. Season with salt and pepper.
  • Immediately divide eggs between a few plates and top with chili garlic sauce and fresh scallion.

Miso has a salty flavor that replaces the Canadian Bacon used in traditional eggs Benedict. Have all the ingredients ready to go, and set the English muffins to toast at the same time as you put the eggs in to poach, so you can place the fresh poached eggs onto the freshly toasted muffins. Adapted from The Everything Vegetarian Cookbook. The Hollandaise sauce is what the French call a "mother sauce" meaning that it can be transformed into other sauces by adding just a few ingredients(tarragon, pepper, and shallots-bearnaise; mustard-Dijonnaise; orange concentrate-maltaise, etc.)

3 tablespoons white vinegar
1 teaspoon salt
4 extra large eggs
2 English muffins, split
butter
1/2 teaspoon miso
1/2 cup hollandaise sauce (see below-or use storebought)
chives (optional)
hot pepper sauce (optional)
3 egg yolks
1 lemon, juice of (about 1/4 cup)
1 tablespoon cold water (plus a few more drops)
8 ounces melted butter
1 pinch cayenne pepper
1/4 teaspoon salt

Steps:

  • Combine the vinegar and salt in a deep skillet with 2" of water. Crack each egg into its own cup. When the water boils, lower flame as low as you can. Gently lower the eggs into the hot water, one by one, and pour them from the cups into the pan. Toast the English muffins.
  • Poach the eggs for no more than 3 minutes, then remove them with a slotted spoon, allowing excess water to drain back into the skillet. Transfer the poaced eggs to a waiting plate.
  • Mash the butter and miso together; spread this mixture onto the toasted muffins.
  • Place 1 poached egg onto each muffin half. Spoon generous helpings of hollandaise sauce onto each, and serve immediately with a sprinkling of chives and hot pepper sauce on the side.
  • To Make Hollandaise Sauce:.
  • In a large, steel mixing bowl over a pot of simmering water, or in a double boiler over a very low flame, whisk together the yolks, half of the lemon juice, and 1 tbls. cold water.
  • Whisk vigorously until the yolks attain a lemon yellow color and become thick(about the consistency of creamy salad dressing). Be careful not to let the eggs cook into lumps-keep whisking all the time, and remove the bowl from the heat if it starts getting too hot. Once yolks are ready, set the bowl they are in onto a damp towel on a firm surface. Whisk in a few drops of cold water, then a few drops of the melted butter. Gradually whip in the melted butter in small increments, making sure that each addition is thoroughly incorporated before adding any more. Season with cayenne, salt, and remaining lemon juice.

Kosher salt
4 large eggs
1/2 cup soy sauce
1/3 cup sake
3 tablespoons sugar
1 tablespoon toasted sesame oil
1 clove garlic, minced
One 1-inch piece ginger, sliced thinly on the bias
1 bunch scallions, finely chopped
1 1/2 teaspoons sriracha
3 tablespoons miso, preferably red, but any color is fine
4 cups chicken broth
1 tablespoon unsalted butter
Kosher salt and freshly ground black pepper
20 ounces fresh or frozen ramen or Chinese wheat noodles or four 3-ounce packages instant ramen noodles (discard soup seasoning packets)
One .35-ounce package toasted seaweed

Steps:

  • For the eggs: Bring a medium saucepan of salted water to a boil. Add the eggs, then reduce the heat to a simmer and cook 6 minutes. Drain and run under cool water until cool, then peel.
  • Combine the soy sauce, sake and sugar with 1 cup water in a medium bowl and stir to dissolve the sugar. Add the eggs and place plastic wrap directly on the surface to help submerge the eggs. Cover and refrigerate at least 6 hours and up to overnight.
  • For the soup: Heat the sesame oil in large saucepan over medium heat. Add the garlic, ginger and half of the scallions (reserve the rest for garnish) and cook, stirring often, until translucent, about 3 minutes. Add the sriracha and stir, 30 seconds. Stir in the miso, then gradually add the chicken broth and 2 cups water, whisking. Simmer, partially covered, 10 minutes. Whisk in the butter and season with salt and pepper.
  • Meanwhile, bring a large pot of water to a boil. Slice the marinated eggs in half.
  • Cook the noodles according to their package instructions. Drain and divide among 4 bowls. Divide the soup among the bowls and top with the egg halves, remaining scallions and seaweed. Serve immediately.

1 large egg
1 cup baby spinach
Chopped scallions
Coarse salt and freshly ground pepper

Steps:

  • Bring 1 1/2 cups water to a simmer in a saucepan. Whisk in miso until it dissolves completely (do not let it boil). Gently crack egg into a small bowl, then gently slide it into the simmering broth. Cook until the white is just set and the yolk is still runny, about 2 minutes.
  • Add spinach and cook just until wilted, about 1 minute. Sprinkle with scallions and season with salt and pepper.

2 nests wholemeal noodles (100g)
1 tbsp rapeseed oil , plus a drop extra for frying
30g ginger , cut into matchsticks
1 green pepper , deseeded and cut into strips
2 leeks (165g), thinly sliced
3 large garlic cloves , finely grated
1 tsp smoked paprika
1 tbsp brown miso
160g beansprouts
100g frozen peas , defrosted
160g baby spinach
2 large eggs
1 red chilli , deseeded and chopped (optional)

Steps:

  • Put the noodles in a bowl and cover with boiling water. Set aside to soften.
  • Meanwhile, heat the oil in a wok and stir-fry the ginger, pepper and leek for a few mins until softened. Add the garlic and paprika and cook for 1 min more. Drain the noodles, reserve 2 tbsp of the water and mix with the miso.
  • Add the drained noodles, miso liquid, beansprouts, peas and spinach to the wok and toss over a high heat until the spinach wilts. While you are doing this, fry the eggs in a little oil to your liking. Pile the noodles onto plates, top with the eggs and chilli, if using, and serve.

1/3 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon white-wine vinegar
1 teaspoon low-sodium soy sauce
4 teaspoons miso paste
1 teaspoon sriracha
Black sesame seeds

Steps:

  • In a medium saucepan, cover eggs with 1 inch of water. Bring to a boil; remove from heat. Cover and let stand 12 minutes. Drain eggs; run under cold water until cool enough to handle.
  • Peel and halve eggs lengthwise; remove yolks and transfer to a bowl. Mash with a fork; mix in mayonnaise, mustard, and vinegar. Press through a sieve to make smooth. Stir soy sauce, miso paste, and sriracha into yolk mixture. Press through sieve again.
  • Using a pastry bag fitted with desired tip (we used plain and star tips), pipe yolk mixture into whites. Garnish with black sesame seeds. Serve immediately, or chill up to 2 hours.
