MISSISSIPPI HUSH PUPPIES
This recipe is from a flyer that I receied many years ago. I made them once and they were really tasty but I don't like to fry all that much (too much work and fat!) so I haven't made them again since. I'm going to try making them into mini muffins sometime soon!

Steps:
- Combine egg and next 4 ingredients, stirring well.
- add to dry ingredients, stirring just until moistened.
- Pour oil to a depth of 3 inches into a dutch oven or large saucepan; heat to 375.
- Drop batter by rounded tablespoonfuls into hot oil, and fry in batches 2 minutes on each side or until golden brown.
- Drain on paper towels.
- serve immediately.

HUSHPUPPIES

Steps:
- Combine the cornmeal, flour, sugar, dried onions, baking powder, salt and pepper in a large bowl and mix. Next, add the hot water slowly until the mixture begins to thicken. The batter should be thick and start to rise quickly. Continue to mix and knead until the batter stops rising. Once the batter is thick enough, let it stand for 30 minutes before cooking.
- When ready to cook, add enough oil to a frying pan for the hushpuppies to be submerged. Heat over high heat to 350 degrees F. Use a spoon to carefully drop the batter into the oil. Make sure to spread them apart so they do not stick together. Fry until golden brown on all sides. (The hushpuppies will rise to the top of the oil, so make sure to turn them in the oil on all sides so they cook evenly.) Repeat with the remaining batter.
MISSISSIPPI CATFISH AND HUSHPUPPIES
Steps:
- Hushpuppies: Mix first 6 ingredients in mixing bowl. Add buttermilk as needed until batter reaches a thick, mashed potato-like consistency. Refrigerate for 45 minutes to 1 hour before using. Heat peanut oil to 325 degrees F. Using 2 teaspoons to drop the batter, dip the first teaspoon into water and then fill with hushpuppy batter. Use the other teaspoon to rake the batter into the oil. Cook for approximately 4 minutes until golden brown. The hushpuppies should roll over in the oil by themselves. If they do not, you may have to turn them.
- For the Catfish: Put first 6 ingredients into a large brown paper bag. Roll down the top and shake until well-mixed. Cut catfish in half lengthwise. Pat dry with paper towel. Mix milk and hot sauce. Dip catfish in milk bath, put in paper bag with breading and shake until covered. Place catfish into pot with about 4 inches of peanut oil heated to about 325 to 350 degrees F. Cook until brown and firm, about 6 to 7 minutes.

Whisk the egg, milk and onion; add to dry ingredients just until combined. , In a cast-iron Dutch oven or an electric skillet, heat oil to 365°. Drop batter by tablespoonfuls into oil. Fry until golden brown, 2 to 2-1/2 minutes. Drain on paper towels. Serve warm.

HUSH PUPPIES
Hush puppies are found on menus throughout the South and in many homes as well, an ace accompaniment to most of the region's meals. They are fritters, essentially: sweet cornmeal dough that is fried until golden brown. The recipe here comes from Craig Claiborne, the longtime food editor at The New York Times who was from Mississippi.

TRUE SOUTHERN HUSH PUPPIES
I spent many a night at "Henry's Fish and Grill", one of the top restaurants in Mississippi, and had these wonderful hush puppies with fresh caught bass that we would catch and the chef so graciously prepared. It wasn't until my cousin married one of the chefs that I ever got the recipe. I never gave it out, but now they are sadly no longer there and I want to pass on this beautiful recipe.
